APPLE BRIE CROSTINIS RECIPE BY TASTY

Steps:
- Preheat the oven to 550°F (285°C), or as high as your oven will go. Line a baking sheet with parchment paper.
- Using a serrated knife, slice the baguette crosswise on a slight diagonal into ½-inch (1 cm) slices. Transfer the baguette slices to the prepared baking sheet.
- Top each piece of bread with 1-2 slices of Brie cheese.
- Bake for 5 minutes, or until Brie begins to bubble and the bread is toasted.
- Top each piece of bread with 1-2 apple slices and candied walnuts. Drizzle with honey.
- Enjoy!

Steps:
- Remove papery outer skin from garlic (do not peel or separate cloves). Cut tops off of garlic bulbs. Brush with 1 tablespoon oil. Wrap each bulb in heavy-duty foil. Bake at 425° for 30-35 minutes or until softened. Cool for 10-15 minutes., Meanwhile, in a large skillet over medium heat, cook and stir the onion, sugar, vinegar, salt and pepper in remaining oil for 15-20 minutes or until very tender and browned., Place bread on ungreased baking sheets. Broil 3-4 in. from the heat for 3-4 minutes or until edges are lightly browned. Squeeze softened garlic into a small bowl; mash with a fork. Spread over toast. Top with cheese and onion. Broil 3-4 in. from the heat for 2-3 minutes or until cheese is melted. Sprinkle with thyme if desired.

I make no apologies for the apparent simpleness of this. It make a quick easy brunch or light lunch. Serve with a dressed green salad. Cranberry jelly and mango chutney also work very well as variations.

CARAMELIZED APPLE AND ONION BRUSCHETTA WITH MELTED BRIE
I posted a Fresh Strawberry and Almond Baked Brie that I sometimes make a different way...with apples and walnuts. This gave me inspiration to come up with this Bruschetta recipe. It is great in the fall for dinner parties and other occasions.

Steps:
- Heat Olive Oil in a pan to medium high heat. Add Onions, seasoning with a pinch of salt. Cook until they begin to turn brown and caramelize. DO NOT BURN!
- Add apples, vinegar, and brown sugar. Reduce heat to medium. Saute until apples are cooked through and vinegar/brown sugar are absorbed.
- In the meantime, slice the brie into pieces that are similar in size to the baguette slices. Place one slice of cheese on each baguette slice. Broil for about 2-3 minutes, or until cheese melts and bread is crispy.
- Top each baguette slice with a spoonful of the caramelized apple/onion mixture. Serve warm.
- Idea! - This appetizer is great for a dinner party where pork is the main dish.
BRUSCHETTA WITH SWISS CHARD, PINE NUTS AND CURRANTS

- Place 1/4 cup currants in small bowl. Add enough warm water to cover currants. Soak 20 minutes. Drain well. Preheat oven to 450°F. Heat 3 tablespoons oil in heavy large pot over medium heat. Add garlic and sauté until fragrant and pale golden, about 1 minute. Add Swiss chard. Sauté until chard is wilted and tender, about 5 minutes. Mix in pine nuts and currants. Season mixture to taste with salt and pepper. Remove from heat.
- Arrange bread in single layer on baking sheet. Bake bread until golden, about 5 minutes. Brush remaining 1 tablespoon oil over bread slices. Top with warm chard mixture, dividing equally. Arrange on platter and serve.
BRIE, APPLE & CURRANT BRUSCHETTA
Steps:
- Combine apple, currants, sugar, and lemon juice in a bowl and allow to marinate for about five minutes. Cut brie into thin slices and place on bread, then toast in oven until just melted. Top with apple mixture and sprinkle with cinnamon.
