CHEF JOHN'S CHICKEN UNDER A BRICK
You should use a big cast iron pan for this, but it will also work in a high-quality, heavy-duty stainless steel pan, or other oven-proof skillet. The key is to heat it very well before the chicken goes in. Other than that, there's really no way to screw it up, unless you under or overcook it, which won't happen, since you're going to check it with the thermometer.

Steps:
- Preheat the oven to 425 degrees F (220 degrees C).
- Use kitchen shears to cut down both sides of the backbone. Remove backbone and discard. Cut through breastbone from the inside until chicken folds out like a book and lays flat.
- Season chicken all over with salt and black pepper, and sprinkle herbes de Provence on the inside. Let chicken sit for 20 to 30 minutes at room temperature; pat dry with paper towels. Brush skin-side of chicken with oil and season again with salt and black pepper.
- Heat an oven-proof cast iron skillet over high heat until very hot, about 5 minutes. Place chicken, skin-side down, in hot skillet and place bricks evenly on top to weigh down chicken.
- Roast chicken in the preheated oven for 25 minutes. Remove bricks, turn chicken over, and continue roasting until juices run clear and meat is no longer pink at the bone, 5 to 15 minutes more. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (74 degrees C).
- Preheat the oven's broiler and broil the chicken until skin is crispy and golden, 1 to 3 minutes.

- For dough, in a large bowl, combine 4 cups of flour, yeast, sugar and salt; mix well and set aside. , In a saucepan, heat water, milk and butter just until butter melts. Remove from heat and cool to 120°-130°. Combine with flour mixture; add eggs. Using an electric mixer, blend at low speed until moistened then beat at medium speed for 3 minutes. By hand, gradually stir in enough remaining flour to make a firm dough. , Knead on a floured surface about 10 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down; let rise again until almost doubled. , Meanwhile, for the filling, brown beef with onion, salt and pepper; drain. Mix together with cabbage; set aside. Divide the dough into fourths. Roll each piece into a 15x10-in. rectangle. Cut into 5-inch squares. Spoon 1/3 to 1/2 cup filling onto each square. Bring the four corners up over the filling; pinch together to seal. Repeat with remaining dough and filling. Place on greased baking sheets. , Bake at 375° for 30 minutes or until brown.

My dad made these for us when we were kids, and it's remained a family favorite. Several years ago I made it for friends from out of state, one of whom said it was incredible but heavy, hence the name "Bricks." If you're looking for traditional Tex-Mex, real enchiladas, this is not the recipe for you. Yes, it's a heart attack on a plate. But what a wonderful way to go...

- About the chili: Wolf Brand isn't available everywhere, but you can order it online, and it beats other brands by a mile. If you absolutely must use another brand, go with Hormel, a distant second.
- In small skillet, heat oil (about 1" deep so you can submerge tortillas is it later). In large skillet, brown meat.
- When meat is fully cooked, add 2 cans chili to it.
- Mix in picante & Worcestershire until well combined. Set aside.
- Preheat oven to 350°F.
- Using tongs, drop one corn tortilla in heated oil until softened (about 5-10 seconds).
- Remove from oil and place in 9x13 baking dish.
- Spoon generous amount of chili mixture down center of tortilla, top with cheddar, and roll it up. Place seam side down in baking dish.
- Repeat until dish is filled.
- Heat remaining can of chili and pour over top.
- Sprinkle remaining cheese on top and bake 20-25 minutes.
- Top with onion & serve.

- Preheat oven to 275 degrees. Butter five 5 3/4-by-3 1/4-inch loaf pans; set aside. Sift flour and salt into a bowl.
- Place butter in bowl of an electric mixer fitted with the paddle attachment. Beat on medium speed until light and fluffy, 3 to 5 minutes. Add sugar, and continue to beat until very light in color and fluffy, about 2 minutes more, occasionally scraping down the sides of the bowl with a spatula. Add vanilla. Add reserved flour mixture, and combine on low speed, scraping sides with spatula if necessary, until flour is just incorporated and dough sticks together when squeezed with fingers. Do not overmix.
- Divide dough evenly into prepared pans, spreading it about 1 1/4 inches thick. Smooth tops with fingers. Decorate by using a skewer to prick holes in the top to create a pattern or word. Bake until firm and just starting to color, about 2 hours. It may be necessary to re-prick the design in the loaf as soon as it comes out of the oven, to help keep holes uniform. Remove bricks from pans, transfer to a cooling rack, and let cool to room temperature. Slice to serve.
