An easy recipe for black beans cooked in a pressure cooker. No soaking required! Can be served the traditional way over rice, or used for Latin dishes like burritos, fajitas, and salads. Click Here for my Brazilian Style Rice Recipe.

1 pound dry black beans
4 slices bacon (I like center cut bacon)
1 small-medium onion, diced
5-6 cloves garlic, pressed or minced
4 cups vegetable broth (can use chicken or beef, or even water instead)
1 cup water (more if desired, for "soupier" beans)
1 tablespoon kosher salt
1/2 teaspoon black pepper
cooked white rice for serving (my Brazilian rice recipe will be live on Friday!)

Steps:

  • Place beans in a fine mesh strainer and pick out any shriveled ones, along with any impurities.
  • Heat pressure cooker to medium-high heat (sauté setting for electric pressure cooker, medium heat on stove top for regular pressure cooker). While pot is heating, cut bacon into about 1/2-inch pieces. Cook bacon until lightly browned and starting to crisp. Add diced onion and cook, stirring often for 3-4 minutes. Add garlic and stir for about 30 seconds.
  • Add beans, broth and water, salt, and pepper. Stir to combine and secure lid. Cook on high pressure for 40 minutes, and then release steam from pot. If desired, lightly smash some beans on the side of the pot (this will thicken them), season with additional salt and pepper if desired, and let cool for a few minutes before serving. Serve over white rice.

1 pound dried black beans
1 tablespoon extra-virgin olive oil
Kosher salt

Steps:

  • Place beans, oil, 3 quarts water, and 1 teaspoon salt in a 6-to-8-quart pressure cooker.
  • Stovetop:Secure lid. Bring to high pressure over medium-high heat; reduce heat to maintain pressure and cook 20 minutes. Remove from heat and quickly release pressure (loosely cover vent with a clean kitchen towel), then remove lid. Electric: Secure lid. Manually set cooker to 25 minutes and let it come to pressure. Once time is complete, turn off and quickly release pressure (loosely cover vent with a clean kitchen towel), then remove lid.
  • Let beans stand in cooking liquid 30 minutes; drain.

1 pound dry black beans
1 small onion, finely chopped
1 bunch cilantro, tied together with butcher twine
1 tablespoon olive oil
1 ½ teaspoons salt
2 tablespoons balsamic vinegar

Steps:

  • Combine water, black beans, onion, cilantro, olive oil, and salt together in a pressure cooker; cover and seal with lid. Cook on high according to manufacturer's instructions, about 40 minutes. Allow steam to release completely. Remove lid and stir balsamic vinegar into beans.

4 tablespoons extra-virgin olive oil
1 ham hock, about 1 pound
1 medium onion, diced
2 cloves garlic, minced
1 bay leaf
2 cups (about 1 pound) dried black beans, picked over and rinsed
6 cups water
Kosher salt and freshly ground black pepper

Steps:

  • In a 6-quart pressure cooker over medium-high heat, pour in 3 tablespoons oil. Add the ham hock and onions and cook until the onions are wilted and the ham hock is lightly browned, about 5 minutes. Throw in the garlic and bay leaf and cook for 1 minute more. Add the beans and give a good stir. Pour in the water; add the remaining tablespoon of oil, 1 tablespoon of salt, and a couple of grindings of pepper. Following the manufacturer's instructions, cover, lock the lid, and bring to high pressure. Lower heat to maintain pressure and start timing. Cook at high pressure for 25 minutes. Remove from heat and let rest for 5 minutes. Release the steam, again following the manufacturer's directions. If the beans are underdone, simmer them with the lid off until tender. Remove bay leaf and discard. Pick meat from ham hock and add to beans; discard the bone. Taste and adjust seasoning.
  • Cook's note: The oil prevents the beans from foaming and clogging the steam vent of the pressure cooker.

  • Put the pressure cooker pot over medium heat (use sauté mode in an electric PC) and add the bacon to the pot. Cook until the bacon is browned and crispy, about 5 minutes. Remove the bacon from the pot to a large bowl with a slotted spoon, leaving as much bacon fat behind as possible. Add the pork to the pot in a single layer, sprinkle with 1/2 teaspoon of salt, and brown on one side, about 3 minutes. Move the pork to the bacon bowl with a slotted spoon. Add the beef to the pot in a single layer, sprinkle with 1/2 teaspoon of salt, and brown on one side, about 3 minutes. Move the beef to the bowl of meat with a slotted spoon. Add the smoked sausage to the pot in a single layer, and brown on one side, about 2 minutes. Move the sausage to the bowl of browned meat with a slotted spoon.
  • Add the diced onion and smashed garlic to the pot, and sprinkle with 1/2 teaspoon of salt. Let the onion cook for a minute to start releasing liquid, then scrape the bottom of the pot with a flat-edged wooden spoon, loosening all the browned bits of meat into the onions. Keep sautéing the onions and garlic, occasionally scraping the bottom of the pot to loosen any browned bits, until the onions soften, about 5 more minutes.
  • Stir in the dried beans, then the bowl full of meat and any juices, Sprinkle with 1 teaspoon salt and the baking soda, then pour in the water and add the bay leaves. Lock the lid on the pressure cooker and cook at high pressure for 40 minutes in an electric PC, 35 minutes in a stovetop PC, and then let the pressure come down naturally, about 20 minutes.
  • Carefully remove the lid on the pressure cooker – the steam will be hot – and discard the bay leaves. Taste the stew for seasoning; it will need pepper, but probably not any more salt. Ladle into bowls, sprinkle with parsley, and serve.
