Bread Machine Almond Bread image

I wanted a bread with some extra protein for breakfast, so I came up with this. This is an excellent very faintly sweet breakfast bread with an unusual but satisfyingly 'bread' texture. The crust has a great flaky/chewy consistency while remaining soft. It is dense but not heavy and the extra protein from the almond flour keeps the mid-morning munchies away. It is very good with a slice of cheese and some fruit on the side. This is not (nor was it intended to be) a gluten-free recipe; the addition of vital gluten is critical to maintain cell structure for the rise. The xanthan gum is only in there because I like the ability to slice my homemade bread and use it for sandwiches.

4 teaspoons almond oil
1 teaspoon salt
¼ cup honey
1 cup almond flour
2 cups whole wheat flour
¼ cup vital wheat gluten
1 teaspoon xanthan gum
1 (.25 ounce) package dry yeast

Steps:

  • Combine water, almond oil, salt, honey, almond flour, whole wheat flour, vital wheat gluten, xanthan gum, and yeast, respectively in a bread machine. Follow manufacturers' instructions for a 2-pound loaf.

2 tablespoons butter or margarine, softened
1/2 teaspoon vanilla
3 cups Gold Medal™ Better for Bread™ flour
3/4 cup semisweet chocolate chips
3 tablespoons sugar
1 tablespoon dry milk
3/4 teaspoon salt
1 1/2 teaspoons bread machine or quick active dry yeast
1/3 cup sliced almonds

Steps:

  • Measure carefully, placing all ingredients except almonds in bread machine pan in the order recommended by the manufacturer. Add almonds at the Raisin/Nut signal or 5 to 10 minutes before last kneading cycle ends.
  • Select Sweet or Basic/White cycle. Use Medium or Light crust color. Remove baked bread from pan, and cool on wire rack.

This bread is rich in butter, eggs and cardamon and full of golden raisins and almonds. I set my bread machine to "crust light".

1 1/2 teaspoons dry yeast
2 cups bread flour
1/2 teaspoon ground cardamom
3/4 teaspoon salt
4 teaspoons granulated sugar
2 tablespoons nonfat dry milk powder
1 teaspoon nonfat dry milk powder
2 teaspoons unsalted butter
1/2 cup water
1 teaspoon vanilla extract
1 large egg
1 teaspoon lemon juice
1/3 cup golden raisin
1/3 cup slivered almonds

Steps:

  • All ingredients must be at room temperature. Add ingredients in your bread machine owner's manual. (Mine says add liquids first).
  • Add fruit and nuts at the appropriate moment. (Mine beeps).
  • Set bread machine on basic bread making setting. Crust light.
  • If desired, dust bread with confectioners' sugar after bread has cooled.

1 teaspoon salt
2 tablespoons almond milk
1 cup almond flour
1 cup soy flour
1 cup wheat gluten flour
2 tablespoons artificial sweetener (see instructions)
2 teaspoons bread machine yeast

Steps:

  • Place room temperature water and wet ingredients into bread machine.
  • Add flour and dry ingredients on top (if you are doing a delayed start, place yeast on top of the flour.
  • Use 2 tbs sugar (will be consumed by the yeast), alternatively, 2 tbs of splenda.
  • Bake bread using white cycle, 1.5 lb loaf, medium crust.

1 cup raisins
1 ½ cups water
4 teaspoons butter
1 egg
1 cup white sugar
2 ¾ cups all-purpose flour
2 teaspoons baking soda
½ teaspoon salt
1 cup almond paste, grated
1 cup walnuts

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease 2 loaf pans.
  • Combine the raisins and water in a small saucepan over medium heat; bring to a simmer and cook until the raisins plump, about 4 minutes. Add the butter and cook until the butter melts into the liquid. Remove from heat and set aside to cool.
  • Beat the egg and sugar together in a large bowl until the sugar dissolves into the mixture. Sift the flour, baking soda, and salt together in a separate bowl; stir in batches into the egg mixture along with the cooled raisin mixture, alternating small amounts of each as you stir. Mix the almond paste and walnuts into the mixture. Pour about half of the resulting batter into each loaf pan.
  • Bake in the preheated oven until the top springs back when pressed, about 1 hour.
