Brians Favourite Prawn Curry image

A simple, quick and delicately spicy Prawn Curry, it is my husbands favourite. I recently served it with #195501 Rice Chile Verde by Engrossed, and that is the way Brian now wants this meal! Edited to add : thank you to Jan for pointing out that the cooking instructions for the prawns were WAY out! I've corrected this, sorry about that! :D

1 large onion, peeled and chopped
3 tablespoons olive oil or 3 tablespoons ghee
1 cinnamon stick (1 inch)
6 green cardamoms
6 cloves
1 bay leaf
1 teaspoon ginger paste
1 teaspoon garlic paste
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon salt
1 green pepper, seeded and chopped
1 1/2 cups canned tomatoes, crushed
450 g prawns, peeled
2 green chilies, chopped
2 sprigs fresh coriander, chopped

Steps:

  • Fry onion in oil or ghee until just tender. (3 to 4 minutes).
  • Add cinnamon stick, cardamoms, cloves and bay leaf.
  • Fry for one minute and then add ginger and garlic pastes.
  • Add chilli, cumin, coriander and salt. Fry for half a minute.
  • Add chopped green pepper and tomatoes, then bring to boil.
  • Turn down heat and simmer for 10 - 15 minutes.
  • Add prawns and let them 'poach' in the sauce for three minutes or so, or until done.
  • Add chopped green coriander leaves and chopped chillies.
  • Serve with rice.

This prawn (shrimp) curry with okra is a staple of Goan cooking. It is served hot over white rice.

½ pound medium shrimp, or more to taste
salt to taste
¾ cup freshly grated coconut
4 small Kashmiri chile peppers, seeded and chopped
3 cloves garlic
1 tablespoon coriander seeds
5 peppercorns
1 tablespoon vegetable oil
1 small onion, sliced
¼ teaspoon turmeric powder
1 ½ cups water
1 cup chopped okra
3 pieces kokum (wild mangosteen)

Steps:

  • Peel, devein, and rinse prawns. Rub with a generous amount of salt.
  • Combine coconut, chile peppers, garlic, coriander seeds, and peppercorns in a food processor and process to a paste (masala).
  • Heat oil in a saucepan. Add onion and saute until browned, about 5 minutes. Add masala along with turmeric powder and stir-fry for 1 minute. Add water and bring to a boil.
  • Add shrimp and okra. Cover and simmer until prawns and okra are cooked, about 5 minutes. Add kokum and turn up the heat to bring to a boil again.
  • Turn off heat and let it stand for a few minutes until curry has thickened.

1 kg raw deveined prawns
2 bunches spring onions, finely chopped
4 -5 garlic cloves, finely chopped (or to own taste)
4 -5 dashes Worcestershire sauce
50 g mulligatawny curry powder (spices of the orient brand)
1 -1 1/2 cup water
4 tablespoons olive oil

Steps:

  • Put oil in large pot on high heat.
  • When VERY hot, sauté onion and garlic, then ADD Worcestershire sauce.
  • Mix curry powder in approximately 1 cup of water; ad to onion mix. Reduce heat and let simmer for approximately 30 minutes, stirring so that mixture doesn't stick to pan. ADD prawns and more water if needed; let simmer until prawns are cooked.
  • SERVE HOT WITH HOT COOKED RICE.
