EASY BROILED CHICKEN BREASTS
This broiled chicken recipe is great when it's too cold to grill outside. A favorite since I was a kid.

Steps:
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Combine butter, vegetable oil, onion, garlic, lemon juice, salt, paprika, and ginger in a small saucepan over medium heat. Stir until butter is completely melted, about 3 minutes. Reduce heat to low and simmer until onion is translucent, 5 to 7 minutes.
- Place chicken in a baking dish and baste with the butter sauce.
- Broil in the preheated oven, basting and turning every 10 minutes, until chicken is no longer pink in the center and the juices run clear, 30 to 40 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- In a shallow bowl, combine the bread crumbs, Parmesan cheese, parsley, salt and pepper. In another bowl, combine the butter, lemon juice and garlic. Dip chicken in butter mixture, then roll in crumbs., Roll-up chicken jelly-roll style; place seam side down in a greased 11x7-in. baking dish. Drizzle with any remaining butter mixture; sprinkle with paprika. , Bake, uncovered, at 350° for 35 minutes or until juices run clear.

- Position the oven rack about 5 to 6 inches below the broiler element and then preheat the broiler. Line a baking pan or broiler pan with foil and place a rack in the pan. Oil the rack.
- Serve the chicken breasts with the remaining lemon butter sauce and sprinkle with the green onion tops and chopped parsley, if using.

- Set an oven rack 4 to 6 inches from the heat source and preheat the oven's broiler. Spray a broiler pan with cooking spray.
- Combine butter, lemon juice, Italian seasoning, garlic powder, and cayenne pepper in a small bowl; mix until well blended.
- Place chicken on the prepared pan and brush with 1/2 of the butter mixture.
- Broil in the preheated oven for 6 minutes. Turn chicken, brush with remaining butter mixture, and broil until no longer pink in the center and the juices run clear, about 6 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Steps:
- Preheat oven to broil.
- Place chicken in large foil-lined baking dish.
- Mix coriander, salt and chutney together.
- Brush chicken with chutney mixture.
- Broil approximately 10 minutes.
- Turn chicken over and brush remaining side with the rest of the chutney glaze.
- Broil another 10 minutes or until chicken is done and is a rich golden color.
- Squeeze lime juice over chicken to taste.

- Adjust oven rack to position closest to broiler element, and turn on high. Mix coriander, a generous sprinkling of salt and the chutney in a medium bowl, then add chicken breasts (and tenderloins), and toss to coat with sauce. Place chicken, skinned side up, on a wire rack set over a foiled-lined pan; broil without turning until chicken is cooked through and spotty brown, about 8 minutes.
- While chicken breasts cook, whisk limeade concentrate (no need to thaw) with pepper flakes and ginger, and then whisk in oil. Place broccoli slaw, green onions, carrot and cilantro in a clean medium-sized bowl and add dressing; toss to coat.
- Remove chicken and transfer to serving platter. Squeeze lime juice over chicken to taste, and serve with slaw.
- For lunch, pack chicken and slaw in separate leakproof containers. Warm chicken in microwave, or serve the chicken and slaw at room temperature.

- Stir together the yogurt, ginger, cumin, 1/4 teaspoon cayenne, and 1/2 teaspoon salt in a 9-by-13-inch baking dish.
- Starting on one long side, cut each chicken breast almost in half horizontally, stopping about 1/2 inch before reaching the opposite side. Open each breast like a book.
- Add chicken to marinade and turn to coat. Cover with plastic wrap. Refrigerate at least 1 hour or up to 8 hours.
- Preheat broiler. In a small bowl, toss together red onion, cucumber, cilantro, lime juice, remaining 1/4 teaspoon cayenne, and pinch of salt.
- Transfer chicken to a broiler pan. Discard marinade. Broil chicken, rotating pan once, until cooked through, about 10 minutes. Top with cucumber mixture.
