1/2 cup Butter(softened).
1/4 cup Vegetable Shortening(softened).
1 3/4 cups Bakers Sugar.
3 1/2 cups Cake Flour(sifted).
3 1/2 tsp.Baking Powder(sifted).
1/2 cup Milk.
1/2 cup Water.
2 tsp. Vanilla.
1 tsp.Salt.
4 Egg Whites(beaten).
2 8" Cake Pans(greased and floured).
ICING:
3 oz. Cream Cheese(softened).
1/4 cup Butter(softened).
1/3 cup Melted Caramels(old original recipe;or(present day) you could use ice cream caramel topping).
4 cups Powdered Sugar(divided and sifted).

Steps:

  • Preheat oven to 350 degrees. With a electric mixer, mix butter,shorting and sugar together until it is smooth.Sift the flour and baking powder together and slowly add to the butter mixture and blend.Add the milk,water,vanilla and salt and mix it all together.In another mixing bowl beat the egg whites until they are stiffly beaten.Add the egg whites to the mixing bowl with the first 9 ingredients and gently fold it all together.Place the cake batter into the cake pans(fill each to 2/3 full). Bake for 50 minutes or until done. When the cakes are done take out of the cake pans and put them on a cooling rack and cool. Make the Icing. With a mixer beat the cream cheese and butter until it is fluffy.Add the caramel and mix together.Gradually add 2 cups of sugar and mix together and then add the other 2 cups of sugar until it is all blended together. Place one cake on a cake dish and place icing on top of the cake.Place the other cake on top of the icing (the top of two layers).Use the rest of the icing for the top and sides of the cake.

I've made wedding cakes for 15 years. I use box mixes but created my own frosting recipe. It has a nice flavor, plus it pipes and sets up well. I used this frosting on the cake when our daughter, Delores, married cowboy Les Jensen.

35 cups confectioners' sugar (about 10 pounds), divided
2-1/2 cups milk, divided
10 teaspoons vanilla extract, divided
5 teaspoons almond extract, divided

Steps:

  • In a large bowl, cream 2 cups shortening. Gradually beat in 7 cups confectioners' sugar. Add 1/2 cup milk; beat until light and fluffy. Beat in 2 teaspoons vanilla and 1 teaspoon almond extract. Repeat four times. Store in the refrigerator. Bring to room temperature before decorating cake.

1 can (8.4 oz) Betty Crocker™ Cupcake Icing petal pink
White decorating decors, as desired
1 can (6.4 oz) Betty Crocker™ Easy Flow black decorating icing
1 can (6.4 oz) Betty Crocker™ Easy Flow white decorating icing
1 can (6.4 oz) Betty Crocker™ Easy Flow red decorating icing

Steps:

  • Heat oven to 350°F. Grease bottom of 2 (8-inch) heart-shaped foil pans. Make cake batter as directed on box. Pour into pans. Bake as directed on box for 2 (8-inch) rounds.
  • Cool 10 minutes. Run knife around sides of pans to loosen cakes; remove cakes to cooling racks. Cool completely, about 1 hour.
  • For bride cake, place 1 cake layer on serving plate. Frost cake with white cupcake icing, leaving V-shaped area at top of cake. Frost V-shaped area with pink cupcake icing. Pipe lace design on dress and V-shaped edge of dress with white cupcake icing, using writing tip. Use white decorating decors to make pearl necklace.
  • For groom cake, place remaining cake layer on another serving plate. Frost cake with black decorating icing, leaving V-shaped area at top of cake. Frost V-shaped area with white decorating icing. Pipe black buttons and lapels with black decorating icing. Pipe red bow tie on shirt with red decorating icing. Store loosely covered at room temperature.
