Steps:
- Preheat the oven to 375 degrees F.
- Trim 2 inches off the ends of the broccolini stems and cut any thick stalks in half lengthwise. Place the broccolini in a single layer on two sheet pans. (If you put them on one sheet pan, the broccolini will steam rather than roast.) Drizzle each sheet pan with 2 tablespoons olive oil, sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper, and toss well. Roast for 15 minutes, until the broccolini is crisp-tender. Sprinkle lightly with salt and serve hot.
BROCCOLI SLAW MANICOTTI WITH ROASTED RED PEPPER SAUCE
This cheese manicotti recipe is delicious! The red pepper sauce gives it a nice flavor. I have never made homemade sauce before - but this is wonderful and super easy! My picky kids will eat this and don't notice the broccoli slaw in the manicotti - yay! Vegetarian and filling. Try it!

- Preheat oven to 350 degrees. Cook manicotti shells according to package directions and be sure to salt your water. Drain the manicotti shells and let cool. Meanwhile, saute the broccoli slaw and garlic in the olive oil until softened. In a mixing bowl, combine eggs, ricotta cheese, mozzarella cheese, parmesan cheese, Italian seasonings, salt and pepper. Add the broccoli slaw mixture and combine. I put the cheese mixture in a large freezer bag and cut off a corner tip to pipe into the manicotti shells. Place stuffed manicotti shells in a 13x9 baking dish sprayed with cooking spray. Next combine the diced tomatoes (do not drain) with the chopped red peppers. I use a blender to combine them together because my family doesn't like "chunky" sauces. Top the manicotti with the sauce and bake covered for 30 minutes. You can uncover the dish add extra mozzarella on top for the last 10 minutes of baking. YUM!
SAUSAGE AND BROCCOLI MANICOTTI
You can sub cottage cheese for the ricotta if desired, also the shells can be cooked and stuffed then refrigerated until ready to bake later in the day, and you can use fresh broccoli in place of the frozen. This is a great manicotti dish!

- Grease a 13 x 9-inch baking dish.
- Cook the manicotti shells until firm-tender (careful not to overcook, leave fairly firm) drain.
- In a large bowl, combine the ricotta or cottage cheese (if using) broccoli, 1 cup of mozza cheese, 1/4 cup Parmesan cheese, egg, parsley, onion powder, salt, pepper and garlic powder; mix well to combine and set aside.
- In a skillet cook the crumbled sausage meat over medium heat until no longer pink; drain fat.
- Add in the pasta sauce and minced garlic (if using), cook over medium heat for about 5-8 minutes.
- Spread about 1-1/2 cups of the pasta/sausage mixture in the bottom of prepared baking dish.
- Stuff the manicotti shells with the broccoli mixture (careful not to overstuff as the shells will tear).
- Arrange the stuffed shells over the sauce.
- Top with remaining sauce.
- Then sprinkle with remaining Parmesan cheese, then top with remaining mozza cheese.
- Set oven to 350 degrees.
- Bake the shells for about 40-50 minutes, or until heated through.
- Delicious!

- Cook broccoli in a large pot of generously salted boiling water until very tender and darkened slightly, 10 to 12 minutes; drain.
- In a large saucepan, heat oil, garlic, and chiles over medium. Begin stirring when bubbles form around edges of garlic slices. Continue cooking, stirring frequently, until garlic is soft and fragrant but hasn't taken on any color, about 3 minutes.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Steam broccoli with 2 tablespoons water in microwave for 6-7 minutes.
- In 10-inch skillet, heat olive oil and butter over low heat. Stir in garlic (more or less to suit your tastes) and red pepper slices; saute gently.

This rich meat, spinach and cheese filled manicotti dish is covered with white and red sauces. I offer this on the catering menu at my catering company and it is the most popular for casual dinner parties. It's a bit of work but well worth the effort.

- Heat oil in a large skillet over medium heat. Saute onions until translucent. Saute garlic for 1 minute and stir in ground beef. Cook until well browned and crumbled. Season with salt and set aside to cool.
- Cook spinach according to package directions. Meanwhile, bring a large pot of lightly salted water to a boil. Add manicotti shells and parboil for half of the time recommended on the package. Drain and cover with cool water to stop the cooking process and prevent the shells from cracking.
- To the ground beef mixture add the cooked spinach and ricotta cheese. When the mixture is cool, add the beaten eggs. Spread 1/4 cup spaghetti sauce in the bottom of a 9x13 inch baking dish. Gently drain the manicotti shells and carefully stuff each one with the meat and cheese mixture; place shells in prepared dish. Lightly cover the dish with plastic wrap or a clean, damp towel to prevent shells from cracking.
- Preheat oven to 350 degrees F (175 degrees C).
- Prepare the white sauce by melting the butter in a small saucepan over medium heat. Stir in flour and chicken bouillon. Increase heat to medium-high and cook, stirring constantly, until it begins to bubble. Stir in half and half and bring to a boil, stirring frequently. Cook for 1 minute, stirring constantly. Remove from heat and stir in parsley. Pour or ladle the sauce evenly over the stuffed shells.
- Stir the basil into the remaining spaghetti sauce. Carefully pour or ladle spaghetti sauce over the white sauce, trying to layer the sauces without mixing.
- Cover and bake for 40 minutes. Remove from oven, uncover and sprinkle with Parmesan cheese. Bake, uncovered, for 10 minutes more.

- Place racks in upper and lower thirds of oven; preheat to 400°F. Arrange bread slices in a single layer on a rimmed baking sheet and drizzle with 2 Tbsp. oil. Toss on baking sheet to coat, then arrange again in a single layer. Place broccoli and garlic on another rimmed baking sheet and drizzle with remaining 4 Tbsp. oil. Season generously with salt and toss to combine.
- Place broccoli on top rack and bread on bottom rack and roast until bread is golden brown and crisp, 10-12 minutes. Remove bread from oven and continue to roast broccoli and garlic, tossing once, until broccoli is browned all over and garlic is tender, another 15-20 minutes. Let cool slightly.
- Meanwhile, whisk honey, vinegar, and red pepper flakes in a small bowl.
- As soon as garlic is cool enough to handle, squeeze cloves out of their skins and mash in another small bowl to form a paste. Add ricotta and mix well; season with salt and black pepper.
- Spread ricotta over toasts and top with roasted broccoli. Arrange on a platter and drizzle with honey mixture.
