BRAIDED FRENCH LOAF
Voilà! A shapely baking pan turns refrigerated bread dough into a made-in-minutes braided loaf.

Steps:
- Heat oven to 350°F. Spray braided loaf pan with cooking spray. Remove dough from cans. Completely unroll 1 can of dough; wrap around second loaf and press edges to seal. Place loaf, seam side up, in pan.
- Bake 32 to 36 minutes or until golden brown. Remove from pan to cooling rack, placing braid side up. Sprinkle Parmesan cheese over top of loaf. Cool completely, about 30 minutes.

- In a large bowl, combine 2-1/2 cups flour, sugar, yeast and salt. In a small saucepan, heat water and oil to 120°-130°. Add to dry ingredients along with eggs. Beat on medium speed for 3 minutes. Stir in enough remaining flour to form a soft dough. , Turn onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours., Punch dough down. Turn onto a lightly floured surface. Set a third of the dough aside. Divide remaining dough into 3 pieces. Shape each into a 13-in. rope. Place ropes on a greased baking sheet and braid; pinch ends to seal and tuck under. , Divide reserved dough into 3 equal pieces; shape each into a 14-in. rope. Braid ropes. Center 14-in. braid on top of the shorter braid. Pinch ends to seal and tuck under. Cover and let rise until doubled, about 30 minutes. , Preheat oven to 375°. In a small bowl, beat egg and water; brush over dough. Sprinkle with poppy seeds. Bake until golden brown, 25-30 minutes. Cover with foil during the last 15 minutes of baking. Remove from pan to a wire rack to cool.

BRAIDED EGG LOAF
We like to make egg loaf at Easter time. This is a soft, tasty home-made bread recipe that is sure to become one of your family's favourites.

Steps:
- In a big mixing bowl, combine the 1 1/2 cups flour, and salt.
- Add yeast to hot water and sugar together and when the yeast dissolves add it to the flour mixture above.
- Pour in the water and beat until it's smooth.
- Fold in the soft margarine, eggs and food colouring.
- Add remaining flour (a little at a time) to make a soft dough.
- On a floured board, knead until it's smooth and elastic.
- Grease a big bowl.
- Brush top of dough with melted margarine.
- In a warm spot, let it rise for about 1 1/2 hours.
- Punch dough down and knead it again on the floured board.
- Divide the dough into two equal balls.
- Then divide each ball into 3 smaller pieces and roll each of these pieces into"ropes".
- Braid the ropes to form 2 small loaves.
- Cover and let loaves rise until double in size.
- Preheat oven to 350 degrees F.
- Brush the loaves with the egg yolk mixture and sprinkle with sesame seeds/poppy seeds.
- Bake for 25-30 minutes until the loaves sound hollow when thumped.

- Stir the first 5 ingredients in a medium bowl to blend. Stir in 2 tablespoons of the oil. Season mixture with salt and pepper and set aside.
- Lay the flank steak flat on the work surface. Sprinkle the bread crumb mixture evenly over the steak to cover the top evenly. Starting at 1 short end, roll up the steak as for a jelly roll to enclose the filling completely. Using butcher's twine, tie the steak roll to secure. Sprinkle the braciole with salt and pepper.
- Preheat the oven to 350 degrees F.
- Heat the remaining 2 tablespoons of oil in a heavy large ovenproof skillet over medium heat. Add the braciole and cook until browned on all sides, about 8 minutes. Add the wine to the pan and bring to a boil. Stir in the marinara sauce. Cover partially with foil and bake until the meat is almost tender, turning the braciole and basting with the sauce every 30 minutes. After 1 hour, uncover and continue baking until the meat is tender, about 30 minutes longer. The total cooking time should be about 1 1/2 hours.
- Remove the braciole from the sauce. Using a large sharp knife, cut the braciole crosswise and diagonally into 1/2-inch-thick slices. Transfer the slices to plates. Spoon the sauce over and serve.
- In a large casserole pot, heat oil over medium-high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrot and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and reduce the heat to low. Cover the pot and simmer for 1 hour or until thick. Remove bay leaves and taste for seasoning. If sauce tastes too acidic, add unsalted butter, 1 tablespoon at a time, to round out the flavor.
- Pour half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.
- If not using all the sauce, allow it to cool completely and then pour 1 to 2 cup portions into plastic freezer bags. Freeze for up to 6 months.
SWEET BRAIDED BREAD

- Dissolve yeast in warm water in a small bowl. Beat eggs and egg yolk together in a small bowl. Scoop out 2 tablespoons of beaten egg; keep refrigerated.
- Preheat the oven to 170 degrees F (75 degrees C).
- Combine sugar, margarine, and salt in a large bowl. Mix thoroughly until dissolved. Add warm and cool cream to the bowl. Stir in yeast mixture. Beat in eggs. Add flour 1 cup at a time, blending well between additions.
- Turn dough out onto a floured board; knead until smooth and elastic, 5 to 7 minutes. Spray a clean bowl with cooking spray. Place dough inside and spray the top.
- Cover dough with a dish cloth. Turn off oven and place dough inside. Allow to rest until doubled in size, about 1 hour.
- Remove dough from the bowl and knead for 2 to 3 minutes. Split in half; split each half into thirds. Roll each section of dough into long, 24-inch snakes. Braid 3 together, making sure to secure the ends. Repeat with the remaining 3 sections.
- Reheat the oven to 170 degrees F (75 degrees C). Line a cookie sheet with parchment paper. Transfer braids to the cookie sheet.
- Turn off oven. Let braids rise in the warm oven for 45 minutes.
- Remove braids from the oven and brush with reserved beaten egg. Preheat the oven to 350 degrees F (175 degrees C).
- Bake braids in the preheated oven until tops are golden, 25 to 30 minutes. Cool completely before slicing.

A SIMPLE BRAIDED BREAD
I love this recipe because it is simple, quick, and easy to do. Anyone who can defrost food and turn the oven on can make it. It is also as good, if not better, than bread made from scratch!

Steps:
- Thaw frozen bread until it can be cut in half (lengthwise) with a sharp knife, but has not started to rise.
- Take the halves and roll them out to about 16 inches in length and about 1 inch in diameter. The length and width are not that important, but they should all be the same length and width.
- Braid 3 of the halves together to make 2 loaves. Tuck the ends under so they will stay together and not burn.
- Place the loaves on a baking sheet that has been sprayed with non-stick spray and coated with corn meal. The corn meal is not necessary but addes that homemade look.
- Brush the egg wash on the bread and sprinkle with the poppy or sesame seeds.
- Let rise until double in size (Appr. 45 min.).
- Preheat oven to 375 degrees.
- Place loaves in the center of the oven and bake for 25-30 minutes or until the bread tapped sounds hollow. Option--at the end of 15 minutes turn the bread around. This insures even browning.
- Remove the bread from the baking sheet and cool on a wire rack.
- Note: I make this bread at Christmas time and give them to friends along with homemade cookies and candy.
