MEDITERRANEAN EGGPLANT DIP RECIPE
Steps:
- Preheat the oven to 400ºF (200ºC).
- Poke the eggplant in several places with fork. Place it on a baking sheet and bake in the preheated oven for 45 minutes or until soft, turning once or twice during baking. Let the eggplant cool, then peel it and chop finely.
- Meanwhile, saute the garlic, celery, green pepper and tomatoes in a bit of oil for 4 or 5 minutes or until they soften. Add the chopped green onions in the last minute of cooking.
- In a mixing bowl, combine the eggplant, onions, garlic, tomato, celery and green pepper and toss to mix them all together. Add the lemon juice, oil, salt and pepper. Stir to mix well. Cover and refrigerate the dip for at least 1 hour before serving for the flavors to meld.

MEDITERRANEAN DIP
This is a Trader Joe recipe. It is such a delicious dip! I took it to a party and everyone wanted a copy of the recipe. The recipe suggests layering the ingredients into a pie plate or something sized similar. I made the mistake of thinking that was too big for the dip and used a smaller serving dish. By the time I was finished layering the ingredients, it was too full! I served this dip with pita crackers from Trader Joes, but you could use your own favorite dippers. This recipe looks unusual but it is knock out.

- In a medium bowl, combine sour cream and hummus; mix well.
- Spread into a pie plate or servewear of similar size.
- Sprinkle olives, feta, artichoke hearts, green onions and carrot - adding each as a layer.
- Drizzle with reserved artichoke marinade.
- Cover and refrigerate for at least an hour or up to 12 hours.
- Serve with pita crackers.

- Preheat the oven to 425 degrees F. Cut all of your vegetables to your desired size making sure they are about the same size for even roasting and put them in a large mixing bowl. In a small mixing bowl or mason jar combine the olive oil, garlic, thyme, oregano, za'atar or sumac, lemon juice and salt and pepper. Stir or shake to combine. Toss the vegetables in the olive oil mixture. On a baking sheet spread the vegetables out in an even layer. You don't want your vegetables to be crowded so you may want to use two baking sheets. Roast the vegetables for about 30 to 35 minutes or until they are soft and just starting to show some char on the edges making sure to stir the vegetables at about the 15 minute mark. Garnish with fresh herbs and serve warm.
