4 cod fillets (1 lb.)
1 Tbsp. lemon juice

Steps:

  • Heat broiler.
  • Mix dressing and seasonings until blended.
  • Place fish on rack of broiler pan sprayed with cooking spray; brush with dressing mixture.
  • Broil, 4 inches from heat, 6 to 8 min. or until fish flakes easily with fork. Drizzle with lemon juice.

1 medium shallot, finely chopped
1 cup dry white wine
2 lemons, 1 juiced and 1 sliced into 1/4-inch-thick rounds
6 tablespoons unsalted butter, cut into small pieces
1/4 cup capers, roughly chopped
1 teaspoon salt
Freshly ground black pepper
1 cup loosely packed mixed fresh herbs, such as parsley, tarragon, chervil, dill, and thyme, roughly chopped
4 (about 6 ounces each) codfish fillets

Steps:

  • Combine shallot, wine, and lemon juice in a small skillet; set over high heat. Bring to a boil; simmer until liquid is reduced to 1/4 cup, about 10 minutes. Remove from heat; whisk in butter, capers, 1/4 teaspoon salt, a pinch of pepper, and 3/4 of the herbs. Set aside; keep warm.
  • Heat a large skillet over medium-high heat; add 3 tablespoons sauce. Season both sides of fillets with remaining 3/4 teaspoon salt and a pinch of pepper. Arrange fillets and lemon slices in skillet; sprinkle with some herbs. Cook until fillets are golden, about 4 minutes. Turn, sprinkle with remaining herbs, and cook until fish is cooked through, about 3 minutes. Serve with lemon slices and remaining sauce.

1/2 teaspoon salt
1/4 teaspoon pepper
4 tablespoons unsalted butter
4 cloves garlic ((minced))
1 tablespoon fresh squeezed lemon juice
1 teaspoon lemon zest
2 tablespoons fresh parsley ((minced))

Steps:

  • Preheat the broiler on the oven. Pat the cod with a paper towel, then season both sides with the salt and pepper.
  • Melt the butter over medium-high heat in a cast iron or oven-proof skillet that is no bigger than 12 inches. Add the garlic and cook, stirring constantly, for 30 seconds, then stir in the lemon juice and zest.
  • Place the cod fillets in the pan and cook for 1 minute, then carefully turn them over.
  • Place the skillet in the oven about 4-6 inches from the broiler. Broil for 6-9 minutes, depending on the thickness of your fillets, or until the internal temperature of the cod reaches 130-140°F on a meat thermometer inserted into the center of the thickest portion of a fillet.
  • Garnish with the parsley and extra lemon slices, if desired, and serve.

1 tbsp. fresh lemon juice
1 lg. garlic clove, minced
2 tbsp. olive oil
1/4 tsp. salt
garlic powder, salt and pepper (optional)
1/2 cup mixed fresh herbs (basil, chives, arragon, parsley, oregano)
1 Ib. North Atlantic Cod fillets
2 tbsp butter

Steps:

  • One hour in advance of cooking the cod, stir tog. tomatoes, olive oil, lemon juice, garlic, your choice of herbs and salt. Cover and stand for 1 hour. Cut cod into 3 portions. In a saucepan over medium heat, melt butter until just brown. Add parsley (optional). Place fish on greased baking pan and brush with browned butter. Sprinkle with salt and pepper and garlic powder. Place in over aprox. 4 to 6 inch. from top of stove. Cook for 10 mins @ 400. F. Remove from baking sheet and place in frying pan on med - high heat. Add tomato mix for 2-3 mins or until slightly warmed. Sprinkle wit paprika (opt.) and serve with fresh parsley and lemon.

This is a super simple recipe that can be used with any fish. I just happen to like cod a lot. You throw the ingredients in a foil pouch, then steam in the oven. A true no-brainer meal.

4 (6 ounce) cod fillets
4 teaspoons olive oil
salt and ground black pepper to taste
1 bunch fresh chives, coarsely chopped
2 lemons, sliced
2 cloves garlic, sliced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cut 4 large squares of heavy-duty aluminum foil. Brush each fillet with olive oil and sprinkle with salt and black pepper. Place each fillet in the center of an aluminum foil square. Lay lemon slices down the length of each fillet and sprinkle garlic slices and chives over the top. Fold foil over the fish and turn the edges over 2 or 3 times; flatten to seal the packets.
  • Bake in the preheated oven until the fish is opaque and flakes easily with a fork, 15 to 20 minutes.
