- Preheat broiler. In a shallow bowl, mix first 7 ingredients; add cod, turning to coat. Let stand 10-15 minutes., Place fillets on a greased rack of a broiler pan; discard remaining marinade. Broil 3-4 in. from heat until fish just begins to flake easily with a fork, 10-12 minutes. Top with butter.

PERFECT TEN BAKED COD
Simple, fast, and delicious describes this baked cod recipe. Bake for two sets of 10 minutes each and you have the perfect ten dinner! This recipe was a favorite request from a local restaurant. They closed after years in business and we are happy to share a version of their most requested recipe. I serve this with rice pilaf and fresh spinach that has been lightly seared in olive oil and garlic. Yummy!

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Place 2 tablespoons butter in a microwave-safe bowl; melt in microwave on high, about 30 seconds. Stir buttery round crackers into melted butter.
- Place remaining 2 tablespoons butter in a 7x11-inch baking dish. Melt in the preheated oven, 1 to 3 minutes. Remove dish from oven.
- Coat both sides of cod in melted butter in the baking dish.
- Bake cod in the preheated oven for 10 minutes. Remove from oven; top with lemon juice, wine, and cracker mixture. Place back in oven and bake until fish is opaque and flakes easily with a fork, about 10 more minutes.
- Garnish baked cod with parsley and green onion. Serve with lemon wedges.

Steps:
- Stack about 15 charcoal briquettes into a grill in a pyramid shape. If desired, drizzle coals lightly with lighter fluid and allow to soak for 1 minute before lighting coals with a match. Allow fire to spread to all coals, about 10 minutes, before spreading briquettes out into the grill; let coals burn until a thin layer of white ash covers the coals. Lightly oil the grates.
- Season both sides of cod with Cajun seasoning, lemon pepper, salt, and black pepper. Set fish aside on a plate. Heat butter in a small saucepan over medium heat, stir in lemon juice and green onion, and cook until onion is softened, about 3 minutes.
- Place cod onto oiled grates and grill until fish is browned and flakes easily, about 3 minutes per side; baste with butter mixture frequently while grilling. Allow cod to rest off the heat for about 5 minutes before serving.

- Preheat the broiler on the oven. Pat the cod with a paper towel, then season both sides with the salt and pepper.
- Melt the butter over medium-high heat in a cast iron or oven-proof skillet that is no bigger than 12 inches. Add the garlic and cook, stirring constantly, for 30 seconds, then stir in the lemon juice and zest.
- Place the cod fillets in the pan and cook for 1 minute, then carefully turn them over.
- Place the skillet in the oven about 4-6 inches from the broiler. Broil for 6-9 minutes, depending on the thickness of your fillets, or until the internal temperature of the cod reaches 130-140°F on a meat thermometer inserted into the center of the thickest portion of a fillet.
- Garnish with the parsley and extra lemon slices, if desired, and serve.

BREADED AND BROILED BLUE COD

- Preheat broiler.
- Place the garlic cloves in the bowl of a food processor and process until fine. Add the bread slices and process them into crumbs. (You should have 4 cups.)
- Transfer the garlic and bread crumbs to a bowl and mix in the scallions, pepper and salt. Add the oil and rub the mixture gently between your hands to moisten the bread crumbs with the oil. The mixture should be loose.
- Arrange the blue cod steaks side by side on a nonstick baking sheet. Cover with half the crumbs, patting crumbs lightly over the surface of the fillets. Place the fillets under the broiler about 5 inches from the heat and cook about 3 1/2 minutes, until the crumbs are nicely browned.
- Gently turn the pieces of fish over with a spatula and pat the remaining seasoned bread crumbs lightly over their surface. Then place the fillets under the broiler for another 3 1/2 minutes. The crumbs should be thoroughly browned and the fish just cooked through. Since cooking time will vary depending on the thickness of the fillets, check to see if they are cooked by cutting into one. If more cooking is needed, turn off the broiler and let the fish remain in the hot oven for three to four minutes.
- Serve immediately, one fillet steak per person, with a wedge of lemon, if desired.

- Lightly rinse the cod and feel for any bones to remove. Pat the fish dry with paper towels. Use kitchen scissors or a knife to cut any large pieces into serving portions. Place the raw fish on the prepared pan. Wash your hands well.
- Add the paprika, garlic powder, onion powder and salt to a tiny bowl and stir to blend. Drizzle a little olive oil on each piece of fish, using one tablespoon of oil total. Brush the oil all over the fish, front and back. Sprinkle some of the blended seasoning on each piece of fish, using it all. Rub the seasoning all over the top of each piece of cod. Wash your hands well.
