- Preheat oven to 350 degrees F.
- In a large, heavy Dutch oven over high heat fry the bacon until crisp and all of the fat is rendered. Using a slotted spoon, transfer the crisp bacon bits to paper towels to drain. Set aside and reserve.
- Season the chicken pieces with the salt and pepper. Brown the chicken pieces in the hot bacon fat, working in batches, if necessary, until golden on all sides. Transfer the chicken pieces to a large plate or bowl and set aside. Remove all but about 4 tablespoons of the bacon fat from the Dutch oven. Reduce the heat to medium-high and add the chopped onion, pearl onions, shallots and garlic cloves to the Dutch oven and cook until soft, 5 to 6 minutes.
- Add the mushrooms and cook for 7 minutes longer, or until they've released most of their liquid and have begun to brown. Add the flour and tomato paste and cook, stirring constantly, for 1 minute. Slowly add the wine and stock, stirring constantly. Add the thyme, bay leaves reserved bacon and chicken. Bring liquid to a boil, reduce the heat to medium, and cook the sauce at a gentle simmer for 15 minutes, until liquid is slightly thickened. Bring the sauce to a boil and cover the pot. Place in the oven and cook for about 1 1/2 hours, or until the chicken is very tender. Transfer the chicken pieces to a serving dish and cover loosely to keep warm. Return pot to medium-low heat. Skim any fat from the surface of the cooking liquid and increase the heat to medium-high. Add the heavy cream and cook until the sauce has thickened slightly and coats the back of a spoon, about 15 to 20 minutes. Taste and adjust the seasoning if necessary. Return the chicken to the Dutch oven and cook for a few minutes to heat through, then serve.
- Serve with egg noodles and Braised Leeks. Garnish with chopped parsley.
- Using a sharp knife, trim most of the roots off the ends of the leeks, leaving enough so that the leek remains attached at the bottom. Cut each leek lengthwise into halves or quarters, as desired. Run leeks under cold running water, using fingers to loosen and remove any dirt or sand from between the leaves.
- In a heavy skillet or saute pan that has a tight fitting lid, melt the butter over medium heat. Add the leeks to the skillet with any water that is clinging to the leaves from washing them. Cook the leeks, stirring occasionally, for 5 minutes. Add the stock and thyme and lower the heat to medium-low. Braise the leeks, covered, for about 10 minutes, or until the leeks are very tender. Season with salt and pepper and serve.
BRAISED CABBAGE WITH BACON
Great side dish for about anything. Quick and easy, you can change or add seasonings if desired... but is straight-up good as-is.

BRAISED BRUSSELS SPROUTS WITH BACON
This is a great side dish to serve with any grilled meat item or other vegetable dishes. I get many requests for this when catering. People who normally don't like Brussels sprouts love these!

- Melt butter with olive oil in a large pot over medium-high heat. Saute onion and garlic in butter mixture until translucent, 5 to 7 minutes; add Brussels sprouts and saute until slightly browned on edges, 5 to 10 minutes. Sprinkle bacon, chicken bouillon, red pepper flakes, and black pepper over the sprouts mixture; stir and cook until fragrant, about 2 minutes.
- Pour wine over the sprouts mixture, reduce heat to low, place a lid on the pot, and simmer until the sprouts are desired tenderness, 10 to 15 minutes.

BACON-BRAISED BRUSSELS SPROUTS
Steps:
- Preheat oven to 350 degrees F.
- Take a large pan and set over medium-high heat. Add bacon and cook until fat renders 2 to 3 minutes. Add the smashed garlic clove, thyme sprigs and Brussels sprouts and cook gently until slightly caramelized. Add stock and reduce heat to a simmer. Season with salt and a little pepper, cover and simmer for 12 to 15 minutes until tender. Remove lid and add a splash of vinegar and reduce until syrupy, 2 to 3 minutes.
- After Brussels sprouts are done cooking, put them in oven safe dish. In sheet tray and toss bread crumbs with rosemary, thyme leaves and chopped garlic, then drizzle with a little olive oil and salt and pepper. Sprinkle bread crumb mixture and Parmigiano over Brussels sprouts and bake in a hot oven until golden and crispy.
BRAISED FRESH BACON

- Preheat oven to 350 degrees. In a large ovenproof skillet, heat oil until it shimmers. Season pork with salt and pepper to taste, and place it skin side down in skillet. Cook until skin is browned, about 15 minutes. Transfer to a plate, and set aside.
- Pour off all but 2 tablespoons fat from skillet, and add onion, carrots, celery, leek and garlic. Cook, stirring occasionally, until vegetables are tender and beginning to brown, about 20 minutes. Return pork to skillet, skin side up, and add enough stock to surround but not cover meat, about 2 cups. Bring stock to a simmer, then transfer pan to oven. Bake, uncovered, for 1 hour. Add another cup of stock, and continue baking until pork is tender enough to cut with a fork, about another hour.
- Allow pork to cool in braising liquid. Remove pork from liquid, then gently lift off and discard skin; use a small knife to separate any pieces that do not lift off easily. Score fat, making crosshatch incisions, then cut pork into four equal pieces.
- Increase oven temperature to 400 degrees. Strain braising liquid, discarding solids. Return liquid to skillet, bring to a simmer and skim off fat. Return pork, fat side up, to skillet. Transfer skillet to oven, and bake, without basting, until pork is heated through and fat is well browned, about 20 minutes. Serve pork in shallow bowls topped with a bit of braising liquid.
CIDER-BRAISED SLAB BACON
The braised bacon and the reduced braising liquid can be refrigerated, separately, up to one day. Let the bacon stand at room temperature one hour, and reheat glaze to warm before caramelizing the bacon.

- Preheat oven to 325 degrees. Place bacon in an 8-inch square baking dish, and rub all over with pepper. Bring cider and maple syrup to a boil in a small saucepan, and pour over bacon. Cover with foil, and braise bacon in oven 55 minutes. Turn over bacon, cover, and braise 50 minutes more. Remove foil, and let bacon cool in liquid.
- Remove bacon from braising liquid, and cut into 1/4-inch-thick slices. Transfer liquid to a small saucepan; bring to a boil, and cook until reduced to a glaze (you should have 1/3 cup).
- Toss bacon in glaze to coat, and cook in a nonstick pan or preheated cast-iron skillet over medium heat, turning once, until deep brown and caramelized, 3 to 4 minutes total.
BRAISED BACON VIN BLANC
A nicely cured bacon joint is a wonderful thing, especially when braised in a tasty stock like this one here. I like to serve it with my sweet potato and coriander mash.

- Preheat the oven to 180 degrees. Place the bacon in a roasting tin with the wine, stock, peppercorns, star anise, onion and apple. Cover tightly with foil and roast for 1 hour.
- Remove the foil and cook for a further 30 minutes until the bacon is golden brown. Transfer the bacon to a warm plate and leave to rest for at least 15 minutes before carving. Serve warm or chilled.
