FRUIT SALAD WITH VANILLA YOGURT
This is a recipe that my aunt made for me not long ago, and you can pretty much make it your own by adding your favorite fruits or taking out what you don't like. Also changing the yogurt flavor will change the taste as well.

- In a large salad bowl, lightly mix together the strawberries, peach, plums, kiwi fruit, cherries, honeydew melon, cantaloupe, pineapple, and grapes until the fruit is well mixed. Serve in bowls with yogurt spooned over the top.

BROWN SUGAR GLAZED APRICOTS WITH SWEET RISOTTO PUDDING

- Combine milk, sugar, vanilla, ginger, orange zest, and rice in pot. Over medium heat, bring to a boil, stirring occasionally. Reduce heat to simmer and cook until most of the milk is absorbed, about 20 to 35 minutes, continuing to stir occasionally. Whisk together egg and yolks and slowly temper into simmering rice mixture. Take off heat and stir butter. Remove vanilla bean and ginger and pour onto lined sheet pan. Cover with plastic or parchment and refrigerate to cool. When cool, fold in whipped creme fraiche.
- Meanwhile, split apricots in half and pit. Lay face side up on sheet pan. Sprinkle each half with brown sugar and cinnamon. Dot with butter and drizzle with brandy. Place in broiler or under salamander until butter and sugar melt and bubble and apricots soften, about 3 to 5 minutes.
- To serve, spoon rice pudding into center of bowl, place 4 apricots halves on top.
BROWN SUGAR APRICOTS WITH VANILLA YOGURT

- Prepare grill for cooking. If using a charcoal grill, open vents on bottom of grill and on lid.
- Arrange apricots, cut sides up, in disposable roasting pan and sprinkle with brown sugar, patting and pressing with fingers to help evenly adhere.
- When fire is low (you can hold your hand 5 inches above rack for 4 to 5 seconds), cook apricots in pan, covered with grill lid, without turning, until sugar is melted and apricots are softened, about 5 minutes.
- Serve apricots with yogurt on the side.
DRIED FRUIT STEWED WITH BROWN SUGAR AND VANILLA

Boil liquid until reduced to 1 cup, returning liquid exuded from fruit to saucepan, about 10 minutes. Pour liquid over fruit, discarding orange slices. Serve warm, room temperature or chilled, topping with dollop of yogurt and dusting of cinnamon.
BROWN SUGAR YOGURT PIE
I don't remember where I found this recipe, but it truly was a great find. This is rich and gooey and sweet and even a little healthy with the yogurt. I use low fat plain yogurt, but you can really use any plain yogurt that you like.

- Preheat oven to 350 degrees fahrenheit.
- Place brown sugar and flour in a large mixing bowl.
- Rub the mixture between your fingers until smooth, breaking all all the clumps.
- In a separate mixing bowl, lightly beat the eggs and egg yolk.
- Whisk eggs into sugar mixture along with vanilla extract, yogurt, and melted butter until well blended.
- Pour into pie shell and place on cookie sheet.
- Bake for 35-40 minutes.
- When pie is done, it will be slightly puffy and wobbly in the center.
- If center is wavey, bake for 5 minutes more.
- Cool pie on rack then refrigerate loosely covered with foil.
