- Strain excess water from the tofu. I used a nut milk bag to squeeze most of it out. You could also use panty hose - just cut the leg off! - or a tofu press.
- In a blender, add tofu, sugar, coconut cream, nondairy milk, nutritional yeast, cornstarch, sea salt, turmeric, and scrap the inside of the vanilla bean, adding the paste to the blender.
- Blend until very smooth, then pour into a sauce pan. Heat it over medium low heat, whisking constantly to prevent lumps, until it's thickened and gelatinous - approximately 6 to 8 minutes.
- Divide evenly into ramekins and allow to cool at room temperature. Once they're somewhat cooled and still warm, but not piping hot, cover in plastic wrap and refrigerate at least 6 hours until firm or overnight.

- Combine the coconut milk, arrowroot powder, sugar, and cashews in a saucepan. Stir to combine. Bring to a simmer (low boil) over medium heat while stirring (this can take up to 3 to 5 minutes). Simmer for 1 minute. Remove from heat. Don't worry about lumps if they occur.
- Add the cream mixture to a high-speed blender. Add the nutritional yeast flakes, vanilla, and pinch of turmeric (for color). Blend until creamy.
- Pour the cream into 4 brûlée dishes or ramekins (or 8 smaller containers). Place in the fridge to set for at least 2 hours to overnight (the longer it sits the thicker the cream will become).
- Before serving, sprinkle the top of each with approximately 1 tablespoon granulated sugar and make sure the entire surface of cream has sugar over it. Use a kitchen torch to carmelize the sugar and create a crispy top coating. Serve immediately or refrigerate for up to an hour before serving.

- First, combine all of the ingredients in a blender and blend until smooth (you can whisk all the ingredients together by hand, just make sure the starch has fully dissolved).
- Whisking frequently, cook the mixture until it has thickened, and small bubbles appear at the sides of the pot (about 10 minutes). Only cook until bubbles form, DO NOT wait until the entire mixture is bubbling as this will overcook it.

- Drain and rinse cashews and place in a food processor or high-powered blender. Add water and and puree until completely smooth, scraping the sides as needed. Set aside.
- In a medium saucepan stir together almond milk, 1/2 cup of sugar, chickpea flour, cornstarch, salt, and vanilla beans with it's pulp. Heat over medium heat, stirring constantly. Bring to a low boil. At this point the milk mixture will start to become thick. Continue stirring, scraping the sides of the pot, allowing milk to boil for two minutes. This ensures that the cornstarch and chickpea flour are cooked. Remove from heat and let cool for 10 minutes.
- Once mixture has cooled slightly, remove vanilla beans and set aside. Add the thick milk mixture to the pureed cashews in the food processor. Blend until completely smooth. Pour evenly into ramekins. Cover with tin foil and refrigerate until chilled all the way through, at least 3 hours. At this point they could also remain in the refrigerator for 3-4 days.

- Pour into a medium-sized saucepan over medium-low heat. Whisking frequently, cook the mixture until it’s thickened, about 10 to 15 minutes. Do NOT let it come to a boil, and turn down the heat if necessary. You’ll know it’s ready when it’s thickened significantly and is a smooth, creamy texture, similar to pudding. You should see the trail of the whisk when you whisk the mixture.
- Divide between your prepared ramekins. Let cool for about an hour at room temperature, and then transfer to the refrigerator to firm up.
VANILLA CRèME BRûLéE - VEGAN YACK ATTACK

- Place all ingredients into a blender and puree for at least 30 seconds, making sure there are no powdery chunks in the liquid. Pour the mixture into a small sauce pan, over low heat (or medium-low if you have an electric stove like mine) and bring to a simmer.
- Whisk the mixture continually until it thickens, without becoming chunky. Test this by seeing if a thick layer will stick to a spoon or finger. It is crucial that it reaches a hot enough temperature or else it will not set properly.
- Get a casserole dish ready, along with either 4-2 oz. ramekins or 2-4 oz. ramekins. Place the ramekins in the casserole dish and fill it with water until it is half-way up the ramekins. Carefully pour the creme mixture into each ramekin, and transfer the dish to the oven, making sure not to splash the water.

- Add all of your crème ingredients into a food processor or blender and blend or process until completely smooth.
- Transfer the mixture into a saucepan over low heat, whisking constantly. Cook for a few minutes, until the mixture starts to thicken slightly and the cornstarch or agar are activated.
- Next, pour the mixture into ramekins or heat safe dishes and let chill in the fridge until set or ready to serve.
- When ready to serve, sprinkle the top of your ramekins or dishes with additional granulated sugar (roughly 1 tsp, more as needed) then use a butane torch to caramelize the sugar. Alternatively, you can pop the ramekins or dishes into the oven and broil until the sugar starts to brown.
