SUNNY'S EASY SHRIMP AND RICE PINEAPPLE BOATS



Sunny's Easy Shrimp and Rice Pineapple Boats image

Number Of Ingredients 11

1 pineapple
1 cup your favorite BBQ sauce
Kosher salt and freshly ground black pepper
1 pound 16/20 shrimp, peeled and deveined
One 10-ounce tray microwaveable basmati or jasmine rice, prepared according to package
1/4 cup chopped fresh cilantro
2 scallions, finely chopped
Zest of 1 lime
Kosher salt and freshly ground black pepper
1/4 cup lightly packed fresh cilantro leaves
Lime wedges, for spritzing

Steps:

  • For the shrimp: Preheat the grill or the oven to 350 degrees F.
  • Prepare the pineapple and sauce. Slice the pineapple in half. Slice the core out of the center and discard. Cut out the flesh, leaving a 1-inch border all the way around. Finely chop two-thirds of the pineapple flesh and set aside in a bowl. Add the remaining pineapple flesh to a blender along with the BBQ sauce. Season with a pinch of salt and a few grinds of pepper, then blend until smooth.
  • Prepare the shrimp. Add the shrimp to an aluminum foil pouch (or create a pouch with aluminum foil), then sprinkle with salt and pepper and pour the pineapple BBQ sauce over the top. Close the pouch and place over the direct heat of the grill, or on the bottom rack of the oven. Cook until a quick peek inside reveals opaque shrimp, 10 to 12 minutes.
  • For the rice: In the bowl with the reserved chopped pineapple, add the rice, cilantro, scallions, zest and salt and pepper to taste. Stir to combine.
  • To serve: Divide and fill both halves of the pineapple with the rice. Remove the shrimp from the pouch and top both pineapple halves equally. Pour the juices from the pouch over everything. Top with the cilantro and serve with lime wedges for spritzing.

Nonstick vegetable oil spray
36 uncooked large shrimp, peeled, deveined
4 tablespoons olive oil
4 tablespoons fresh lime juice
1/2 large pineapple, peeled, cut into 1/2-inch-thick slices, cored
3/4 cup chopped red onion
1/4 cup chopped fresh cilantro
2 tablespoons chopped seeded jalapeño chili

Steps:

  • Spray grill with nonstick spray; preheat barbecue (medium-high heat). Thread shrimp on 6 skewers. Whisk 2 tablespoons oil and 2 tablespoons lime juice in small bowl to blend; brush mixture over shrimp. Sprinkle shrimp with salt and pepper; let marinate 15 minutes.
  • Sprinkle 12 pineapple slices with salt and pepper. Grill pineapple until just tender, about 4 minutes per side. Transfer to work surface; cut pineapple into 1/2-inch pieces. Place in bowl; mix in onion, cilantro, chili, remaining 2 tablespoons oil and 2 tablespoons lime juice. Season salsa with salt and pepper.
  • Grill shrimp until just opaque in center, about 5 minutes. Serve with salsa.

1-1/2 cups uncooked basmati rice
3/4 cup canned black beans, rinsed and drained
2 teaspoons canola oil
1/2 cup finely chopped onion
1-1/2 cups unsweetened pineapple juice
1/4 cup packed brown sugar
1 tablespoon Sriracha chili sauce
3 cups cubed fresh pineapple
1 medium sweet red pepper, diced
1 cup chopped fresh cilantro
1 small red onion, finely chopped
2 tablespoons lime juice
1/4 teaspoon salt
1/4 teaspoon pepper
1-1/2 pounds peeled and deveined shrimp (31-40 per pound)

Steps:

  • Cook rice according to package directions. Stir in beans; cover and keep warm., While rice cooks, heat oil in a large skillet over medium-high heat. Saute onion until tender, 3-4 minutes. Stir in pineapple juice, brown sugar and chili sauce; bring to a boil. Cook, uncovered, on high until liquid is reduced to 1/2 cup, 10-12 minutes., For salsa, toss pineapple with red pepper, cilantro, red onion, lime juice, salt and pepper., Once sauce has reduced, stir in shrimp and return just to a boil. Reduce heat; simmer, uncovered, until shrimp turns pink, 2-3 minutes. Serve with rice mixture and salsa.

2 tablespoons brown sugar
2 tablespoons lime juice

2 garlic cloves, minced
1 teaspoon ground coriander

1 pound uncooked large shrimp, peeled and deveined
FRUIT SALSA:
1 medium tart apple, peeled and cut into wedges
3/4 cup orange segments
2 tablespoons lime juice
2 green onions, cut into 2-inch pieces

  • In a large resealable plastic bag, combine the first eight ingredients. Add the shrimp; seal bag and turn to coat. Refrigerate for 30 minutes., Meanwhile, place salsa ingredients in a food processor; cover and process until finely chopped. Transfer to a small bowl. Chill until serving., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Thread shrimp onto three metal or soaked wooden skewers. Grill shrimp, covered, over medium heat or broil 4 in. from the heat for 5-8 minutes or until shrimp turn pink, turning once.   • SHRIMP:.
  • Combine first 10 ingredients, including fennel if desired, in a small bowl.
  • Peel shrimp, leaving tails on; devein, if desired.
  • Dredge shrimp in spice mixture.
  • Heat 2 tablespoons oil in a large skillet over medium-high heat.
  • Add shrimp, in batches, and cook 2 to 3 minutes or until shrimp turn pink.
  • Add remaining 2 tablespoons oil to skillet, as needed, to cook remaining shrimp.

  • Pulse pineapple in a food processor just until finely chopped.
  • Placce pineapple in a wire-mesh strainer, and let drain for 15 minutes.
  • Transfer drained pineapple to a bowl; stir in onion and remaining ingredients.

  • Serve shrimp (on a Chinese spoons - 1 shrimp for each spoon) warm or at room temperature with Pineapple Salsa.

This is a great Caribbean shrimp dish that I wanted to get on Zaar for the Caribbean. This recipe comes from Walter Scheib, former White House Chef. The warm fruit salsa is a perfect accompaniment & adds to the flavor of this wonderful dish.

1/3 cup olive oil
2 tablespoons garlic, chopped
1 tablespoon gingerroot, chopped
2 tablespoons lime juice
2 teaspoons dark rum
2 teaspoons lime zest
1/4 cup cilantro, chopped
1/4 cup Italian parsley, chopped
1 teaspoon chili paste
2 teaspoons cumin
1 teaspoon coriander
salt and pepper, to taste
16 large shrimp, peeled & deveined
1 tablespoon olive oil
1 tablespoon garlic, chopped
1 teaspoon jalapeno, chopped
2 ounces julienne red onions
2 ounces julienne tomatoes
2 ounces sliced mangoes
2 ounces sliced pineapple
2 ounces sliced bananas
1/2 tablespoon cumin
1/2 tablespoon coriander
1 ounce lime juice
hot sauce (to taste)
1/4 cup cilantro, chopped

Steps:

  • In a large bowl- combine all ingredients except shrimp & set aside.
  • Go ahead & preheat your grill to medium heat.
  • Toss shrimp in baste mix & grill on lightly oiled grill. Turning once, cook 4 minutes on each side.
  • Baste shrimp once more before serving.
  • Serve on top of warm fruit salsa.
  • Warm Fruit Salsa:.
  • In sauté pan over medium heat- sauté oil, onions, garlic and jalapeños for 2- 3 minutes.
  • Add fruit and tomatoes, cooking for 2 - 3 minutes, don't stir or over-mix as fruit will break up.
  • Add cumin, coriander, lime juice & hot sauce. Cook 1 - 2 minutes, the fruit should be warm, not mushy.
  • Add chopped cilantro when ready to serve.
  • Serve on top of warm fruit salsa.
