My mom used to make this easy recipe every Thanksgiving when I was little. We kids could never get enough! It was our very favorite Thanksgiving vegetable. If you have children, or have some coming to visit you as guests this Thanksgiving, I guarantee that they will eat (and enjoy) this veggie dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

1 (10.75 ounce) can condensed cream of mushroom soup
1 cup mayonnaise
1 egg, beaten
¼ cup onions, chopped
3 (10 ounce) packages frozen chopped broccoli
8 ounces shredded sharp Cheddar cheese
salt and pepper to taste
1 dash paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
  • In a medium mixing bowl, whisk together condensed soup, mayonnaise, egg and onions.
  • Place frozen broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this recipe thoroughly.) Break up the frozen broccoli. Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli, and mix well. Sprinkle on cheese, and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. Season with salt, pepper and paprika.
  • Bake for 45 minutes to 1 hour.

This is a recreation of a common broccoli-cheese dish I've seen on a couple of down-home restaurant menus...and it's a little on the weird side.

3 lb. Broccoli Cut Into Florets
2 lb. Velveeta
1/2 c. Milk
1/4 c. Heavy Cream
Salt And Black Pepper To Taste
1/4 tsp. Cayenne Pepper (more For More Spice)
1 tbsp. Dijon (optional)
3 whole (sleeves) Ritz Crackers

Steps:

  • Preheat oven to 350 degrees. Place crackers into a large ziploc bag and crush slightly, leaving some large chunks. Set aside.Plunge broccoli into boiling water and allow to boil for 1 minute. Strain and set aside.Cut Velveeta into chunks. Throw into a large pot with milk, cream, salt, pepper, and cayenne. Melt, stirring occasionally, until totally smooth. Stir in Dijon if using.Add broccoli to cheese sauce, then add half the cracker crumbs. Stir to combine, then pour mixture into a buttered 9 x 13 inch baking dish. Top with remaining cracker crumbs, then sprinkle the top generously with black pepper. Bake for 15 to 20 minutes, or until top is golden brown and casserole is bubbly.

2 pounds frozen broccoli florets or fresh blanched broccoli florets, drained
4 cups crumbled crackers (recommended: Ritz crackers)
1 teaspoon freshly chopped thyme leaves
1 teaspoon freshly chopped oregano leaves
2 tablespoons smoked paprika
1 teaspoon cayenne
1 tablespoon black pepper
1 stick melted butter
1 pound Velveeta cheese, cubed small
1 pound Camembert, sliced thin
Nonstick cooking spray

Steps:

  • Preheat oven 450 degrees F.
  • In a large stock pot of boiling salted water, blanch broccoli florets for 3 minutes. Remove from water and shock in a large bowl of ice water. Remove from ice water and drain on a paper towel lined platter. Set aside.
  • Using a plastic bag, crush crackers. Add the thyme, oregano, paprika, cayenne, pepper and melted butter until well combined. Set aside.
  • In a large casserole dish lightly greased with butter add broccoli and cheeses. Pour cracker topping on top of cheese and broccoli. Wrap with foil and bake for 15 to 20 minutes in oven.
  • Remove from oven. Take foil off and allow to rest for 5 minutes before serving.

For the longest time, my mum would make this amazing broccoli casserole. It is more like a crustless quiche, but has converted many broccoli haters into broccoli lovers! I have not ever tweaked this recipe - not even to add minced garlic, sauteed onion, pimento, etc; it's too simple and delicious on its own to need tweaking. This can be made ahead and refrigerated before cooking. It freezes well and can be thawed prior to cooking.

1 head broccoli, chopped
2 teaspoons vegetable oil, or as needed
1 (16 ounce) container cottage cheese
3 eggs

  • Fill a large bowl with ice water to create an ice bath.

1 1/2 cups milk
1 1/2 tablespoons ketchup
1 1/2 teaspoons Worcestershire sauce
1 teaspoon salt
1 teaspoon sugar

Pinch cayenne pepper
5 ounces cream cheese, cut into pats
5 tablespoons crumbled blue cheese

Steps:

  • Preheat the oven to 350 degrees F. Grease a 2-quart baking dish with butter or nonstick cooking spray.
  • In a bowl, mix the crushed crackers, Parmesan and melted butter. Place the broccoli in the baking dish.
  • In a pot, melt the remaining 3 tablespoons butter. Add the flour and stir together. Continue to stir while cooking for about 3 minutes. Whisk in the milk, stir to break up the flour, and heat the mixture to a soft boil, stirring constantly. Once the milk thickens, add the ketchup, Worcestershire, salt, sugar, pepper and cayenne. 1 cup mayonnaise or miracle whip (we prefer mayo) Could also substitute Greek yogurt or sour cream.
1/4 cup of butter melted (1/2 stick)
2 large eggs, slightly beaten
1/2 medium onion finely chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups extra sharp cheddar cheese
1/2 sleeve of Ritz crackers, crushed

Steps:

  • Preheat oven to 350*F
  • Place broccoli in a steaming basket on stove and steam for 5 minutes or until broccoli is tender to a fork.
