BRAZIL NUT ROAST RECIPE

A Brazil nut roast is a classic vegetarian alternative for a Sunday roast dinner. Our recipe is filling, packed with flavour, and also has plenty of health benefits.

Number Of Ingredients 14

200g Brazil nuts, chopped
30g butter
1 onion, finely chopped
2 carrots, peeled and finely chopped
1 stick celery, finely chopped
1 green chilli, deseeded and chopped
100g mature Cheddar cheese
2 medium eggs
50g fresh white breadcrumbs
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh thyme
Finely grated rind of 1 lemon
Salt and freshly ground black pepper
Vegetable gravy, to serve, optional

Steps:

  • Preheat the oven to 180°C.
  • Reserve about 2 tablespoons nuts and spread rest out on a baking sheet. Roast them in the oven for 5-10 minutes until they start to turn golden, then remove from oven.
  • Melt the butter in a frying pan and add the onion. Cook for about 5 minutes over a medium heat until it starts to soften, then add the carrot, celery and chilli to the pan and cook for a further 5-7 minutes until the vegetables soften. Tip them into a bowl.
  • Reserve about 2-3 tablespoons of the cheese. Add the rest to the vegetables, along with the nuts, eggs, breadcrumbs, parsley, thyme and lemon rind. Season well.
  • Spoon the mixture into the prepared tin and sprinkle over the reserved nuts and cheese. Bake in the centre of the oven for 35-45 minutes, or until golden brown and just firm to the touch in the centre.
  • Remove loaf from oven and leave it to cool in the tin for about 5 minutes before turning it out and slicing to serve with gravy, if you like.

1 ½ cups walnuts
½ cup pecans
2 tablespoons olive oil
1 small sweet yellow onion, finely chopped
3 cloves garlic, minced
1 (6 ounce) package baby bella mushrooms, chopped
1 teaspoon dried marjoram
1 teaspoon dried sage
1 teaspoon dried thyme
12 ounces shredded Swiss cheese
1 ½ cups cooked wild rice
1 cup cottage cheese
4 large eggs, lightly beaten
2 tablespoons chopped fresh parsley
1 teaspoon salt
½ teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Butter a 9x5-inch loaf pan.
  • Put walnuts and pecans in a resealable bag and seal; crush nuts using a rolling pin.
  • Heat olive oil in a skillet over medium heat; cook and stir onion and garlic in the hot oil until onion is translucent, about 3 minutes. Add mushrooms, marjoram, sage, and thyme; cook and stir until mushrooms are golden, about 5 minutes. Transfer mushroom mixture to a large bowl.
  • Stir crushed walnut mixture, Swiss cheese, wild rice, cottage cheese, eggs, parsley, salt, and pepper into mushroom mixture until evenly mixed. Pour mixture into the prepared loaf pan.
  • Bake in the preheated oven until loaf is golden brown, about 1 hour. Let loaf cool in pan for about 20 minutes before inverting pan and removing loaf.

Brazil nuts may be an unusual ingredient for a cookie recipe, but the flavor is absolutely outstanding. The recipe from my mother for these rich buttery cookies goes back more than 70 years.

1 cup butter, softened
1 cup sugar
2 eggs
1-1/2 teaspoons vanilla extract
2-1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups chopped Brazil nuts
1/2 cup sweetened shredded coconut

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in nuts and coconut. , Drop by tablespoonfuls 3 in. apart onto ungreased baking sheets. Bake at 350° for 10-12 minutes or until bottom of cookies are lightly browned. Remove to wire racks.

2 tablespoons olive oil
1 onion, chopped
1 leek, chopped
3 -4 sticks celery, chopped
2 garlic cloves, crushed
1 tablespoon wholemeal flour
1 glass white wine
6 ounces brazil nuts
2 ounces ground hazelnuts
4 ounces wholemeal breadcrumbs
1 tablespoon rolled oats
1 tablespoon chopped fresh mixed herbs (1 teaspoon dried)
3 -4 tablespoons natural yoghurt
salt and pepper

Steps:

  • Heat the oil in a shallow pan and fry the onion, leek, celery and garlic until soft.
  • Add the tablespoon of flour and cook for 1 minute then add the wine and cook on medium heat until the mixture thickens.
  • Grind 4oz of the brazil nuts finely and roughly chopped the remainder. Put these in a bowl with the hazelnuts, breadcrumbs and rolled oats. Add the onion mixture, the yoghurt and seasoning.
  • Mix well then fill a prelined loaf tin and cover with foil.
  • Cook at 175C for 50mins - 1 hour.
  • Remove from the tin and serve with roast potatoes and vegetables.

Number Of Ingredients 11

100ml sunflower oil , plus extra for greasing
140g caster sugar
140g plain flour
140g Brazil nut , roughly chopped
50g desiccated coconut
1 tbsp butter , diced, plus extra to serve
2 large, very ripe bananas - with black skins is ideal (about 175g peeled weight)
1 large egg , plus 1 large egg white
5 tbsp milk
½ tsp baking powder
¼ tsp ground cinnamon

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease a 900g loaf tin, then line the base and ends with a long strip of baking parchment. Stir together 2 tbsp each of the sugar, flour, nuts and coconut. Add the butter and rub together to sticky crumbs. Set aside.
  • Mash the bananas well, then stir in the sunflower oil, egg and milk. In a separate large bowl, mix half of the remaining sugar, followed by the remaining flour, nuts and coconut, then the baking powder and cinnamon.
  • Whisk the egg white to stiff peaks, add the final bit of sugar and whisk again until stiff and shiny. Stir the banana mixture into the dry ingredients, then lightly fold in the egg white mixture. Gently scrape into the tin and scatter over the crumb mixture.
  • Bake for 40 mins until a skewer poked in comes out clean, covering with foil if the bread starts to go too brown. Cool in the tin, then remove and thickly slice, eating with butter, if you like.

This is not the typical Fruit Cake that one thinks of around the holidays - probably because it doesn't have the citron that most fruit cakes have. Mom has been making this for years, and everyone loves it!

1 lb shelled brazil nut, chopped
1 (8 ounce) package pitted dates (cut in half)
1/2 lb pineapple bits (the kind for fruit cake)
1 cup drained maraschino cherry, chopped
1 cup raisins (you can mix the gold and dark raisins if desired)
3/4 cup flour
3/4 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
3 eggs
1 teaspoon vanilla

Steps:

  • Sift the dry ingredients together.
  • In large bowl, place chopped fruits and nuts.
  • Add the sifted flour and mix to coat well.
  • Beat the eggs and add the vanilla.
  • Mix with the dry ingredients and fruit and nuts until well coated.
  • Grease a 9x5x3 loaf pan and line with wax paper.
  • Add mixture to prepared pan.
  • Bake at 300 degrees for 1 hour and 45 minutes.
  • Remove from pan and immediately remove wax paper and cool before slicing.
