Brothy Mussels with Oven Fries image

Adapted from Martha Stewart, this recipe for steamed mussels and oven fries is easy, slurpable, and so so delicious! Be sure to offer spoons to slurp the delicious sauce! Serve fries with prepared mayonnaise or ketchup.

Number Of Ingredients 9

2 lb. potatoes (I used 4 medium-sized russets), halved and cut into 8-10 wedges each
6 T olive oil
Kosher salt
2 T olive oil
1/4 c (1/2 stick, or 4 T) Unsalted Butter
4 Cloves Garlic
1 qt. Cherry Tomatoes
1 c Dry White Wine - whatever type you like
3 lb. Fresh Mussels (de-bearded and scrubbed)

Steps:

  • Preheat oven to 475F. Place a rimmed baking sheet in the oven to heat it up - this helps the fries crisp nicely.
  • In a large pot of generously salted water, place the potato wedges. Place pot over high heat. When it boils, turn heat down and simmer potato wedges 6-8 minutes. They should be just barely cooked through.
  • Drain potatoes and let stand about 10 minutes until they dry. Toss with 6 T olive oil, season with salt and pepper.
  • Carefully remove the hot rimmed sheetpan from oven, place seasoned potatoes on the sheet, and roast for 25 minutes, turning once. They should be nicely browned and crisp. If desired, season with extra salt.
  • When the fries have about 10 minutes remaining in cooking time, using the same pot or a skillet, over Medium High heat, melt 2 T butter and remaining olive oil. Cook the garlic 1-2 minutes, just until fragrant.
  • Add the wine and tomatoes. Season lightly with salt and pepper. Simmer sauce about 3 minutes.
  • Add the mussels and cover to cook for 3-5 minutes. All of the mussels should be opened at this point - just discard any which are still tightly closed.
  • Transfer cooked mussels to serving bowls. Add the remaining 2 T butter to the sauce, stir in, and pour the sauce over the mussels. Garnish with parsley, if desired. Serve with fries.

1 pound small fingerling potatoes, quartered lengthwise
Kosher salt and freshly ground pepper
1/4 cup extra-virgin olive oil
2 tablespoons unsalted butter
2 cloves garlic, thinly sliced (1 1/2 tablespoons)
1 pint cherry tomatoes, quartered
1/2 cup dry white wine, such as Sauvignon Blanc
1 1/2 pounds mussels, scrubbed
Chopped flat-leaf parsley and mayonnaise, for serving

Steps:

  • Preheat oven to 475 degrees, with a rimmed baking sheet on center rack. In a pot, cover potatoes with 2 inches of water; season with salt. Bring to a boil, then reduce heat and simmer until just cooked through, 6 to 8 minutes. Drain; let stand until dry, 10 minutes. Toss with 3 tablespoons oil; season with salt and pepper. Carefully transfer, cut-side down, to baking sheet and roast, flipping once, until crisp, 20 to 25 minutes. Season with salt.
  • Meanwhile, return pot to medium-high heat; swirl in 1 tablespoon butter and remaining oil. Add garlic; cook until golden, 1 to 2 minutes. Stir in tomatoes and wine; season with salt and pepper. Simmer until reduced slightly, 3 minutes. Stir in mussels, cover, and cook until all have opened (discard any that haven't), 3 to 5 minutes. Transfer mussels to a bowl with a slotted spoon; stir remaining butter into broth. Pour sauce over mussels and sprinkle with parsley. Serve with oven fries and mayonnaise.

5 tablespoons thinly sliced garlic
1 cup white wine

Steps:

  • In a large Dutch oven or straight-sided 12-inch saute pan, heat the olive oil over medium heat. Add the shallots and garlic and cook until softened, about 2 minutes. Add the white wine and bring to a boil. Season with salt and pepper. Add the mussels, cover and steam until open, about 3 minutes. Using a slotted spoon, transfer the mussels to a large serving bowl.
  • Add the creme fraiche, parsley, butter, chives and mustard to the remaining cooking liquid and bring just to a boil while stirring to combine. Pour the sauce over the mussels. Serve with French fries.

2 tablespoons olive oil
8 ounces Mexican chorizo (2 links), casing removed
Kosher salt and freshly ground black pepper
2 cups white wine
1 cup heavy cream, at room temperature
Two 5-pound bags P.E.I. mussels, cleaned
1/2 cup chopped fresh cilantro leaves
One 15-ounce bag frozen shoestring French fries
1 tablespoon olive oil
2 cloves garlic, grated on a rasp grater
Freshly cracked black pepper
1/4 cup chopped fresh Italian parsley leaves
Mayonnaise, for dipping

Steps:

  • For the mussels: In a large pot on medium heat, add the olive oil and chorizo. Break up the chorizo while cooking to create fine crumbles. Season with a nice pinch of salt and ground pepper and cook, stirring, until the bits and pieces are crisp, 5 to 8 minutes.
  • Add the wine, bring to a simmer and simmer for a few minutes. Stir in the cream. Immediately add the mussels and cover the pot with a lid. Jiggle the pot a bit to coat with the liquid on the bottom. Steam until most of the mussels are opened, about 5 minutes. Discard ones that do not open in the steaming process.
  • For the fries: Fry the shoestring French fries according to the package instructions.
  • Add the oil, garlic and a few grinds of pepper to a large bowl. Mix and mash to combine. Add the hot fries to the bowl and toss while sprinkling with the parsley. Serve with mayonnaise for dipping.
  • Sprinkle the mussels with the cilantro and serve with the fries.

These mussels were inspired by a dish prepared at Chateau Loudenne in the Bordeaux region of France, served near the big stone fireplace in the cozy harvesters' dining room. This version carries all the comfort of France's traditional mussels and frites (fries).

2 (10 ounce) russet potatoes
1 tablespoon olive oil
½ teaspoon paprika
¼ teaspoon salt
⅛ teaspoon pepper
½ cup diced (1/4 in.) onion
½ cup diced (1/4 in.) carrots
½ cup diced (1/4 in.) celery
½ teaspoon dried thyme
½ teaspoon curry powder
1 ½ cups dry white wine
1 cup canned diced tomatoes or 1 cup chopped firm-ripe tomatoes
¼ cup creme fraiche or sour cream
1 ½ pounds mussels, beards pulled off, scrubbed

Steps:

  • Coat a 10- by 15-inch pan generously with cooking oil spray. Peel potatoes and cut lengthwise into 1/4-inch-thick sticks. In pan, mix potatoes with 1/2 tablespoon olive oil. Sprinkle with 1/4 teaspoon paprika, 1/4 teaspoon salt, and 1/8 teaspoon pepper; mix and spread level. Bake in a 450 degree regular or convection oven, turning occasionally with a wide spatula, until potatoes are crisp and browned on the outside and tender to bite on the inside, 25 to 30 minutes.
  • Meanwhile, in a 4- to 5-quart pan over high heat, stir onion, carrots, celery, thyme, curry powder, and remaining 1/4 teaspoon paprika in remaining 1/2 tablespoon olive oil until vegetables are limp, about 5 minutes. Add wine and tomatoes and their juices; boil, stirring occasionally, to blend flavors, about 5 minutes. Stir in creme fraiche and season to taste with salt and pepper.
  • Discard any gaping mussels that don't close when you tap their shells. Add mussels to pan; cover and cook until shells pop open, 8 to 10 minutes.
  • Ladle mussels and broth into wide bowls. Serve with oven frites.

1 (15- to 16-ounce) package frozen french fries
1 small onion
2 garlic cloves, forced through a press
3 tablespoons unsalted butter
2 teaspoons dry mustard
2 teaspoons water
1/2 cup mayonnaise
1 cup dry white wine
2 pounds cultivated mussels, rinsed
2 tablespoons chopped flat-leaf parsley
Equipment:
Equipment: an adjustable-blade slicer
Accompaniment: crusty bread (preferably a baguette)

Steps:

  • Cook french fries according to package instructions and keep warm in oven if necessary.
  • Meanwhile, cut onion into very thin slices with slicer, then cook with garlic and a pinch of salt in butter in a wide heavy medium pot over medium-high heat, covered, stirring occasionally, until pale golden.
  • While onion cooks, whisk together mustard and water until smooth, then whisk in mayonnaise and 1/4 teaspoon pepper.
  • Add wine to onion and briskly simmer, covered, stirring occasionally, until onion is almost tender, about 5 minutes. Add mussels and cook, covered, stirring occasionally, until mussels just open wide, 4 to 6 minutes, checking frequently after 4 minutes and transferring as cooked to a bowl. (Discard any mussels that remain unopened.) Stir parsley into cooking liquid and season with salt. Pour liquid over mussels, then serve with fries and mustard mayonnaise.

This is a great recipe! Since he did not win on the Throwdown the other one had to be extremely good because this was great when I made it and I am not a professional. It is time consuming so try to manage accordingly. Takes about 1 hour and 10 minutes to prepare. But it is well worth it. Also, the prep time is approximate listed below as well.

1 medium Spanish onion, coarsely chopped
3 garlic cloves, coarsely chopped
2 poblano chiles, roasted, seeded, peeled and pureed
2 cups clam broth
1 cup unsweetened coconut milk
1 tablespoon honey
1 cup fresh spinach leaves
1 cup dry white wine
2 lbs cultivated black mussels, beard removed and scrubbed
salt
fresh ground black pepper
2 tablespoons cold unsalted butter
3 tablespoons freshly chopped flat leaf parsley, some for garnish
French bread, heated, for serving
6 large idaho potatoes, peeled
1 quart vegetables or 1 quart peanut oil
kosher salt
fresh ground black pepper
1 cup prepared mayonnaise
1 small roasted red pepper, peeled, seeded and pureed
1 tablespoon chipotle chile in adobo
salt
fresh ground black pepper

Steps:

  • For the mussels:.
  • Directions.
  • Heat the oil in a large saucepan over medium heat. Add the onions and cook until soft. Add the garlic and cook for 30 seconds until fragrant. Add the poblano puree and clam broth and cook until reduced by half, stirring occasionally. Add the coconut milk and honey and cook until reduced by half.
  • Transfer the mixture to a blender (rinse out the pan) add the spinach, salt and pepper, to taste, and blend until smooth.
  • Place the pan back on the stove over high heat. Add the wine to the pot, bring to a boil and reduce by half. Add the green chile broth and bring to a boil. Stir in the mussels, cover the pot and cook until the mussels open, discarding any that do not, about 4 to 5 minutes. Add the butter and parsley and season with salt and pepper, to taste. Spoon into bowls, garnish with more parsley, if desired, and serve with bread on the side.
  • For the French Fries:.
  • Cut the potatoes into 1/4-inch thick slices then cut each slice into 1/4-inc thick fries. Place the fries in a large bowl of cold water.
  • Heat the oil in a large, straight-sided skillet to 325 degrees F. Drain fries in batches on paper towels. Fry each batch for 3 to 4 minutes until a pale blonde color and remove to a sheet pan lined with paper towels.
  • Increase the heat of the oil to 375 degrees F and fry the potatoes again, in batches, until golden brown. Remove to a sheet pan lined with paper towels and season liberally with salt and freshly ground black pepper.
  • For the Aioli:.
  • Combine the mayonnaise, pepper, chipotle, salt and pepper in a food processor and process until smooth. Cover and refrigerate for at least 30 minutes before serving.
  • Serve the fries with the aioli alongside the mussels.

Never having cooked mussels before I saw this easy recipe. I served it to my guests who loved it. I found it so simple and yet they thought I had put so much time and effort into it! It worked a treat with raves from everyone! I use white wine but try to use a spicy one it makes the broth tastier.

1 kg live mussels
125 g unsalted butter
3 small round shallots, finely chopped
1 medium red chili pepper, de-seeded and finely chopped
500 ml wine
1 garlic clove, finely chopped
1/2 lemon, zest of
sea salt
ground black pepper
fresh parsley, finely chopped

Steps:

  • Just before cooking ~.
  • Give the mussels a good scrub and rinse to remove any excess grit, make sure that they have already had their beards trimmed (if not then trim the beards with a pair of sharp scissors.) The mussels should be firmly closed. If any are open, give them a tap and see if they close. If they do not close, discard them.
  • Using a large pot, melt the butter over a low heat. Add the shallots, garlic, chilie, and salt (optional.) Cook gently until the onions, garlic and chilie are softened. This could take up to 5 minutes or more. Be careful to watch closely at this stage making sure the butter or the onions do not start to brown. They must be translucent.
  • Add the wine and zest and increase the heat. Boil until reduced by half. Doing this makes a rich broth. Add the mussels and season lightly with pepper. Stir and then cover the pot with a lid.
  • After 2 minutes check the dish. Remove the mussels that have opened and transfer to serving bowl. Keep cooking the mussels in the pot still at a boil, removing them as they open. If there are any mussels that will not open discard them.
  • Pour the broth over the bowl of mussels, sprinkle the dish with chopped parsley.
  • Serve mussels in separate bowls with a good serving of broth, a wedge of lemon and a slice of thick crusty bread.
  • NOTES.
  • When you get the mussels home, remove them from any plastic and place the mussels in a bowl (this helps them to breathe.) Cover them with a clean, damp tea towel or cloth and refrigerate. Kept this way they should keep for two days.
