2 tablespoons water
3-1/2 teaspoons cornstarch
1/4 teaspoon garlic powder

1 cup whole milk

1/2 teaspoon Worcestershire sauce

Steps:

  • Place the broccoli and water in a microwave-safe bowl. Cover and microwave on high for 3-5 minutes or until tender., Meanwhile, in a small saucepan, whisk the cornstarch, seasonings and milk until smooth. Bring to a boil over medium heat; cook and stir for 1-2 minutes or until thickened. Stir in the cheddar cheese and Worcestershire sauce until cheese is melted. 1 tablespoon cornstarch
1/8 teaspoon salt

  • Preheat oven to 350°. Place 1 in. of water and broccoli in a small saucepan; bring to a boil. Steps:

  • Place broccoli in boiling water and add salt. Cook until tender. Drain well or it will turn your sauce into a soup.

3 pounds broccoli, cut into florets, stems discarded or saved for another use
Kosher salt and freshly ground black pepper
Cheddar Cheese Sauce, recipe follows
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups whole milk
Kosher salt and freshly ground black pepper
1 cup grated sharp Cheddar

Steps:

  • Fill a medium saucepan with 1 inch of water and place a steamer inside. Bring the water to a boil, place the broccoli in the steamer, reduce the heat to medium, cover and steam until tender and bright green, about 5 minutes.
  • Transfer the broccoli to a bowl and sprinkle lightly with salt and pepper. Top the broccoli with the Cheddar Cheese Sauce, or serve it on the side.
  • Melt the butter in a medium saucepan over medium heat until foamy. Spoon the flour over the butter and cook, while stirring, until the flour becomes pasty. Pour in the milk while whisking and season with salt and pepper. Bring to a boil, reduce the heat to a medium simmer and cook for 5 to 8 minutes. Slowly add the cheese by handfuls and stir with a wooden spoon until melted and smooth.

This is a great casserole that I threw together one day when a friend requested Broccoli au Gratin for her birthday dinner. This is a great idea for those who aren't big fans of bread crumbs. Also, the eggs can be taken out for a great sauce and using skim milk and fat-free cheese works well, too. It's basically a great recipe that can be easily altered according to taste. Enjoy!

8 cups fresh broccoli
½ cup butter
2 tablespoons all-purpose flour
1 small onion, chopped
1 ¼ cups milk
salt and pepper to taste
4 cups shredded Swiss cheese
2 eggs, beaten

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain.
  • Melt butter in a medium saucepan over medium heat and add flour; cook until bubbly. Stir in onion and gradually add milk, stirring well. Bring to a boil and cook for 1 minute. 2 (16 ounce) packages frozen chopped broccoli
2 (11 ounce) cans condensed cream of Cheddar cheese soup
2 (10.75 ounce) cans condensed cream of chicken soup
2 cups seasoned croutons

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Cook broccoli in boiling salted water until tender.
  • Mix cheese and chicken soups in a large bowl. Add 2 cups of croutons; blend together well. Drain broccoli.
  • In a 15x10x2 inch baking pan, place half the cooked broccoli in a layer. Spoon half the soup mixture over the broccoli. Finish with a second layer of broccoli and top vegetable with remaining soup mix. Cover with aluminum foil.

5 tablespoons cornstarch
2 teaspoons curry powder
1 teaspoon kosher salt
2 cups skim milk
3 dashes hot red-pepper sauce
1 1/4 cups grated part-skim mozzarella (about 5 3/4 ounces)
1 pound cooked broccoli florets and stems (see Micro Tip)

Steps:

  • Mix cornstarch, curry powder and salt in a 2 1/2-quart souffle dish. Pour in a little of the milk and stir until cornstarch is completely dissolved. Stir in remaining milk. Cover tightly with lid or microwave plastic wrap. Cook at 100 percent power in a 650- to 700-watt oven for 4 minutes. Prick plastic to release steam.
  • Remove from oven and uncover. Scrape corners and bottom of dish with a wooden spoon. Whisk well to dissolve any lumps. Cover, return to oven and cook for 3 minutes. Prick plastic to release steam.
  • Remove from oven and uncover. Whisk in red pepper sauce and 1 cup of the cheese.
  • Scrape sauce into a large bowl. Stir in broccoli. Put mixture in an oval dish, 13 by 9 by 2 inches. Cook, covered with plastic, for 5 minutes. Prick plastic to release steam. Uncover and stir. Re-cover and cook for 7 minutes. Prick plastic. While broccoli is cooking, preheat broiler.
  • Remove dish from oven and uncover. Sprinkle with remaining cheese. Run a small knife around the inside edge of the dish to prevent sticking. Put dish under broiler until cheese browns, about 6 minutes. Remove from oven and serve warm.

3 -4 tablespoons butter
1 medium onion, chopped
2 (8 ounce) cans sliced water chestnuts
salt and pepper
1 (2 ounce) jar diced pimentos, drained (can use 2 jars if desired)
2 cups grated old cheddar cheese, shredded (can use more or less)
6 tablespoons butter
6 tablespoons flour
3 cups half-and-half cream
1 pinch salt
1/8 teaspoon cayenne pepper
1 cup old cheddar cheese, shredded
2 large eggs

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch baking dish.
  • Boil or steam the broccoli florets in a small amount of water until just fork tender; drain very well (this can be done hours or up to 1 day in advance).
  • In a skillet melt butter over medium heat; add in the onion and saute for about 6-7 minutes or until very soft.
  • Place the cooked broccoli, onion, water chestnuts and pimientos; mix to combine and season with salt and pepper; set aside while preparing the cheese sauce.
  • For the cheese sauce; melt butter in a heavy saucepan over medium heat.
  • Whisk in flour until smooth.
  • Gradually whisk in half and half cream and cayenne; bring to a boil whisking constantly for about 1 minute.
  • Remove from heat and add in the cheddar cheese; stir until melted and smooth.
  • In a bowl beat the eggs with a fork until thick and pale.
  • Gradually stir about one-forth of the hot cheese/cream mixture into the eggs; add egg mixture to the remaining hot cheese mixture stirring constantly.
  • Pour the cheese sauce into the broccoli mixture in the bowl; stir with a wooden spoon to combine thoroughly.
  • Season with more black pepper if desired.
  • Spoon the mixture into prepared baking dish.
  • Bake uncovered for about 15 minutes.
  • Remove from oven and sprinkle with grated cheddar cheese; return to oven and bake for another 30-35 minutes more.
  • Let stand for 10-15 minutes before serving.
  • Delicious!

Use white or orange Cheddar or a mix of the 2, aiming for a range of 4 to 5 cups, based on how rich and cheesy you'd like it. And while this does contain a lot of broccoli, you'll probably want to serve a salad on the side.

Kosher salt
3 to 4 large heads broccoli (about 3 1/2 pounds), trimmed of long stalks and cut into small florets
1 1/2 teaspoons red-pepper flakes
2 bunches scallions
1/2 teaspoon black pepper
3/4 cup all-purpose flour
4 1/2 cups whole milk
5 cups shredded sharp Cheddar cheese
3 cups cooked long-grain white rice
2 cups coarsely crushed Ritz crackers

Steps:

  • Heat the oven to 350 degrees and butter a deep 9-by-13-inch baking dish.
  • Bring a large pot of salted water to a boil. Add the broccoli florets and cook for 2 to 3 minutes, until bright green. Drain immediately and set aside.
  • In a large heavy-bottomed pot, melt the butter with 1 teaspoon red-pepper flakes over medium heat. When melted, add the scallions, 1 teaspoon salt and the black pepper, and cook until scallions have softened, 3 to 4 minutes. Add the flour and stir to combine. Stir constantly for 1 to 2 minutes, until the flour streaks are slightly golden in color, then add the milk in a slow stream, stirring continuously.
