Steps:
- Heat oil in a saute pan over medium heat.
- Add onions, carrots, and celery, and a pinch of salt and pepper.
- Cook for 5-6 minutes, or until onions are becoming translucent and vegetables are softening.
- Add the ground chicken, and cook until the chicken is browned and coked through with no pink remaining, breaking up the meat as it cooks.
- Stir in the tomato sauce, hot sauce, and Worcestershire, and simmer for several minutes, until heated through.
- Spoon onto rolls or any of the other ideas for serving and top with blue cheese dressing or Ranch dressing or crumbled blue cheese for serving.

- In a large cast-iron or other heavy skillet, cook and crumble chicken over medium-high heat 3 minutes. Stir in celery and pepper; cook and stir until chicken is no longer pink and celery is crisp-tender, 2-3 minutes., Stir in ketchup, hot sauce, brown sugar, vinegar and mustard; bring to a boil. Reduce heat; simmer, covered, until flavors are blended, about 5 minutes, stirring occasionally. Serve in lettuce leaves. If desired, top with cheese.Freeze option: Freeze cooled chicken mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth or water if necessary.

- In a food processor pulse together celery, baby carrots and onion. You want them very finely minced.
- Heat a large skillet over medium-high heat. Add olive oil and minced vegetables. Saute for 5-8 minutes or until carrots and onions are translucent and tender.
- Add ground chicken. Cook until ground chicken is cooked through. Turn heat down to low.
- Stir in garlic powder and buffalo sauce. Simmer for 5 minutes or enough to cool the mixture down a bit before stirring in ranch dressing.
- Spoon into your favorite lettuce for a lettuce wrap or on a gluten-free bun.

- Heat the olive oil in a large skillet over medium-high heat and stir in the ground chicken. Cook and stir until the chicken is crumbly, evenly browned, and no longer pink. Stir in the onion, garlic, salt and black pepper; cook until the onion has softened, about 7 to 8 minutes.
- Combine chicken stock, Buffalo wing sauce, red wine vinegar, brown sugar, and Worcestershire sauce in a bowl.
