- In a large bowl, whisk together the yogurt, parsley, dill, harissa, sambal, rice wine vinegar, garlic and lemon zest and juice. Season generously with salt and pepper and set aside.
- In a deep, heavy-bottomed pot, heat the oil over medium-high heat until it reaches 375 degrees F. Fit a baking sheet with a wire rack.
- Season the wings with salt and pepper. Fry in batches until very crisp and golden brown, 8 to 12 minutes. Use a slotted spoon or spider to remove the wings to the prepared baking sheet and, while the wings are still hot, season with more salt.
- Once all the wings are fried, place them in a large bowl and toss with 1/4 cup of the sauce. Transfer the wings to a large platter, garnish with sliced scallions, drizzle generously with more sauce and serve the remaining sauce alongside for dipping.

- Using a sharp knife, cut through the 2 wing joints; discard wing tips. Pat chicken dry with paper towels. Toss wings with kosher salt. Place on a wire rack in a 15x10x1-in. baking pan. Refrigerate at least 1 hour or overnight., In an electric skillet or deep-fat fryer, heat oil to 375°. Fry wings in batches until skin is crisp and meat is tender, 8-10 minutes. Drain on paper towels., For Buffalo wing sauce, bring hot sauce just to a boil in a small saucepan. Remove from heat; whisk in butter 1 piece at a time. Stir in molasses and cayenne pepper., For Thai sauce, heat oil in a small saucepan over medium heat. Add ginger, garlic and chile pepper; cook and stir until fragrant, about 2 minutes. Stir in brown sugar and lime juice. Bring to a boil; cook until slightly thickened, about 5 minutes. Stir in cilantro and fish sauce., For barbecue sauce, heat prepared barbecue sauce in a small saucepan over medium heat. Stir in chipotle peppers, honey and vinegar. Bring to a boil; cook and stir until slightly thickened, about 5 minutes. , Toss wings with 1 of the sauces. If desired, sprinkle with green onion slices.

FRIED SWEET-AND-SPICY CHICKEN WINGS
Steps:
- Stir the sweet chile sauce and sriracha together in a large bowl. You will be frying the wings and rolling them in this sauce while they're hot.
- Rinse the chicken wings in cold water, drain briefly and place in a shallow baking dish while still damp. Sprinkle the wings evenly with the tempura flour and massage until a thin batter forms.
- Heat the oil in a large 6-quart Dutch oven or heavy-bottom pot over high heat. Using a deep-fry thermometer, bring the temperature of the oil to 365 degrees F.
- Pour the cornstarch into a second large bowl. Dredge the chicken wings through the cornstarch, shake to remove any excess. Working in 3 batches, fry the wings until cooked through and golden brown, 8 to 10 minutes, turning them occasionally. The internal temperature of the chicken should be 165 degrees F.
- Drain the wings on paper towels briefly, then roll them in the prepared sauce. Serve hot.
BRAZILIAN FRIED CHICKEN WINGS
Brazilian fried chicken wings aka frango a passarinho. Chicken is brined in garlicky lime juice then fried to crispy, juicy goodness.

Steps:
- Mix vodka, lime juice, 1/2 of the garlic, salt and pepper in a bowl.
- Add the chicken to the brine mixture and coat evenly. Cover with cling film and refrigerate for at least an hour.
- Season your starch with salt and pepper. Dip each chicken wing in the starch, shaking off excess. Let sit and reach room temperature.
- Heat oil in a large pot to 350°F.
- Fry half the chicken wings until dark golden brown about 6 minutes.
- Remove and sit on a cooling rack while you fry the other half.
- Refry each batch for another two minutes each. Set aside and let cool. Optionally season with with salt, pepper and your preference for spices.
- Toast the remaining garlic in the hot oil. (See notes for optimal way)
- Serve the wings topped with toasted garlic, fresh parsley and lime wedges.

- Season chicken wings lightly with seasoned salt.
- Mix flour, salt, black pepper, cayenne pepper, and paprika together in a wide, shallow bowl. Press wings into flour mixture to coat and arrange onto a large plate so they do not touch. Refrigerate coated wings for 15 to 30 minutes.
- Dredge wings again in flour mixture and return to the plate. Refrigerate wings again 15 to 30 minutes.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Fry chicken wings in hot oil until crisp and no longer pink at the bone and the juices run clear, 9 to 12 minutes. An instant-read thermometer inserted into the thickest part of the meat, near the bone should read 165 degrees F (74 degrees C).
- Transfer fried wings to a large stainless steel bowl. Drizzle sauce over the wings and toss to coat.

- In a large Ziploc bag, mix in lime juice, mustard, 1-½ Tablespoons salt, and 2 teaspoons pepper. Place small cuts of chicken inside, seal bag, and try to combine mixture with the chicken as much as possible. Let rest at room temperature for 30-60 minutes.
- In another large Ziploc bag, mix flour, cornmeal, 1 teaspoon salt, 1 teaspoon pepper, and paprika if desired. Remove chicken pieces from the bag, shaking off excess marinade, and place into the flour mixture. Seal bag and shake well until all pieces are covered with flour mixture.
- Heat the vegetable oil to 350 degrees F, shake off excess flour, and deep fry chicken in batches. Avoid overcrowding the pan. It will take about 8 minutes (wings and other small pieces) to 12 minutes (drumsticks and other alike pieces). Place fried chicken bites onto a large sheet pan lined with double paper towel to absorb excess oil.
- Meanwhile, toast minced garlic with olive oil over medium heat in a small to medium skillet -- just until garlic starts getting lightly brown. Watch carefully! Remove pan from the heat, let cool a bit, and spoon on top of the fried chicken bites. Sprinkle chopped parsley on top and serve by themselves or accompanied by French fries and chilled beer or other drink of your choice.

- In a large bowl, combine the lime juice, the minced garlic and the salt and pepper. Add the chicken wings and toss them with the marinade, making sure every piece of chicken is coated. Cover and bring the bowl to the fridge overnight.
- The next day, add the flour and the wings to a ziplock bag. Close the bag and shake it so every wing is coated in flour.
- Fill a saucepan with enough oil to deep fry the wings. Heat the oil over medium high heat and, when the oil is hot enough, lower the heat to medium low and start frying the wings in batches, 5 or 6 at a time.
- When the wings look cooked and beginning to gain some color, turn the heat up to high, so they get extra crispy, and fry them until golden brown.
