3 tablespoons crushed black peppercorns
2 (8 ounce) beef top sirloin steaks
1 tablespoon lemon pepper
1 teaspoon salt
5 tablespoons butter
2 cloves garlic, minced
½ cup red wine
3 tablespoons brandy
¼ cup chopped green onions
1 shallot, chopped
½ cup heavy cream
1 teaspoon white sugar

Steps:

  • Press crushed peppercorns into both sides of each steak. Sprinkle with lemon pepper and salt.
  • Melt butter in a large skillet over medium-high heat. Stir in garlic and wine, and cook for 1 minute. Arrange steaks in pan, and cook until desired doneness, about 5 minutes per side. Reduce heat to low.
  • Pour brandy onto steaks, and carefully light with a match. Let the flames burn off. Sprinkle green onion and shallot around the steaks, and circle the steaks with cream. Cook, stirring sauce, until hot. Transfer steaks to plates. Stir sugar into sauce, and then spoon over meat.

Talk about lush! I love the spicy taste of Chorizo sausage but I don't have it often due to trying to eat less fat. However, everybody has to treat themselves sometime and if you are doing to do it then *DO* it. This would impress party guests at a dinner party, cocktail party or even at a New Year's Eve party. This recipe was first published in the Christmas 2006 issue of BBC Easy Cook magazine.

I love the flavors in this recipe. I use this as a ground meat and do not put the mixture into casings and allow to dry however, if you wanted to do so, you certainly can use this recipe for that purpose. There are many uses for this, such as in rice, in soups and stews, as a patty it is delicious on a biscuit or a piece of cuban bread, as a filling to make boliche (which is a chorizo stuffed beef (pork loins and chicken breasts too!), or mixed with breaded stuffing to fill a chicken, turkey or pork chops. Like I said, their are many uses.

2 lbs ground pork (Pick a fatty piece of pork and ask your butcher to grind it for you)
2 small hot red peppers (minced ( or 1/2 teaspoon crushed hot peppers)
1 ounce chipotle-flavored marinade (1/2 package of McCormick Grill Mates Chipotle Pepper Marinade)
1/4 cup vinegar
1 teaspoon oregano
3 garlic cloves, crushed
2 tablespoons chili powder
1 teaspoon fresh ground black pepper
1 teaspoon salt
1/4 teaspoon ground cumin

Steps:

  • IMPORTANT NOTE:.
  • Please make sure to choose a fatty piece of pork and ask your butcher to grind it for you. If you use the lean ground pork ready-to-go in the supermarket then your sausage will be dry with an almost gritty consistency. I find the boneless country ribs have a great fat to meat ratio.
  • DIRECTIONS:.
  • Combine ingredients with pork. Use your blender or food processor to grind mix until smooth -- you will have to stop it and stir frequently.
  • IF YOU WANT TO MAKE LINKS:.
  • You will need 1 yard sausage casing.
  • Stuff the mixture through the sausage stuffer into the casings and twist into links.
  • Dry the sausages by hanging them in a cool place, it may then be kept for several weeks.

12 ounces mexican chorizo sausage (beef or pork)
1 (12 ounce) round asadero cheese (or other white melting cheese)
2 tablespoons brandy
crumbled pasilla chile
1 bunch green onion, finely chopped
1/2 cup chopped fresh cilantro
fresh corn tortillas or flour tortilla, as needed

Steps:

  • Preheat oven to 300°F
  • Heat chorizo in a large skillet over medium-high heat until no longer pink, 6 to 7 minutes. Remove from heat; cool slightly and spoon off most of the fat.
  • Slice cheese into 1-inch cubes; place half in a 2-quart casserole dish. Top with half the chorizo and remaining cheese. Top with remaining chorizo. Bake 15 to 20 minutes, until creamy and bubbly.

Many years ago I traveled to Cancun with a friend for a little fun and sun. Rather than frequenting the Americanized restaurants on the beach strip, we ate our meals downtown in places frequented by locals. One particular morning, we tried chilaquiles for breakfast and I was in heaven. On returning, I went looking for a recipe to replicate the flavors and this one comes close. Though this recipe makes the dish from scratch, typically these are made largely from leftovers from the night before.

2 cups tomatillos, husked and chopped
1/2 cup poblano chiles or 1/2 cup new mexico pepper, roasted and chopped
1/4 cup yellow onion, minced
2 garlic cloves, minced
3/4 cup chicken broth or 3/4 cup chicken stock
2 tablespoons whipping cream
3 tablespoons fresh cilantro, minced
salt and pepper
12 -16 stale corn tortillas, thick ones work the best
vegetable oil (for frying)
1 cup chorizo sausage, cooked and drained
1/2 medium onion, sliced in thin rings
2 cups monterey jack cheese
crema (garnish)

Steps:

  • To prepare the sauce, combine tomatillos, chiles, chopped onion, garlic, broth and whipping cream in a medium saucepan and simmer for 10 minutes. (In a pinch, I've substituted the whipping cream for equal parts milk and sour cream.) Add cilantro, salt and pepper. Puree in blender. I like mine to have a little bit of texture.
  • Pre-heat oven to 350 degrees.
  • Cut tortillas into sixths. Add 1/2 inch of oil to skillet over medium heat. Fry tortillas until chewy, but not as crispy as you would for chips. Drain on paper towels.
  • Create a layer of tortillas in a shallow baking dish. Top with half the sauce, chorizo, onion and cheese. Add remaining sauce. Bake 20-25 minutes until the dish is gooey. Serve piping hot with crema as garnish.
