Steps:

  • Fill a mixing glass with ice. Add the chocolate liqueur, creme de cacao, and whipped vodka. Stir quickly to chill, about 20 seconds.
  • Strain the cocktail between 2 martini glasses. Garnish with brownie bite pieces skewered onto cocktail picks.

  • Place the 1 cup of crushed ice into a cocktail shaker. Pour in the vermouth and swirl it around, making as much contact as possible with the ice. Using a strainer, pour the vermouth out. Add the gin and stir well to combine.
  • Remove the ice from your serving glass and add the olive. Using the strainer, pour the gin into the serving glass.

185g unsalted butter , cubed
185g dark chocolate , roughly chopped
3 large eggs
275g golden caster sugar
85g plain flour
40g cocoa powder
1 tsp espresso powder mixed with 1 tbsp water
16 chocolate balls or truffles with soft centres, dark, white or milk chocolate or coffee-flavoured
60ml freshly brewed very strong coffee or 2 shots espresso
3 tbsp golden caster sugar (more if you'd like the sauce sweeter)
150ml double cream
½ tbsp cornflour
30ml vodka

Steps:

  • Tip the butter into a heatproof bowl with the dark chocolate. Fill a small pan about a quarter full with boiling water, then sit the bowl on top, not touching the water. Put over a low heat until the butter and chocolate have melted, stirring occasionally. Remove the bowl from the pan and leave the melted mixture to cool to room temperature.
  • Heat the oven to 180C/160C fan/gas 4. Line a shallow 20cm square brownie tin. Using an electric whisk, whisk the eggs and sugar until they are thick and creamy and doubled in volume. This can take 3-8 mins, depending on how powerful your whisk is. Pour the cooled chocolate mixture over the eggy mousse, then gently fold together with a spatula, moving the bowl round after each folding so you can get at it from all sides, until the two mixtures are one and the colour is a dark brown. Try not to knock the air out.
  • Sieve the flour and cocoa over the eggy chocolate mixture along with a good pinch of salt. Gently fold in this powder as well as the espresso mixture using the same figure-of- eight action as before. The mixture will look dry and dusty at first; keep going until it looks fudgy, but don't overdo this mixing. Pour the mixture into the tin and gently ease the mixture into the corners of the tin and paddle the spatula from side to side across the top to level it. Push the chocolate balls into the brownie at regular intervals.
  • Bake for 30 mins or until the top has a shiny, papery crust and the sides are just beginning to come away from the tin. Remove from the oven. If you are serving these as a dessert, leave to cool a little.
  • To make the sauce, heat the coffee and sugar together until the sugar dissolves. Mix a little of the cream with the cornflour, then add to the pan with the remaining cream. Bring to a simmer and stir over a medium heat until thickened. Add the vodka and turn off the heat. Serve each square of brownie with the sauce poured over.

1/3 cup granulated sugar

Steps:

  • Heat oven to 375°F Grease bottom only of 13x9-inch pan with shortening or cooking spray. Make brownie mix as directed on box, using water, oil and eggs. Pour half of batter into pan.
  • In small bowl, stir remaining ingredients except powdered sugar until smooth. Drop cheese mixture by spoonfuls onto brownie batter. Pour remaining brownie batter over cheese mixture. Swirl cheese mixture through brownie batter with knife for marbled design.
  • Bake 30 to 35 minutes or until toothpick inserted 2 inches from side of pan comes out clean or almost clean; cool. Sprinkle with powdered sugar. For brownies, cut into 6 rows by 4 rows. Store covered in refrigerator.

I love using Dutch-process cocoa powder because it has a more intense dark chocolate flavor than natural cocoa powder, but if you like your brownies more on the milk-chocolate side, then natural cocoa will work just fine!

2 sticks (1 cup; 227 grams) unsalted butter
1 cup (125 grams) all-purpose flour
1 cup Dutch-process cocoa powder
5 large eggs, chilled
1 1/4 teaspoons kosher salt
2 cups packed (426 grams) dark brown sugar
1 tablespoon pure vanilla extract or vanilla paste
5 ounces (140 grams) bittersweet chocolate (72% cacao or higher), chopped (bars, chips, discs or pistoles)

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Spray a 9-by-13-inch baking dish, preferably metal, with nonstick spray. Line with parchment paper, leaving a 2-inch overhang on the 2 long sides. Lightly coat with nonstick spray.
  • Cook the butter in a medium skillet over medium heat, stirring often, until it foams, then browns, 5 to 8 minutes. Remove from the heat, set aside and let cool slightly.
  • Sift the flour and cocoa powder through a fine-mesh sieve into a medium bowl and set aside.
  • Beat the eggs and salt in the bowl of a stand mixer fitted with the whisk attachment on high speed until the eggs begin to foam, about 1 minute. Add the brown sugar and vanilla and continue to beat on high until slightly thickened and creamy, about 1 minute. Reduce the speed to medium-low and slowly pour in the cooled butter (it should still be fluid, but below 125 degrees F or you will cook the eggs) on the side of the bowl so it doesn't splatter. Increase the speed to high and beat until thick and creamy, about 2 minutes. This step is what will give you that shiny, crackled surface on the top of your brownies. Gradually add the cocoa powder mixture and beat until just combined (do not overmix). Scrape the sides and bottom of the bowl with a rubber spatula and continue folding the batter until completely combined.
  • Scrape half of batter into the prepared pan. Top with the chocolate, then scrape in the remaining batter to cover and smooth the surface. Bake until the top forms a crust, the brownies are just barely firm and an instant-read thermometer inserted in the center registers between 200 degrees F (for fudgy brownies) and 205 degrees F (for cakey brownies), about 25 minutes; or up to 35 minutes, if using a glass or ceramic baking dish. (Don't let the thermometer touch the bottom of the pan or you will get a much higher reading.)
  • Let the brownies cool completely to allow the crumb to set before slicing, 3 hours.
  • Use an offset spatula to loosen the brownies from the sides of the pan. Use the parchment overhang to lift brownies out of the pan and cut into 12 squares.
