It's cocktail time and I've got a Strawberry Basil Mojito with your name on it! Fresh strawberries and a gentle basil flavor make this my favorite mojitos recipe. It's lightly sweetened and beautifully fragrant and perfect for a hot summer's day. It's also super easy to make a big batch for easy summer entertaining.

1 ounce white rum
1 ounce strawberry simple syrup (see ingredients below)
½ ounce fresh lemon juice
3 basil leaves
2 ounces soda water
Sliced strawberries and basil leaves (to garnish)
1 cup water
½ cup white sugar
5 strawberries (sliced)

Steps:

Add the rum, strawberry simple syrup, lemon juice, and basil leaves in a cocktail shaker or mason jar filled with ice. Shake then pour into a glass.
Top the glass with soda water and garnish with strawberries and basil.

We're right in the middle of bountiful strawberry season. We eat strawberries on everything in the summer, don't you? Did you know that most strawberry farmers have to use organic growing conditions ANYWAY to get strawberries to grow, even if their farm is not certified organic? And that frozen, fresh, organic or not, just EAT THEM anyway you can get them in your body. The nutritional value is the same. I'm sharing one of my favorite items from a Strawberry Get-Together with you. Cuz it's awesome. And because a lot of people have been bugging me for this recipe.

Ingredients

1 ounce fresh lime juice (juice of 1 lime = 1 ounce)
5 -6 fresh basil leaves
1 3/4 ounces white rum
2 -3 small strawberries, sliced
ice cube
3 ounces club soda (or to taste)

Steps:

Combine lime juice and basil leaves in the bottom of a highball glass; use a wooden spoon to muddle the basil.
Stir in rum and strawberries.
Fill glass with ice cubes and top with club soda.
Garnish with a lime slice and a whole strawberry, and serve.
Makes 1 cocktail.

Ingredients

6 fresh strawberries, sliced
12 fresh basil leaves
1/4 cup sugar
Ice cubes
1/3 cup lemon juice
2-1/4 cups club soda, chilled
Additional fresh basil leaves, optional

Steps:

In a shaker, muddle strawberries, basil and sugar. Fill shaker three-fourths full with ice; add lemon juice. Cover and shake 10-15 seconds or until condensation forms on outside of shaker. Strain into six rock glasses filled with ice. Top with club soda and, if desired, additional basil leaves.

Ingredients

white sugar, for rimming
2 large limes, quartered
½ bunch mint leaves
7 strawberries, quartered
1 cup white sugar
1 cup white rum
2 cups club soda
8 cups ice cubes

Steps:

Pour 1/4 to 1/2 inch of sugar onto a small, shallow plate. Run one of the lime quarters around the rim of each cocktail glass, then dip the glasses into the sugar to rim; set aside.
Squeeze all of the lime quarters into a sturdy glass pitcher. Toss the juiced limes into the pitcher along with the mint, strawberries, and 1 cup of sugar. Crush the fruits together with a muddler to release the juices from the strawberries and the oil from the mint leaves. Stir in the rum and club soda until the sugar has dissolved. Pour into the sugared glasses over ice cubes to serve.
