SIMPLE BRAISED POTATOES
One doesn't usually think of braising as a technique for cooking potatoes, but one should. It's so easy, and yields the same comfort quotient of the mashed sort without all of the peeling, boiling and mashing. Onion, garlic and your choice of thyme or rosemary give them a little oomph. As with all potato dishes, don't forget to season well with salt.

Steps:
- Scrub the potatoes, then cut potatoes into 1-inch chunks.
- Heat 3 tablespoons butter in a deep skillet or broad pot over medium-high heat. Add potatoes, onions, garlic, a sprig of thyme or rosemary, and salt and pepper. Cook, stirring, until potatoes begin to turn golden, 10 minutes.
- Add good stock to barely cover the potatoes (about 2 cups). Bring to a boil, reduce heat and simmer, stirring occasionally, until potatoes are tender and liquid is reduced, about 30 minutes.
- Season to taste with salt and pepper, then serve garnished with thyme or rosemary.

- Preheat oven to 375 degrees. Heat the oil and butter over medium-low heat in a large ovenproof skillet. Add onion, and cook until very soft, about 15 minutes. Stir in the potatoes and shallots and half the rosemary; season with salt and pepper. Raise heat to medium-high, and cook until potatoes begin to brown, about 10 minutes. Remove from heat, and add remaining rosemary and the stock.
- Cover skillet, and transfer to the oven; cook until potatoes are fork-tender, about 10 minutes (timing will vary with size of potatoes). Uncover, and cook until liquid is reduced, about 20 minutes. Sprinkle with chopped rosemary. Serve warm.
GAMJA JORIM (BRAISED POTATOES)

- Peel and cut potatoes into about 1-inch cubes. Cut the carrot, peppers, and onion into big chunks.
- In a small bowl, combine all the braising liquid ingredients except the sesame oil and seeds. Stir well.
- In a non-stick pan (or a small pot), sauté the potatoes in cooking oil over medium heat for 4 - 5 minutes, stirring occasionally so the potatoes don't stick to the pan.
- Add the sauce mix and bring it to a boil over high heat. Drop the carrot pieces in. Cover, and reduce the heat to medium and cook until the potatoes are almost cooked through (about 5 to 6 minutes, depending on the type or size of potatoes). The potatoes should be firm and not mushy.
- Stir in the green peppers and onion, and continue to boil (uncover this time) until the sauce is reduced and slightly thickened, about 3 minutes. The potatoes will continue to soak up the sauce even after being cooked. Stir in the sesame oil and sprinkle with sesame seeds.

OLIVE OIL BRAISED POTATOES

- Preheat the grill. Preheat the oven to 325 degrees F.
- Put the potato slices on the hot grill and cook for about 2 minutes on each side to mark them. Remove from the grill and place them in a single layer in a baking pan. Season both sides with salt and pepper. Add enough olive oil to reach 1/3 up the sides of the potatoes. Turn the potatoes over to coat with the oil. Scatter the thyme and garlic cloves over the potatoes, sprinkle with a little more salt, if desired, and place in the oven.
- After about 15 to 20 minutes, the potatoes will be tender. Remove from the oven and let them cool in the oil. Serve at room temperature.
- Chef's notes: Using a high quality olive oil will impart its flavor to the potato.

- In a large saute pan, heat 4 tablespoons of the oil over medium heat. Add the potatoes and carrots. Cook until browned, about 10 minutes. Add the onion and cook another 5 minutes. Add the garlic and the remaining oil. Cook for 2 more minutes.
- Add the sage, rosemary, and thyme. Add salt and pepper to taste. Add the wine and 1/4 cup water. Bring to a boil, reduce heat, and simmer covered for about 8 minutes. Uncover and continue cooking about 4 minutes until the potatoes are tender and the liquid has thickened enough to coat the vegetables.

- Arrange potatoes in single layer, cut side down, in 12-inch nonstick skillet. Add water, butter, garlic, thyme, and salt and bring to simmer over medium-high heat. Reduce heat to medium, cover, and cook until potatoes are just tender, about 15 minutes.
- Remove lid and use slotted spoon to transfer garlic to a cutting board; discard thyme. Increase heat to medium-high and vigorously simmer, swirling pan occasionally, until water evaporates and butter starts to sizzle, 15 to 20 minutes. When cool enough to handle, mince garlic to paste. Transfer paste to bowl and stir in lemon juice and pepper.

- Arrange the potatoes in a single layer in a Dutch oven or other wide, deep pan. Place the Dutch oven over medium heat and add the chicken stock, garlic, thyme, butter, and salt to taste.
- Cover the pan with a lid and bring to a boil over mediumish heat. Reduce the heat and gently simmer, shaking the pan or stirring the potatoes often, until the potatoes are just tender, 12 to 20 minutes, depending on the size of the potatoes.
- Remove the lid and continue to cook, turning occasionally and keeping an eye on the heat so the butter doesn't burn, until the potatoes take on browned splotches on all sides, 5 to 10 minutes.

BRAISED POTATOES
Found in an old magazine. This is a great recipe - that is a terrific side or a meal in itself. To re-heat, don't microwave, but reheat in the frypan after cooking meat, etc., so that it picks up some of the flavours. This is also great when made part of scrambled eggs!

- Cut potatoes into 5mm thick slices.
- Heat 1 tablespoon oil in a large frying pan. Add onions and bacon & cook, stirring until onions are golden brown & bacon is cooked. Remove from pan.
- Heat remaining oil and butter in the same pan. Add potatoes & cook, turning occasionally until browned all over. Remove from pan.
- Drain oil mixture from pan. Return potatoes & onions to the pan with garlic and stock.
- Bring to the boil and then simmer, covered, for about 10 minutes, or until potatoes are tender.
- Stir in frozen vegetables and mushrooms and cook, covered, for a further 5 minutes.
- Stir in parsley & season with salt & pepper.
- Serve with grain mustard.

- Cut 1 lb pork loin tenderloin into bite size pieces (about 1/2-inch thick pieces). Transfer to a 6 qt dutch oven, cover with water and bring to a boil. Dispose meat scum (foamy water) and rinse meat (use strainer if needed). Transfer meat back to dutch oven, add 4 cups water, 1/2 tsp fine salt, 1/8 tsp ground black pepper and 2 dried bay leaves. Cover with lid. Bring to a boil, reduce heat to medium-low and cook for 20-25 mins until meat is tender.
- Heat a medium non-stick skillet with 3 tbsp oil over medium heat. Add 2 small onions and saute for 4-5 mins until softened and translucent. Add 2 large julienned carrots and saute for another 4-5 mins until softened (adding more oil if it seems too dry). You can also grate carrots onto large hole of grater. Turn off heat, set aside.
- Peel and cube 8 large gold potatoes into 1/2-inch thick pieces. Transfer into a large bowl and cover with cold water until ready to use.
- Once meat is cooked, add the carrots/onions mixture and cubed potatoes (disposing potatoes water). Sprinkle remaining 1 tsp salt and 1/8 tsp ground black pepper. Push potatoes deeper into water if necessary to make sure they are covered. Bring to a light boil and cook for 30 mins (with lid closed), until potatoes are tender when pierced with a fork. Placing potatoes on top of carrots and meat will prevent the potatoes from falling apart and turning into mush. They will be gently steaming on top. At this point, you would add more salt or pepper to taste if necessary.
