GRILLED HAM STEAK WITH SOUTHWESTERN RUB
Ask the butcher to cut the ham steaks for you for the tastiest, easiest dinner you've made in a long time (try it for brunch, too!) This dish is deliciously simple, so pick a simply elegant wine. Try a Chablis Premier Cru, which is a Chardonnay unadorned with oak--go for a select vineyard. The spicy ham will benefit from the wine's medium body, long finish, and thirst-quenching acidity. Try a Festbier from Germany; particularly a Marzen lager. The sweeter malts and diminished hoppiness will bring out the subtly sweet flavors of the ham and the earthy spiciness of the rub. Serve with some mashed sweet potatoes and fresh blanched green beans, if desired.

GRILLED STEAK SKEWERS WITH HORSERADISH
Provided by Trisha Yearwood
Time 1h30m
Yield 6 skewers
Number Of Ingredients 15
Steps:
- For the steak skewers: Assemble the marinade by combining the soy sauce, vegetable oil, horseradish, rice wine vinegar, ginger and honey in a bowl. Put the sirloin in a large ziptop bag and pour the marinade over the meat. Gently massage the meat and place in the refrigerator for a minimum of 1 hour.
- In the meantime, prepare for the skewer assembly. Put the wooden skewers in a shallow bowl of water and soak for 1 hour. This will prevent burning on the grill. Discard the water after soaking.
- Prep the scallions by slicing the white and light green parts into 1-inch pieces. Set aside for the skewers. Then, slice the dark green tops and set aside for the sauce.
- For the horseradish sauce. In a mixing bowl, combine the mayonnaise, horseradish, hot sauce and Worcestershire. Stir in the salt, ginger and reserved scallion tops. This can be stored in an airtight container in the refrigerator. When ready to serve, pour the horseradish sauce in a small bowl and garnish with a few more pieces of scallions on top.
- Preheat a grill or grill pan over medium-high heat. Spray with nonstick cooking spray.
- Slide 4 to 5 cubes of beef onto each skewer, alternating with pieces of scallion (discard the marinade). Grill until browned and crispy, 3 to 4 minutes on each side. Serve warm alongside the horseradish sauce for dipping.

Steps:
- Mix all of the marinade ingredients together in a bowl and pour it into a large gallon-sized resealable plastic bag. Add the steak and turn to make sure it is completely covered by the marinade. Refrigerate for at least 2 hours and up to 12, turning the bag occasionally.
- Melt the butter in a heavy bottomed saucepan over medium heat. Once melted add the flour and stir until it becomes a light blonde color. Slowly whisk in milk. Bring the milk up to a simmer while stirring. Once at a simmer, stir in the cheese, a handful at a time. Season with salt and pepper, to taste. Keep warm until ready to use.
- Preheat the grill to medium-high heat.
- Toss green onions in a bowl with olive oil, and salt and pepper, to taste.
- Remove the steak from the marinade and let the excess drain off. Grill the steak for 5 to 7 minutes per side for medium-rare and about 8 to 10 minutes for medium. Remove the steak from the grill to a cutting board and allow it to rest for 10 minutes before slicing.
- While the steak rests, put the green onions and baguettes on the grill. Cook the green onions until charred and soft, about 4 minutes, and toast the bread until golden.
- To assemble, slice the steak, at a 45 degree angle, into very thin slices across the grain. Put some of the steak on the bottom of each roll, top with some grilled green onions, and smother with provolone cheese sauce. Cover with the top of the roll and serve.

Steps:
- For the steak: Prepare a grill for medium-high heat.
- Season the steak generously on all sides with salt, pepper and either olive oil or canola oil. Add the steak to the grill and cook until it releases from the grill, about 5 minutes. Flip and cook until desired doneness, another 3 to 4 minutes for 120 to 125 degrees F. Remove to a plate, sprinkle evenly with the Parmesan and cover loosely with aluminum foil. Rest for 10 minutes before slicing.
- For the topping: In a large pan on medium heat, add 2 tablespoons olive oil and the bacon. Cook, stirring, until the bacon is crisp, about 5 minutes. Remove with a slotted spoon to a paper towel-lined plate. Add the mushrooms to the pan and cook until wilted and tender, 3 to 5 minutes. Season the mushrooms with salt and pepper, remove with a slotted spoon to a large bowl and add the reserved bacon to the bowl. If more oil is needed in the pan, add a tablespoon, then add the onions. Cook, without stirring, until the onions begin to char. Stir the onions and continue to cook until tender, 5 to 8 minutes. Remove to the bowl. Add a little oil to the pan, then add the bell peppers and Italian seasoning and stir to combine. Cook until slightly tender, 3 to 5 minutes, then remove to the bowl. Add the tomatoes and red chile flakes to the pan and cook until the tomatoes begin to burst, 5 to 8 minutes. Transfer to the bowl as well. Toss the mixture together with the basil and serve on top of the sliced steak.

THE BEST GRILLED STEAK EVER!
I have tried about 20 grilled steak recipes here, and none beat my old tried and true recipe. It is the result of years of experimentation, and is the best. I tried another Zaar recipe tonight, and I have decided to try and post mine here. Some of the ingredients are regional spices, so I'm not sure if I can post it, but I will do the best I can. This is absolutely the best grilled steak I have ever eaten! Please note: this is best made on a charcoal grill, gas is okay, but charcoal is best!! If you really want a smokey flavor, add hickory chips and cover the grill during the last few minutes!

Steps:
- Mix the balsamic vinegar, olive oil, greek seasoning, and southern flavoring together.
- Place steaks in a shallow pan. Pour above mixture over the steaks. Turn to coat. Leave on the counter at room temperature. This is very important. It allows your meat to relax and absorb the marinade. This makes for the most tender and juicy of steaks!
- Place desired amount of charcoal in the bottom section of your grill. Squirt some lighter fluid on it. Light your charcoal after waiting a couple of minutes. Let the coals reach a medium high temp -- this should take about 20-25 minutes. Spread your coals evenly. This recipe is best on a charcoal grill, but you can use gas.
- Place the steaks on the grill. Cook about 4 minutes on each side. Cook according to your preferences -- medium, medium-rare, well done, etc.
- 4 minutes on each side should produce a medium or medium-rare steak at 1 to 1 1/2 inches thick.

38 GRILLED STEAK RECIPES PERFECT FOR A SUMMER COOKOUT
From bonappetit.com
- Soy Sauce–Marinated Grilled Flank Steak and Scallions. Flank steak is flavorful but quite lean. To make sure it's as tender and juicy as possible, be careful not to overcook it (medium-rare is best) and be absolutely certain you’re slicing against the grain.
- Tri-Tip Steak With Tiger Bite Sauce. You need this spicy and deeply umami tiger bite sauce in your life. View Recipe.
- Porterhouse With Summer Au Poivre Sauce. Getting a porterhouse steak to a blushing, consistent medium-rare is a feat—but the key is to keep it moving. View Recipe.
- Skirt Steak With BA.1. Sauce. Supremely beefy, not outrageously expensive, and fast-cooking, skirt steak is our favorite steak of all. View Recipe.
- Lacquered Rib Eye. The umami-rich lacquer on this steak works its magic to create an über-savory capital-C Crust akin to the bark beloved by barbecue enthusiasts.
- Korean-Style Hasselback Short Ribs. This version of bulgogi is ideal for home grilling, featuring scored and marinated boneless short ribs that get cooked right on the grate.
- Coconut and Lemongrass Steak Skewers. More caramelization, more surface area to char, a quick cook time, and easy to share pieces are only a few of skewering’s advantages.
- Short Rib Tacos With Cilantro-Lime Slaw. Short ribs aren’t just for braising. Boneless short ribs in particular can be grilled like steak, but be sure to cook them to medium doneness, just long enough to render fat and tenderize, without letting them overcook or toughen.
- Party Steak with Grilled Scallion Salsa Verde. Skirt steak is our favorite choice when grilling for a crowd for two reasons: it feeds many and cooks in a jiffy.
- Grilled Strip Steak with Blistered Tomatoes and Green Beans. Good idea alert: Cooking half the tomatoes in a skillet on the grill lets you capture all their juices and turn them into a saucy condiment for the steak.
