GARLIC OIL SAUTEED PASTA WITH BROCCOLI



Garlic Oil Sauteed Pasta with Broccoli image

1/3 cup extra-virgin olive oil
2 cloves garlic, smashed
1/4 teaspoon red pepper flakes
1/4 head broccoli, sliced into very thin florets, stalk peeled and cut into matchsticks
Kosher salt and freshly ground black pepper
2 tablespoons red wine vinegar
Few tablespoons water or pasta cooking water, if needed
2 cups penne pasta, cooked al dente
Parmesan cheese, for garnish

Steps:

  • In a large saute pan, heat the olive oil, garlic, and pepper flakes over medium heat until fragrant. Once the garlic has turned golden in color, remove it from the pan. You are left with garlic-infused oil in the pan. Add the broccoli to the pan.
  • Cook's Note: Be sure the broccoli is completely dry before tossing it into the pan.
  • Toss the broccoli to coat with the oil. Season with salt and pepper and saute over medium heat until the broccoli barely loses some of its crunch, about 5 minutes. Turn the heat up to high and deglaze the pan with the red wine vinegar. Add a few tablespoons of water, if needed.
  • Cook's Note: Use pasta water if the pasta was made fresh.
  • Add in the pasta and toss to coat with the oil. Top with Parmesan cheese for serving.

BROCCOLI WITH GARLIC AND SOY SAUCE

1 head garlic, peeled (about 16 cloves)
1 cup good olive oil
1 teaspoon crushed red pepper flakes
1 teaspoon kosher salt
4 stalks broccoli, cut into florets (8 cups of florets)
2 tablespoons soy sauce

Steps:

  • Put the garlic cloves and oil in a small heavy-bottomed saucepan. Bring to a boil and cook uncovered over low heat for 10 to 15 minutes, until the garlic is browned and tender. Turn off the heat and add the red pepper flakes and 1/2 teaspoon salt. Immediately pour into a heat-proof container to stop the cooking. Allow to cool to room temperature.
  • For the salad, blanch the broccoli florets in a large pot of boiling salted water for 2 to 3 minutes, until crisp-tender. Drain well and immerse immediately into a large bowl of ice water until the broccoli is cooled. This process stops the cooking and sets the bright green color. Drain well.
  • In a large bowl, toss the broccoli with 1/2 teaspoon salt, 1/4 cup of the oil used to cook the garlic, the soy sauce, and 8 or more cloves of cooked garlic. Taste for seasonings and serve cold or at room temperature.

6 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
3 pounds broccoli, cut into spears
1 cup Frascati or other dry white wine
1 tablespoon hot red pepper flakes
Grated zest of 1 lemon
Grated zest of 1 orange

Steps:

  • 1. In a 10- to 12-inch sauté pan, heat the olive oil with the garlic over medium-high heat until just sizzling. Add the broccoli and cook, tossing frequently and gradually adding the wine to keep the garlic from browning until the stalks are tender 8 to 10 minutes. Add the red pepper flakes and zests, and tossing well, serve immediately.

1 lb broccoli floret
1 -2 tablespoon extra virgin olive oil
2 -4 garlic cloves, sliced thin
1/4-1/2 teaspoon crushed red pepper flakes, to taste
salt & freshly ground black pepper

Steps:

  • Steam broccoli over a pot of boiling water, or in a veggie steamer, for about 5 minutes.
  • Feel free to steam more or less, depending on how your family likes their veggies cooked.
  • Keep in mind that you will also be sautéing the broccoli in the next step.
  • In a large saute pan, heat olive oil over medium heat.
  • Add the garlic and saute for about 45 seconds to impart its flavors into the oil.
  • Before the garlic begins to brown, add the red pepper flakes and broccoli to the pan and cook for another 5 minutes, or until cooked to your liking.
  • Season with salt and pepper and serve.

I'm about to move so I'm posting all the recipes I have found written on scrap paper around my desk. I don't know where they're from or how long they take. I just don't want to lose them in the move.

1 1/2 lbs broccoli, cut in 1-inch florets and 1/4-inch stems
2 tablespoons extra virgin olive oil
3 garlic cloves, minced
1/2 cup water
1 tablespoon lemon juice
salt and pepper

Steps:

  • Heat olive oil in a skillet with a tight-fitting lid over medium heat; add garlic and stir until fragrant, about 3 minutes.
  • Stir in broccoli stems and cook 2 minutes; add florets and water and cover pan.
  • Cook covered 15 minutes; uncover the pan, turn heat up to high and cook just long enough to evaporate any liquid left in the bottom of the pan.
  • Sprinkle with lemon juice, salt and pepper, and serve.
  • ***The cook time in step 3 seems really long to me -- if you make this please let me know if it's right***.

  • Heat the olive oil in a 10" skillet over medium-low heat.

  • Remove from the skillet and serve.
