1 (1 ounce) package dry Ranch-style dressing mix
2 ½ tablespoons vegetable oil
1 pound tilapia fillets
2 teaspoons butter

Steps:

  • Place the bread crumbs in a bowl. In a shallow dish, mix the dressing mix and oil to form a paste. Coat the tilapia fillets with the paste, then dredge in the bread crumbs to lightly coat.
  • Melt the butter in a skillet over medium heat. Place the fillets in the skillet, and cook 5 minutes on each side, or until golden brown and easily flaked with a fork.

1 pinch salt
ground pepper to taste
2 tbsp white flour (all purpose)
1 eggs size large
2 tbsp bread crumbs
1 tbsp olive oil
1/2 lemons

Steps:

  • Pat-dry the fish fillets then cut each fillet into 2 pieces lengthwise (since the fillet is uneven in thickness, this operation ensures uniform cooking).
  • Season with salt and pepper.
  • Prepare 3 shallow dishes: one for the flour, one for the egg, and one for the bread crumbs.
  • Beat the egg lightly.
  • Dip one fish piece at the time, first in the flour, then in the egg.
  • Let the excess egg drip off before coating the fish in the bread crumbs.
  • Turn the fish to coat both sides with bread crumbs.
  • Heat the oil in a skillet over medium heat.
  • Sauté the fish 3-5 min on each side, until the bread crumb coating becomes golden-coloured.

1/2 cup mayonnaise
1 tablespoon finely chopped fresh chives
2 teaspoons fresh lemon juice
Large pinch of cayenne pepper
1/2 cup all purpose flour
1 teaspoon salt
1/2 teaspoon coarsely ground black pepper
1 large egg
2 tablespoons milk
2 1/2 to 3 cups fresh breadcrumbs made from crustless French bread
4 5- to 6-ounce skinless thin fish fillets (such as flounder or petrale sole)
2 tablespoons (or more) butter
2 tablespoons (or more) olive oil

Steps:

  • Using on/off turns, chop bell pepper in processor until juices form. Transfer to small sieve set over bowl; let drain 10 minutes. Mix next 4 ingredients in small bowl. Stir in 1/2 cup bell pepper. Season mayonnaise with salt and pepper. DO AHEAD: Can be made 1 day ahead. Cover and chill.

2 pollock fillets, fresh or frozen
1/2 cup plain breadcrumbs
2/3 teaspoon salt
3/4 teaspoon black pepper
1 teaspoon garlic powder
3/4 teaspoon rubbed sage
1 teaspoon unsalted butter, divided

Steps:

  • If your fillets are frozen, thaw in advance.
  • When your fillets are ready to prepare, preheat your oven to 350F degrees and lightly grease a shallow pan.
  • Melt your butter, and set aside.
  • Take a large plate (NOT PAPER) and pour breadcrumbs on to plate.
  • Add spices to breadcrumbs and mix through with your fingers.
  • Add butter to breadcrumbs and mix through with fingers again.
  • Melt the other 1/2 teaspoon butter.
  • Take melted butter (allow to cool a little so you do not burn your fingers!!!) and lightly spread over the fillet and then roll fillet in breadcrumbs.
  • Pat breadcrumbs into both sides of the fillet over and over again until nicely coated.

8 small fillets of sole, flounder or fluke, about 1 1/2 pounds
1 egg
Salt and freshly ground pepper to taste
3 tablespoons water
1 tablespoon plus 1/3 cup peanut, vegetable or corn oil
1/2 cup flour
3 cups fresh bread crumbs
3 tablespoons butter
Juice of 1 lemon

Steps:

  • Put the fillets on a flat surface. There may be a small bone line running partly down the center of each fillet. If so, cut on both sides and discard it.
  • Beat the egg, salt, pepper, water and one tablespoon of oil in a flat dish.
  • Put the flour in a flat dish and toss the fillets in it. Shake off excess.
  • Put bread crumbs in a flat dish.
  • Dip the floured fillets, one at a time, in the egg mixture to coat well. Dip them on both sides in the bread crumbs and pat lightly to make the crumbs adhere.
  • Heat the remaining one-third cup of oil in a heavy skillet and add enough breaded fillets to make one layer without crowding. Cook until golden brown on one side, about one and one-half to two minutes. Turn and cook about one and one-half minutes on the second side. The cooking times will depend on the thickness of the fish. It may be necessary to add more oil if it disappears. As the fillets are cooked transfer them to a warm serving platter. Continue cooking until all the fillets are done.
  • Pour off the oil from the skillet and wipe it out with paper towels.
  • Put the butter in the skillet and swirl it around over high heat until it starts to foam. Continue cooking until it starts to become hazelnut brown. Pour this over the fish. Sprinkle the fish with the lemon juice and serve.
