How to Make Atole de Vainilla image

Atole de Vainilla is a traditional masa-based hot beverage, made easily with milk, vanilla beans, corn flour and piloncillo.

4 C milk (we used raw, unpasteurized)
3-4 oz piloncillo
1/2 C Maseca
1 vanilla bean (sliced in half lengthwise and scraped out)
1 cinnamon stick (substitute 1 Tbsp pure Mexican vanilla extract)

Steps:

  • In a medium bowl, combine your Maseca with 1 C. of the milk and whisk until the corn flour is dissolved.
  • Pour that Maseca mixture into your dutch oven and add the piloncillo, the vanilla seeds and the cinnamon stick. Over the next 3 minutes the piloncillo should break down and dissolve into the milk.
  • Stir frequently and allow the mixture to thicken up on the lowest heat setting before pouring through a fine mesh sieve.
  • Serve warm/hot, in mugs.

When my son took a drink he said, "It tastes like Mexico." I couldn't have said it better myself. It has all the aromatic and comforting ingredients of Mexico that is so soothing.

2 1/2 cups water
1 cinnamon stick
4 ounces piloncillo
1/2 cup masa harina
2 cups whole milk
1 vanilla Bean ( split in half lengthwise and seeds scraped)
ground cinnamon (optional)

Steps:

  • In a large saucepan bring water to a boil with the cinnamon stick and piloncillo. Remove from the heat, cover, and let the cinnamon stick steep and sugar dissolve for about 30 minutes.
  • Remove the cinnamon stick, return water to low heat, and slowly add the masa harina, whisking until combined. Add milk and vanilla bean with seeds.
  • Heat over medium heat just until boiling.
  • Reduce heat and simmer, uncovered, whisking occasionally, about 20 minutes.
  • Sprinkle with cinnamon and serve immediately.

3 Ounces Piloncillo
1/2 Cup Water
3 Cups Almond Milk
1/4 Cup Masa Harina
1 Mexican Cinnamon Stick
1 Tablespoon Pure Mexican Vanilla

Steps:

  • In a medium sauce pan, heat the pilconcillo and water over low heat. Cook until the piloncillo has completely melted, stirring occasionally.
  • Whisk the almond milk and masa harina into the melted piloncillo. Whisk until the masa is fully incorporated and there are no lumps. Add the cinnamon stick cook for 20 minutes, stirring often.
  • Add the Mexican Vanilla. Turn off the heat.
  • Serve immediately in mugs.

1 ½ tablespoons pure vanilla extract
⅓ cup water

Steps:

  • Combine milk and cinnamon stick in a saucepan over medium heat. Bring to a boil, stirring constantly to prevent milk from burning on the bottom. Add sugar and stir for 2 minutes. Add vanilla extract and stir for another 2 minutes.
  • Mix water and cornstarch in a small bowl until no lumps remain. Pour into the boiling milk and stir until thick, about 8 minutes.

½ cup Maseca
1 Mexican vanilla bean, cut in half and both pieces split lengthwise* (see notes below for substitution)
1 Mexican cinnamon stick

Steps:

  • In a saucepan over low heat, combine piloncillo and water and stir occasionally until piloncillo is completely melted.
  • Whisk in milk, Maseca and vanilla bean until Maseca is dissolved and incorporated with the piloncillo mixture.
  • Submerge a Mexican cinnamon stick. Reduce heat to a simmer and continue stirring frequently for 30-35 minutes.
  • Remove from heat and pour through a fine mesh sieve and serve in mugs.
