CRISPY FINGERLING POTATOES
Steps:
- Put the potatoes into a large pot and cover them with water. Add a big pinch of salt, then cover, and put over high heat. Bring to a boil, uncover, and cook just until the potatoes start to soften but are not cooked all the way through, about 10 minutes. Drain the potatoes and return them to the warm pot. Shake the potatoes around to roughen up the sides and to let them dry out. Put them into a bowl.
- Preheat the oven to 425 degrees F. Put a baking sheet in the oven to preheat.
- Add the olive oil, grill seasoning, paprika and pepper, to taste, to the potatoes and toss to coat. Spread the potatoes out onto the preheated baking sheet and roast them until they are cooked through and crispy, about 20 to 25 minutes, flipping the potatoes once halfway through the cooking time. Remove the potatoes from the oven to a serving bowl and serve.

- For vinaigrette:
- Combine mustard and vinegar in small bowl. Whisk in oil, then herbs. Season with sea salt and pepper.
- For potatoes:
- Preheat oven to 400°F. Spread sea salt in even layer on rimmed baking sheet; arrange potatoes over salt, spacing slightly apart. Cover sheet with foil and bake until potatoes are tender, about 1 hour. Remove from oven, uncover, and cool to lukewarm.

- Preheat oven to 400°F with rack in lowest position.
- Toss shallots with 1 1/2 tablespoon oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a 13-by 9-inch baking pan, spreading evenly.

ASPARAGUS, FINGERLING POTATOES AND SHALLOT FRITTATA
We love asparagus and I enjoy the fingerling potatoes. So when I came across this recipe for frittata, I thought I'd give it a try this Spring. If you can't find fingerling potatoes, you can easily substitute small red potatoes, Yukon gold or even small all-purpose potatoes. This recipe is from Pompeian Olive Oil

- Preheat the oven to 375°.
- In a 10-inch non-stick skillet, heat 3 tablespoons of the oil together with the butter over low heat.
- When the butter has melted, add the shallots and potatoes, season with salt and pepper and cook, covered, until the potatoes are tender, stirring often.
- Transfer the mixture to a colander, drain well and set aside.
- In a large bowl, combine the eggs and 1/2 cup of the Parmesan, season with salt and pepper and whisk until well blended.
- Fold in the reserved asparagus and the potato/shallot mixture.
- Add the remaining olive oil to the skillet and set over medium heat.
- When hot, add the egg mixture and disperse the asparagus and potatoes evenly among the eggs.
- Cook for 1 to 2 minutes or until the bottom is just set.
- Sprinkle the top of the egg mixture with the remaining Parmesan and bake in the center of the preheated oven, for about 16 to 20 minutes or until the eggs are set and the top is lightly browned.
- Remove the frittata from the oven.
- Loosen the frittata if necessary by running a spatula around the insides of the skillet and carefully slide the frittata onto a large serving platter.
- Garnish with fresh chives and serve warm or at room temperature, cut into wedges, accompanied by a well-seasoned green salad and a crusty French baguette.

- Rinse and scrub the potatoes lightly in a colander under running water. If the potatoes are on the smaller side–less than 1-inch wide and not very long–leave them intact. Slice any larger fingerling potatoes in half crosswise.
- Place the fingerling potatoes in a straight-sided sauté pan (at least 3 quarts in size) so that the potatoes can be accommodated in a single layer. Add the sliced shallot, garlic cloves, fresh rosemary, thyme, and dried bay leaves to the pan. Add the olive oil and toss to coat evenly. Pour in the chicken stock and season lightly with salt and pepper (the salt will concentrate as the potatoes cook, so avoid over-seasoning, especially if you are not using low-sodium chicken stock).
- Cover the pan and bring to a simmer over medium heat. Reduce the heat to a very low simmer and cook the potatoes, covered, for 10 minutes. Use a spoon to flip the potatoes, cover, and simmer for an additional 10 to 12 minutes, or until they are can be easily pierced with a sharp knife or skewer. There should still be a relatively substantial amount of braising liquid left in the pan.
- Remove the lid and bring over high heat ntil the braising liquid has come to a boil. Continue to cook over high heat, shaking the pan back and forth gently, until all of the braising liquid has evaporated and the potatoes begin to sizzle in any remaining oil in the pan. At this point, the shallots and garlic will have reduced to a buttery glaze, which should coat the potatoes evenly. Remove from the heat, discard the bay leaves and any tough remaining rosemary and thyme stems. Taste and season with salt and pepper, if necessary.
