CHEESE BUNS RECIPE
Homemade cheese buns with cheddar cheese inside and outside, these are some of the best cheese bread buns I've ever had.

Steps:
- Place the flour, instant dry yeast, salt, and sugar in a large bowl or in the bowl of the stand mixer. Mix well.
- Add the lukewarm water (about 40 degrees Celsius/ 105 degrees Fahrenheit) and the grated cheese needed for the dough. Mix well and knead the dough for about 5 minutes with the hands or about 3 minutes with the stand mixer until smooth and elastic.
- If you make the dough with fresh or active dry yeast, crumble/sprinkle the yeast in the lukewarm water, add the sugar and stir gently. Let stand for about 5 minutes, then combine with the rest of the ingredients and knead the dough.
- Place the yeast dough in a bowl, cover with a kitchen towel and let rise in a warm place for about 2 hours or until nicely risen (Note 3).
- Preheat the oven to 250 degrees Celsius/ 480 degrees Fahrenheit. Line a baking tray with parchment paper.
- Grate the remaining cheese and place it on a large plate. Mix the egg and the milk in a small bowl.
- Form a thick sausage and cut the pieces of dough with a scraper or tear the pieces directly from the dough. You will have 12 buns (Note 4).
- Knead the dough pieces shortly on the lightly floured surface and shape them into balls.
- Brush each cheese bun with the egg mixture and roll it into the grated cheese.
- Place on the prepared baking tray. Cover the tray with a clean kitchen towel and let rise lightly for 15 minutes.
- Place in the oven and bake for 18-20 minutes or until deeply golden and cooked through. Check after about 10-15 minutes. If they are already very golden, cover them loosely with a piece of aluminum foil to prevent the cheese from getting too dark.
- Remove from the oven and let cool on a wire rack.

HOMEMADE CHEESE BUNS WITH DOUBLE CHEESE

Steps:
- In the bowl of a stand up mixer mix add the flour, salt, sugar, olive oil, 3 tablespoons Parmesan cheese (20 grams) and yeast then add a 1/4 cup of water (58 grams) then start to mix with a fork.
- Then add the beaten egg, remaining Parmesan cheese and Provolone and remaining water. Combine with a fork just until the dough starts to come together. Then add the dough hook attachment and knead for approximately 5 minutes or until smooth and elastic. (see below for hand kneading instructions). Remove dough to a lightly floured flat surface.
- Form the dough into a ball, place in lightly oiled medium-sized bowl (make a couple of slashes on top with a knife). Cover well (I use a folded tablecloth) and let rise in a draft free area for 1-2 hours or doubled in bulk. (mine actually sat for 3 hours).
- Remove the dough from bowl and on a lightly floured flat surface knead dough a couple of minutes, shape into 6 bun shapes, score with a knife and place on a lightly oiled parchment paper lined cookie sheet, cover and let rise for 1 hour.
- Pre-heat oven to 400° (200° celsius).
- Brush buns with milk and sprinkle with additional Parmesan cheese or grated Provolone. Bake for approximately 30 minutes. Let cool or eat warm. Enjoy!

THE FLUFFIEST BRIOCHE BUNS
Made using the tangzhong method, these brioche buns are light, buttery and pillow-y soft! They can be enjoyed freshly baked or lightly toasted, and they make the best burgers I have ever tasted.

Steps:
- Combine all of the tangzhong ingredients in a saucepan, whisking until no lumps remain.
- Place the saucepan over medium heat, whisking or stirring constantly, until thickened, about 3 minutes.
- Remove from heat and let it cool to room temperature.
- In a small bowl, combine the lukewarm milk (between 98 and 105 degrees F), yeast and sugar. Cover with a towel and let it stand for 5 to 10 minutes or until foamy. Reserve.
- Whisk the flour and salt in the bowl of your stand mixer.
- Start the mixer on low, fitted with the paddle attachment. While running, add the yeast mixture. Let it run for a few seconds before adding the tangzhong, followed by the egg and egg yolk. Mix until a shaggy dough forms.
- Remove the paddle attachment and change to the hook attachment.
- Start kneading and add the butter, one tablespoon at a time. Do not add the next tablespoon until the first one is fully incorporated.
- Once all the butter is incorporated, let the stand mixer knead the dough for 8 to 10 minutes or until smooth and elastic.
- Form a ball with the dough and place it in a greased bowl. Cover with a kitchen towel and place it in a warm spot (like your oven, turned off) for 1 to 2 hours, or until doubled in size.
- Gently punch the dough to deflate it. Using a bench knife, portion the dough into 8 equal pieces, about 95g each. Form the dough portions into small balls and place them on a parchment paper-lined baking sheet, making sure they have space to double in size. Cover with the towel and let it rise again, for up to 1 hour or until puffy.
- Preheat oven to 375ºF for at least 15 minutes.
- Brush the buns with egg wash (1 large egg beaten with 1 tablespoon water), then bake for 15 to 18 minutes, or until golden brown.
- Remove the buns from the oven and immediately brush them with the melted butter. Allow them to cool in the pan for 10 minutes, then transfer them to a rack to cool completely

GRILLED CHEESE BUNS
Steps:
- Spread just enough butter to cover both sides of each slice of bread.
- In a large nonstick pan set over medium heat, add the bread slices and cook until they're an even golden brown on the first side, about 2 minutes. Flip 2 of the slices over and top each with 2 slices of the cheese. Place the other 2 slices of bread on top, toasted-side down, forming 2 sandwiches. Continue to cook the sandwiches until the bottoms are golden brown, about 2 minutes. Flip and cook the remaining side for an additional 2 minutes.

BROILED CHEESE TOAST
Growing up, it seemed my parents would be quite creative when preparing weekend breakfast. We always had plenty on the table, even when we had to scrimp to make ends meet. When we did not have a loaf of bread, my mom would use leftover hamburger or hot dog rolls, or whatever she was able to find which would toast under the broiler. Along with our favorite weekend broiled cinnamon toast, we often would have this along with our bacon, eggs and grits. Broiled Cheese toast is a favorite childhood memory for me. - Spread with your desired amount of butter.
- Place cheese on top of butter.
- Sprinkle with sugar.

BROILED BACON AND CHEESE BITES
These are so gooey and delicious straight out of the oven. Definitely not for the calorie conscious but a great treat or party food. Preparation is very easy and is fun for kids and fun to eat too! I'm not sure exactly how much Cheez Whiz to bacon to bread is required, I'm guessing at the amounts.

- Cut each piece of bacon in half.
- After removing crusts from bread liberally spread each piece with Cheez Whiz.
- Gently slice bread into four strips using serrated knife.
- Lay half piece of bacon on cutting board and lay strip of bread with Cheez on top, Cheez side on top.
- Roll bacon and bread up together and pierce with toothpick.
- Try not to press so hard that Cheez oozes out sides.
- Place bites on broiler pan and broil for about 5 minutes or until bacon is crispy and bread is toasted.
- Serve immediately for most impact.
