I couldn't find this recipe on Recipezaar - I was surprised because it's become a family favorite for our Easter brunch every year.

16 ounces breakfast sausage, bulk
2 tablespoons all-purpose flour
1 1/2 cups milk (do not use skim or fat free)
16 ounces frozen hash brown potatoes
4 green onions, finely chopped
2 teaspoons fresh parsley
2 teaspoons rosemary
1 1/4 cups sharp cheddar cheese, grated

Steps:

  • Preheat oven to 350°F Butter 8x8x2-inch glass baking dish.
  • Cook sausage in heavy large skillet over medium-high heat until brown, breaking into small pieces with back of spoon, about 5 minutes. Mix in flour, then milk. Cook until mixture thickens and comes to boil, stirring occasionally, about 5 minutes.
  • Layer potatoes in prepared dish. Top with 1/3 of green onions, 1 cup cheese, 1/3 of green onions, sausage mixture, sprinkle the herbs on top, and the remaining 1/4 cup cheese. Bake casserole until potatoes are tender, about 45 minutes. Sprinkle with remaining green onions and serve.

8 large eggs ((room temperature))
1 1/3 cups milk
1 tsp salt
1/2 tsp ground black pepper
1/4 tsp garlic powder
1/4 tsp onion powder
20 oz hash browns ((fresh or thawed))
2 cups cheddar cheese ((grated - reserve 1/2 cup for topping the casserole))
1/2 small yellow onion ((optional, diced))
1/2 large red bell pepper ((optional, diced))
1/2 large green bell pepper ((optional, diced))

Steps:

  • Preheat your oven to 350°F (175°C) and lightly grease or spray a 9x13 baking dish with non-stick cooking spray.
  • Brown and crumble the sausage in a skillet over medium-high heat then drain the fat.
  • In a medium mixing bowl combine the eggs, milk, and seasoning (salt, pepper, garlic powder, and onion powder).
  • Layer the hash browns, cooked sausage, optional ingredients (red or green bell peppers and/or onions) plus 1 1/2 cups of grated cheddar cheese then pour the egg mixture over the ingredients. Mix to combine if desired, then top with remaining 1/2 cup of shredded cheese.

You might need to cook it a little longer if its cold from the fridge. This is also great if you add a little onion.

1/2 loaf of sliced white loaf bread
1 pound fresh bulk pork sausage with sage
10 ounces sharp Cheddar, grated
2 cups half-and-half
1 teaspoon dry mustard
1 teaspoon salt
5 large eggs, lightly beaten

Steps:

  • Cut the bread into 1-inch cubes and spread in the bottom of a greased 9- by 13- by 2- inch casserole dish.
  • In a medium skillet, brown the sausage over medium heat until fully cooked and no longer pink. Remove the sausage with a slotted spoon to drain the fat. Spread the cooked sausage over the bread and top with the cheese. Then stir together the, half-and-half, dry mustard, salt and eggs. Pour this mixture over the cheese. Cover the casserole with aluminum foil and refrigerate for 8 hours or overnight.
  • The next day, preheat the oven to 350 degrees F.
  • Bake the covered casserole until set and slightly golden, about 50 minutes. Remove from the oven and allow the casserole to set for 15 minutes before serving.

1 lb Italian sausage (I used hot and spicy)
1 medium white onion, peeled and diced
3 garlic cloves, minced
1 red bell pepper, cored and diced
6 eggs
1/3 cup milk
20 ounces frozen hash browns, thawed
2 cups shredded cheddar cheese or 2 cups mozzarella cheese
1/4 teaspoon fresh ground black pepper
thinly sliced green onion, to taste

Steps:

  • Heat oven to 375.
  • Add the sausage to a medium saute pan. Cook over medium-heat until browned, crumbling the sausage with a spoon as it cooks.
  • Remove sausage with a slotted spoon and transfer to a large mixing bowl.
  • Reserve about 1 tablespoon of sausage grease in the saute pan, discarding the rest.
  • Add the onion and red pepper to the saute pan and saute for 5 minutes until cooked.
  • Add the garlic and saute for an additional 2 minutes or until fragrant.
  • Pour the vegetable mixture into the mixing bowl with the sausage. Add the hash browns and 1 1/2 cups cheese to the mixing bowl with the sausage and vegetables. Stir to combine.
  • In a separate bowl, whisk together the eggs, milk, and black pepper until combined.

½ cup sour cream
¼ cup milk
1 ½ tablespoons salt
1 ½ tablespoons ground black pepper

1 green bell pepper, diced

Steps:
