- Whisk mayonnaise, sugar and vinegar; set aside. In a salad bowl, combine broccoli, onion, raisins and pecans. Drizzle with dressing; toss to coat. Gently stir in oranges. Refrigerate, covered, at least 3 hours before serving.

This is a great salad recipe that I got from a co-worker. Everyone asks for the recipe and there is usually none left over. Tastes even better the next day.

Steps:
- Toss all ingredients together.
- Pour mixed and chilled dressing over and toss again.
- I like to put the mandarin oranges on last, after the dressing, so they don't break up too much.
- I sort of fold them in gently when serving.

BROCCOLI MANDARIN ORANGE SALAD

Steps:
- Steam broccoli in covered saucepan for 3 minutes.
- Remove from heat and rinse with cold running water.
- Place in serving bowl and chill, covered.
- In medium-sized bowl combine the remaining ingredients.
- Toss gently.
- Allow to stand at room temperature for 15 to 30 minutes.
- When ready to serve, Pour marinated orange mixture on chilled broccoli and stir gently.
- Season to taste with salt and pepper.
- Serve.

- In a large saucepan, combine the sugar, cornstarch and mustard. Combine vinegar and water. Stir into sugar mixture until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat., Stir a small amount of hot filling into egg and yolk; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Gently stir in mayonnaise and butter. Cool to room temperature without stirring. Chill., In a large salad bowl, combine the broccoli, mushrooms, onion, oranges, bacon, almonds and raisins. Pour dressing over salad; toss to coat. Store in refrigerator.

AWESOME BROCCOLI MARINARA
This is a great quick version of an Italian traditional side dish in our family all the way from Italy. You can use fresh tomatoes and basil. However, as a mother of four, I opt for the quick method as I'm sure other parents of small ones can appreciate. The kids really love this dish too. Buon Appetito!

- Heat olive oil in a large skillet over medium heat. Add garlic, and cook for a few minutes, stirring constantly. Pour in the tomatoes with their juices, and simmer until the liquid has reduced by about 1/2. Place the broccoli on top of the tomatoes, and season with a little salt and pepper. Cover, and simmer over low heat for 10 minutes, or until the broccoli is tender. Do not over cook the broccoli, it should be a vibrant green. Pour into a serving dish, and toss to blend with the sauce before serving.

- In a heavy saucepan, combine egg, sugar, honey, mustard and cornstarch with a whisk until smooth. Gradually whisk in water and vinegar. - Heat the oven to 400 degrees and line 2 large baking trays with parchment paper. Break the broccoli into bite-size pieces. Place all the other ingredients into a large bowl and mix well, using a spatula, spoon or electric mixer to combine. Add the broccoli and mix using clean hands, making sure the mixture gets into all the nooks and crannies of the florets.

- Chop and prepare broccoli into smaller pieces. Place in a skillet with 2 cups of water. Season with salt and pepper (probably about a teaspoon of each) Bring to a boil.
