KETO ITALIAN BREADSTICKS RECIPE
Keto Italian Breadsticks Recipe made with fathead dough and mixture of herbs are simple, easy cheesy and fluffy replacement for your snack. - Preheat the oven to 350F or 218C.
- Shred mozzarella and place it into the nonstick pot. Heat it up and while mixing it slowly with a spatula, make sure all of the mozzarella is fully melted.
- Once your mozzarella is fully melted, add butter and cream cheese and combine together while still hot.
- Switch of the heat and slowly one by one add all of the other ingredients. Keep mixing best with a plastic spatula and make sure all of the ingredients are fully combined into one dough.
- Add Eggs and combine fully until you get a perfect consistenc for working with dough
- Separate the fathead dough into 8 pieces. Take each piece and with your hand roll it into small buns. In this step, you can still work each of the bun into a more smooth consistency for you to be able to roll the breadstics easier.
- Let it sit for 15-30 minutes.
- Prepare your baking sheet covered with either a parchment paper or a silicone sheet.
- Once all prepared, roll each of the bun into a log and place it onto a baking sheet.
- Season it with extra Italian herbs and corse salt.
- Bake for 15 Minutes and enjoy.

CHEESY LOW CARB GARLIC BREAD STICKS
These cheesy garlic bread sticks are a low carb and gluten free copycat of Little Caesars Crazy Bread. So good, you can serve them those not on low carb.

- Preheat oven to 400°F.
- In a large bowl, whisk together almond flour, whey protein, coconut flour, baking powder, garlic powder, salt and xanthan gum.
- In large bowl, melt mozzarella cheese in microwave (for my 900 watt oven it took about 2 minutes at 40% power)
- Stir eggs, butter, and dry mix into mozzarella until dough forms. If cheese begins to harden, you may need to microwave dough ball 5-10 seconds at high to get all ingredients incorporated into dough. Add additional almond flour as needed if dough is too sticky.
- Place dough ball between two large sheets of parchment paper.
- Using rolling pin, roll dough out to a circle about 1/4 inch thick.
- Peel off top piece of parchment paper.
- Place dough (still on parchment paper) onto baking sheet
- Using a pizza cutter or knife, cut dough into stick size pieces.
- Mix all topping ingredients together and spread onto sliced dough.
- Bake for 10-15 minutes or until top begins to brown.
- Remove from oven. Serve warm.

- Add mozzarella and cream cheese to a large microwave-safe bowl. Cover the cream cheese with mozzarella (this will prevent the cream cheese from overheating and making a mess in your microwave). Melt in the microwave at 30 second intervals. After each 30 seconds, stir cheese until cheese is completely melted and uniform and resembles a dough in appearance (see photo for reference). This should only take around 1 minute total cooking time. Do not try to microwave the full time at once because some of the cheese will overcook. You can also melt the cheeses over the stove in a double boiler.
- Allow cheese dough to cool slightly (only a few minutes) so that it is still warm to the touch but not too hot. If the cheese is too hot it will cook the eggs. But don't let the cheese cool down completely because then it will turn hard and you will not be able to blend it with the other dough ingredients.
