Crispy, salty, creamy and sweet all in one bite. The savory tastes and textures of these bacon wrapped stuffed figs are a delight to the tastebuds.

16 slices thin-cut bacon
8 firm, ripe fresh figs, halved lengthwise
2 tablespoons fresh thyme leaves or 16 small sprigs
6 ounces creamy blue cheese, cut into small cubes
1/3 cup honey, warmed in microwave
Flaky salt, such as Maldon, for sprinkling

Steps:

  • Preheat the broiler and set oven rack in top position. Place parchment paper or aluminum foil on a rimmed baking sheet. Set a wire rack over the baking sheet.
  • Add the bacon slices to a large skillet set over medium heat. Fry the bacon just until the fat has been released and the bacon is partially cooked. Do not fry crisp, the bacon should be flexible. Transfer the bacon to a paper towel-lined plate to drain and cool.
  • Using a small appetizer spoon or the tip of a paring knife, push aside the pulp in the center of each halved fig to create a small hollow area. Drop a few thyme leaves or a thyme sprig into each hollowed fig half and place a piece of blue cheese on top. Press the cheese down slightly into the fig.
  • Wrap a strip of bacon around each filled fig half. Secure with toothpicks and trim off the excess bacon. Place on the wire rack of the prepared baking sheet.
  • Brush the warm honey over the top of each bacon-wrapped fig. Broil until the bacon gets crisp and brown, about 4 minutes. Sprinkle lightly with coarse sea salt and serve warm or room temperature

Our version of the retro hors d'oeuvre rumaki - bacon-wrapped water chestnuts and chicken liver - substitutes figs, goat cheese and pesto for a fruity, tangy twist. Consider it rumaki 2.0.

24 dried figs (about 10 ounces)
3 ounces fresh goat cheese, at room temperature
1 tablespoon prepared pesto
1 tablespoon fresh lemon juice, plus 1 teaspoon lemon zest
Kosher salt and freshly ground black pepper
12 slices bacon, halved crosswise

Steps:

  • Position an oven rack in the center of the oven, and preheat the broiler. Slice the figs about 3/4 of the way down the center lengthwise, and open each like a book; set aside.
  • Combine the goat cheese, pesto, lemon juice and zest and 1/4 teaspoon each salt and pepper in a small bowl with a rubber spatula. Fill each fig with about 1 teaspoon of the cheese-pesto mixture.
  • Wrap each stuffed fig with a slice of bacon, and secure with a toothpick. Put the figs, seam-side down, on a rimmed baking sheet.
  • Broil, turning once, until the bacon is cooked through and crispy, about 4 to 5 minutes per side.

Fresh figs are fabulous when in season and the possibilities are endless from appetizers to main entrées to desserts. Featured is an easy appetizer that has great presentation! Brie is being used, but it can be made with fresh goat cheese too. A muffin pan was used to maintain the shape of the fig once wrapped with the bacon slice. The garnish is optional. Even though only 3 figs are being used, you can easily adjust the ingredient amounts to accommodate 1 or many.

Figs:
3 fresh figs
3 small pieces of brie cheese, skin removed about a teaspoon
3 slices of bacon
Drizzle of an aged balsamic vinegar try Sonoma Farm brand sweet aged balsamic vinegar
Garnish (optional):
Champagne grapes
Mint sprigs

Steps:

  • Figs need to be handled with a gentle touch, so that word will be used frequently. Gently rinse and drain figs. Gently slice the top off of each fig and set aside. Using a small knife gently create a very small opening in each of the figs to insert a small piece of the brie cheese. You will not need to remove any of the inside of the figs, because the fig is very soft inside and by moving the insides around a bit with the knife you will make a little cavity that can easily be filled. Fill each fig with about 1/2 of a teaspoon to 1 teaspoon of brie cheese depending on the size of your fig. Wrap each fig with a slice of bacon and place entire wrapped fig into a muffin tin. Once all figs are wrapped and placed into the muffin tins, bake in a preheated oven at 350 degrees for 20 minutes. Check at that point to see if the cheese is beginning to brown, then place lid of the fig on top and continue the baking process. Bake an additional 10 minutes until bacon is crisp. Once bacon is crisp, remove and drizzle with an aged balsamic vinegar and garnish with mint and or champagne grapes.

This has a been a hit every time I have served it. Is a great appetizer for the holidays or when figs are in season.

½ cup brown sugar
2 tablespoons water
6 fresh figs, stemmed and quartered
1 (14 ounce) round 4 1/4-inch diameter round Brie cheese
½ cup toasted almonds
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 325 degrees F (165 C).
  • Heat brown sugar and water in a small saucepan over medium heat until sugar is completely dissolved. Add figs and vanilla, and cook until softened, about 10 minutes. Stir in almonds and vanilla. Place brie wheel in a baking dish, and pour fig mixture over the top.
  • Bake in the preheated oven for 10 to 15 minutes, or until softened but not melted. Serve with water crackers.

Goat Cheese-Stuffed Figs Wrapped in Bacon image

This is another of the recipes that disappeared so quickly that I didn't get to take a photo of them....they are that good!! They have a little bit of sweet from the fig, some tang from the cheese, and salt from the bacon. A great balance of flavors! The aged goat cheese called for in this recipe is firmer than fresh and has a dry rind. Two of the kinds that work best in this dish are Bucheron and Pouligny-St. Pierre, both have just the right amount of tang.

Number Of Ingredients 8

8 slices bacon
8 figs, firm and ripe, trimmed and halved lengthwise
1/4 lb aged goat cheese
3 tablespoons light brown sugar, packed
1/2 teaspoon ground cumin
1/2 teaspoon kosher salt
1 teaspoon lemon juice, fresh and to taste
1 1/2 tablespoons olive oil

Steps:

  • Preheat broiler.
  • Cook bacon in a large heavy skillet over medium heat, turning occasionally, until most of the fat is rendered but bacon is still pliable, about 10 minute You do not want crispy bacon!
  • Transfer the bacon to a paper towel to drain.
  • Remove 1 scoop of flesh from each of the fig halves with the small end of a melon-baller, set aside for another use. (Makes great ice cream or just bite sized snacks).
  • Scoop out a piece of the goat cheese with the same meon-baller and fill in the hole in each fig half with the cheese scoop.
  • Stir together brown sugar, cumin, and salt in a small bowl.
  • Rub the mixture onto 1 side of each bacon slice, and cut each bacon slice in half to have 16 slices of bacon.
  • Wrap 1 of the half strips of bacon around 1 of the fig halves, leaving the sugar/spice side out, and secure with a toothpick.
  • Broil the figs, cut side up, on the rack of a broiler pan about 3 inches from the heat, until bacon is browned - about 2 minute.
  • Cool slightly and then discard toothpicks.
  • Serve warm.
