3 quarts vegetable oil
1/2 cup hot sauce, preferably Frank's RedHot
1/2 stick (4 tablespoons) unsalted butter
1/2 teaspoon cayenne pepper
24 frozen potato cheese pierogies
1/2 cup sour cream
1/4 cup crumbled blue cheese
1/4 cup mayonnaise
1/8 cup whole milk
1/2 teaspoon cider vinegar
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Heat the oil in a large Dutch oven (making sure it is no more than two-thirds full) to 375 degrees F.
  • As the oil comes to temperature, make the buffalo sauce. Combine the hot sauce, butter and cayenne in a small saucepan over medium heat; keep warm.
  • Fry the pierogies in two batches of 12. (The oil will pop and foam at first, but will settle in about 1 minute. Watch the temperature to try to maintain the heat, as frozen pierogies will initially drop the temperature by about 30 degrees.) Fry until golden brown, about 6 minutes, then drain on a sheet tray lined with a wire rack. While the pierogies are still warm, toss them in the buffalo sauce and serve on platter drizzled with the Blue Cheese Dressing.
  • Combine the sour cream, blue cheese, mayonnaise, milk, vinegar, salt and pepper in a bowl.

5 cups all-purpose flour
1 teaspoon salt
1 cup water
3 large eggs
1/2 cup butter, softened
FILLING:
4 medium potatoes, peeled and cubed
2 medium onions, chopped
2 tablespoons butter
5 ounces cream cheese, softened
1/2 teaspoon salt
1/2 teaspoon pepper
ADDITIONAL INGREDIENTS (for each serving):
1/4 cup chopped onion
1 tablespoon butter
Minced fresh parsley

Steps:

  • In a food processor, combine flour and salt; cover and pulse to blend. Add water, eggs and butter; cover and pulse until dough forms a ball, adding an additional 1 to 2 tablespoons of water or flour if needed. Let rest, covered, 15 to 30 minutes., Place potatoes in a large saucepan and cover with water. Bring to a boil over high heat. Reduce heat; cover and simmer until tender, 10-15 minutes. Meanwhile, in a large skillet over medium-high heat, saute onions in butter until tender; set aside., Drain potatoes. Over very low heat, stir potatoes until steam has evaporated, 1-2 minutes. Press through a potato ricer or strainer into a large bowl. Stir in cream cheese, salt, pepper and onion mixture; set aside., Divide dough into 4 parts. On a lightly floured surface, roll 1 portion of dough to 1/8-in. thickness; cut with a floured 3-in. biscuit cutter. Place 2 teaspoons of filling in center of each circle. Moisten edges with water; fold in half and press edges to seal. Repeat with remaining dough and filling., Bring a Dutch oven of water to a boil over high heat; add pierogi in batches. Reduce heat to a gentle simmer; cook until pierogi float to the top and are tender, 1-2 minutes. Remove with a slotted spoon. In a large skillet, saute 4 pierogi and onion in butter until pierogi are lightly browned and heated through; sprinkle with parsley. Repeat with remaining pierogi. Freeze option: Place cooled pierogi on waxed paper-lined 15x10x1-in. baking pans; freeze until firm. Transfer to an airtight freezer container; freeze up to 3 months. To use, for each serving, in a large skillet, saute 4 pierogi and 1/4 cup chopped onion in 1 tablespoon butter until pierogi are lightly browned and heated through; sprinkle with minced fresh parsley.

½ small head cabbage, chopped
1 large onion, thinly sliced
2 tomatoes, chopped
1 tablespoon vegetable oil
2 teaspoons white wine vinegar
½ teaspoon white sugar

1 (16 ounce) package frozen potato and cheese filled pierogies, thawed

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, reserving drippings, and set aside.
  • Heat bacon drippings over medium heat and stir in cabbage and onion; cover and cook for 10 minutes.
  • Stir in tomatoes, vegetable oil, vinegar, sugar, salt and bacon; cook uncovered for 5 minutes.
  • Meanwhile, prepare pierogies according to package directions; drain. Combine pierogies with cabbage mixture and serve.

5 lb(s) potatoes, peeled
2 tsp salt
2 cups sharp Cheddar cheese, finely grated
½ tsp pepper
2 tbsp canola oil
2 tsp salt
2 cups water
1 kilogram flour

Steps:

  • Boil potatoes in a large pot with 2 tsp of salt for 45 minutes or until soft and tender. Drain water.
  • Using a food processor bowl with a paddle attachment, transfer the boiled potatoes, finely grated cheddar cheese and pepper and mix at low speed until mostly cooled.
  • If desired, add additional ingredients to your potatoes during the cooling process such as bacon, fried onions, dill and cottage cheese.
  • If you don't have a food processor, use a masher and/or wooden spoon to break up potatoes if need be and lightly mix in the ingredients.
  • Give filling sufficient time to cool completely. Overnight in the fridge would be best.
  • Add the oil, salt and water to food processor bowl. Next, in a table-top mixer, add flour and mix with dough hook for 7-10 minutes, until dough ball is well formed.
  • Place the dough ball on a floured surface. Cut a small piece you are comfortable working with. Begin to knead with floured hands. The dough should not feel wet, dust in a bit extra flour if needed. Roll out dough to ⅛ inch thickness.
  • With a small cup, cut perogy circles by hand or with a pastry tool. Save excess dough to knead in with remaining dough ball.
  • Set aside for assembly.
  • Stretch dough circle in your hand to create a small pocket.
  • Hold dough circle in one hand and fill with a tablespoon of filling.
  • Fold circle around filling and pinch edges together. Ensure no spaces or gaps on the pinched edges or filling will come out. Ensure a good seal.
  • Cover a baking sheet with a dish towel and lay pinched perogies on top. Freeze overnight or cook immediately.
  • Fill pot with water and wait until it's at a rapid boil. Add perogies to pot and stir well ensuring that the perogies don't stick to each other or the pot.
  • Once perogies float to the top, wait another minute and remove (approximately 7 minutes).
  • Put cooked perogies into a margarine bath before serving. (Alternately pan fry perogies in butter.)
  • Garnish with your choice of fried onions, bacon bits, sour cream and mushroom-dill sauce.

20 frozen potato-cheese pierogies (about 28 oz; not thawed)
3 tablespoons olive oil
6 bacon slices (6 oz), chopped
1 large onion, halved lengthwise, then thinly sliced crosswise
4 garlic cloves, chopped
1 1/2 lb Savoy cabbage, halved, cored, and thinly sliced (8 cups)
1/2 cup water
1/4 teaspoon salt
1/3 cup chopped fresh dill
Accompaniment: sour cream

Steps:

  • Parboil pierogies in a 6- to 8-quart pot of boiling salted water , uncovered, stirring occasionally, 1 minute less than package instructions indicate (pierogies will not be completely cooked). Transfer with a slotted spoon to a colander to drain. Pat dry.
  • Heat 1 tablespoon oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté half of pierogies, turning over once, until golden, about 4 minutes per batch. Transfer to a large platter and keep warm, loosely covered with foil. Add 1 tablespoon oil to skillet and sauté remaining pierogies in same manner, transferring to platter.
  • Cook bacon in same skillet over moderately high heat, stirring occasionally, until crisp and golden, 6 to 8 minutes, then transfer to paper towels to drain.
  • Pour off all but 1 tablespoon fat from skillet, then add remaining tablespoon oil and sauté onion over moderately high heat, stirring, until golden, about 8 minutes. Reduce heat to moderate, then stir in garlic, cabbage, water, and salt and cook, covered, stirring occasionally, until cabbage is tender, 5 to 7 minutes. Transfer to platter with pierogies and sprinkle with bacon and dill.

1 package frozen mrs. t's pierogi

Steps:

  • Mix the first 3 ingredients together.
  • Toss the frozen pierogis with the sauce.
  • Spray a baking sheet with nonstick cooking spray.
  • Spread the pierogis on the pan and bake at 400F for 20 minutes, turning once after 10 minutes. Serve with blue cheese dressing.
