1 teaspoon olive oil
1/2 medium onion, (chopped (about 1/2 cup))
1/2 cup diced carrots
1/2 cup diced celery
salt & pepper
1 pound lean ground chicken
8 oz. can of tomato sauce
1/4 cup hot sauce ((I used Frank's Red Hot. Use more or less, depending on how spicy you like it.))
1 Tablespoon Worcestershire Sauce
Greek Yogurt Blue Cheese Dressing (or your favorite blue cheese dressing, or crumbled blue cheese)
Greek Yogurt Ranch Dip (or your favorite Ranch dressing)
4 Rolls (for serving (see Note for other serving suggestions))

Steps:

  • Heat oil in a saute pan over medium heat.
  • Add onions, carrots, and celery, and a pinch of salt and pepper.
  • Cook for 5-6 minutes, or until onions are becoming translucent and vegetables are softening.
  • Add the ground chicken, and cook until the chicken is browned and coked through with no pink remaining, breaking up the meat as it cooks.
  • Stir in the tomato sauce, hot sauce, and Worcestershire, and simmer for several minutes, until heated through.
  • Spoon onto rolls or any of the other ideas for serving and top with blue cheese dressing or Ranch dressing or crumbled blue cheese for serving.

1-1/2 pounds lean ground chicken
1 celery rib, diced
1/4 teaspoon pepper
1/3 cup ketchup
1/4 cup Louisiana-style hot sauce
3 tablespoons brown sugar
1 tablespoon cider vinegar
2 teaspoons yellow mustard
12 Bibb or Boston lettuce leaves
Crumbled blue cheese, optional

Steps:

  • In a large cast-iron or other heavy skillet, cook and crumble chicken over medium-high heat 3 minutes. Stir in celery and pepper; cook and stir until chicken is no longer pink and celery is crisp-tender, 2-3 minutes., Stir in ketchup, hot sauce, brown sugar, vinegar and mustard; bring to a boil. Reduce heat; simmer, covered, until flavors are blended, about 5 minutes, stirring occasionally. Serve in lettuce leaves. If desired, top with cheese.Freeze option: Freeze cooled chicken mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth or water if necessary.

1 medium celery stalk
1 cup baby carrots
1 small white onion
1 Tablespoon olive oil
1 pound (450 grams) ground chicken
1 teaspoon garlic powder
1/2 cup buffalo sauce
1/2 cup ranch dressing

Steps:

  • In a food processor pulse together celery, baby carrots and onion. You want them very finely minced.
  • Heat a large skillet over medium-high heat. Add olive oil and minced vegetables. Saute for 5-8 minutes or until carrots and onions are translucent and tender.
  • Add ground chicken. Cook until ground chicken is cooked through. Turn heat down to low.
  • Stir in garlic powder and buffalo sauce. Simmer for 5 minutes or enough to cool the mixture down a bit before stirring in ranch dressing.
  • Spoon into your favorite lettuce for a lettuce wrap or on a gluten-free bun.

2 tablespoons extra-virgin olive oil
2 pounds ground chicken
1 onion, chopped
1 tablespoon minced garlic, or to taste
salt and ground black pepper to taste
¾ cup chicken stock
¼ cup hot buffalo wing sauce (such as Frank's® REDHOT Buffalo Wing Sauce), or to taste
2 tablespoons red wine vinegar
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
6 ounces Neufchatel cheese, softened
8 ounces shredded Cheddar cheese, or more to taste
8 hamburger buns, split
½ cup crumbled blue cheese

Steps:

  • Heat the olive oil in a large skillet over medium-high heat and stir in the ground chicken. Cook and stir until the chicken is crumbly, evenly browned, and no longer pink. Stir in the onion, garlic, salt and black pepper; cook until the onion has softened, about 7 to 8 minutes.
  • Combine chicken stock, Buffalo wing sauce, red wine vinegar, brown sugar, and Worcestershire sauce in a bowl. 1/4 cup mayonnaise
2 tablespoons milk
4-1/2 teaspoons lemon juice
