2 pounds ground turkey
5 tablespoons vegetable oil, divided
2 large green bell peppers, cut into strips
1 large red bell pepper, cut into strips
1 large yellow bell pepper, cut into strips
2 large onions, cut into 1/2 inch chunks
2 cups sofrito sauce
1 (15 ounce) can tomato sauce
4 medium potatoes, cut into 1/2 inch chunks
4 carrots, sliced
2 cups broccoli
5 cups water
1 cup salsa
16 ounces low fat mozzarella cheese, shredded

Steps:

  • Roll the ground turkey into small meatballs. Heat 1 tablespoon oil in a skillet over medium heat, and cook meatballs 5 minutes, or until evenly browned. Drain, and set aside.
  • Heat remaining oil in a large pot over medium heat, and cook the green bell peppers, red bell pepper, yellow bell pepper, and onions until tender. Stir in the sofrito and tomato sauce, and continue cooking until heated through. Mix in potatoes, carrots, and broccoli. Pour in the water and salsa, and bring to a boil. Place meatballs in the pot. Reduce heat to low, and simmer 30 minutes. Top with mozzarella cheese to serve.

1 boneless beef chuck roast (1 to 1-1/2 pounds)
1 envelope onion soup mix
2 teaspoons browning sauce, optional
1/2 teaspoon salt
1/2 teaspoon pepper
6 cups water
2 cups cubed peeled potatoes (1/2-inch pieces)
6 to 8 medium carrots, cut into chunks
1 medium onion, chopped
1 cup frozen peas, thawed
1 cup frozen corn, thawed, optional
5 tablespoons cornstarch
6 tablespoons cold water

Steps:

  • Place roast in a 5-qt. slow cooker; sprinkle with soup mix, browning sauce if desired, salt and pepper. Pour water over meat. Cover and cook on low for 8-10 hours or until meat is tender., Remove roast to a cutting board; let stand for 5 minutes. Add vegetables to slow cooker. Cube beef and return to slow cooker. Cover and cook on low for 1-1/2 hours or until vegetables are tender. , Combine cornstarch and cold water until smooth; stir into stew. Cover and cook on high for 30-45 minutes or until thickened.

1 large egg

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a rimmed baking sheet with cooking spray.

½ cup quick-cooking oats
½ cup minced white onion
½ cup sliced fresh mushrooms
1 ½ tablespoons minced fresh basil
1 ½ tablespoons minced fresh parsley
2 cloves garlic, minced
1 large egg, lightly beaten
1 teaspoon Worcestershire sauce
salt and ground black pepper to taste
1 pound 93% lean ground turkey
3 cups chopped butternut squash
2 cups chopped carrots
2 cups chopped mushrooms
1 cup chopped celery
1 cup chopped parsnips
1 medium red onion, chopped
2 cloves garlic, minced
1 bay leaf
6 cups chicken broth
⅔ cup dry white wine
1 cup frozen green peas
3 tablespoons cornstarch
2 tablespoons chopped fresh parsley

Steps:

  • Combine oats, onion, mushrooms, basil, parsley, and garlic in a large mixing bowl. Add beaten egg, Worcestershire sauce, salt, and pepper; stir to combine. Add turkey, and using a rubber spatula, stir and mash ingredients together evenly. Form into 27 to 30 meatballs, about 1 inch in diameter. Refrigerate for about 20 minutes.
  • Combine butternut squash, carrots, mushrooms, celery, parsnips, red onion, garlic, bay leaf, salt, and pepper in a 6-quart kettle or Dutch oven. Pour in broth and wine; mix to combine. Bring to a boil over medium high-heat. Reduce heat and simmer, uncovered, for 10 minutes. Make sure the liquid is at a true simmer, with small, intermittent bubbles.
  • Gently add meatballs one at a time, without stirring, as this will cause the meatballs to fall apart. Reduce heat to low. Cook until the bottoms of the meatballs begin to turn white, about 3 minutes. Gently turn meatballs to allow the other side to cook. Increase heat to medium-low and cook for about 10 minutes. Turn meatballs again, and continue to cook for about 15 minutes. Stir in frozen peas.
  • Test meatballs for doneness with an instant-read thermometer. The safe internal temperature for meatballs is 175 degrees F (79 degrees C).
  • If stew is too thin, remove about 1/2 cup of broth to a cup and allow to cool briefly. Briskly stir in cornstarch until there are no lumps. Gradually add slurry to the stew, stirring constantly, and cook until the broth has thickened, 3 to 5 minutes. Garnish with fresh parsley before serving.

1 (16 ounce) package frozen cooked meatballs (*I like Italian style, but any will do)
8 ounces frozen mixed vegetables (*I like Italian-style, with broccoli, red peppers, etc)
1 (12 ounce) jar mushroom beef gravy
1 (14 1/2 ounce) can diced tomatoes, with italian flavoring or 1 (14 1/2 ounce) can garlic, undrained
1/3 cup water
1 1/2 teaspoons dried basil, crushed
1 teaspoon garlic powder
1 cup frozen corn or 1 (29 ounce) can corn, drained
chopped mushroom (optional)
parmesan cheese

Steps:

  • In 4-quart crock pot, place frozen meatballs and frozen vegetables. In a bowl, stir together tomatoes, gravy, water and seasonings; pour over meatballs & vegetables.
  • Cover and cook on low-heat for 6-8 hours or high-heat for 4 hours.
  • Add corn and mushrooms, if using (I use jarred OR fresh) about 30 min before serving.
  • I usually sprinkle a little parmesan cheese on top of each serving.

1/2 pound lean ground beef
2 eggs, beaten
1/2 cup fine dried bread crumbs
1/4 cup milk
2 tablespoons grated Parmesan cheese
1 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon garlic powder
6 carrots, peeled and cut into bite size pieces
1 (6-ounce) can tomato paste
1 cup water
1/2 teaspoon oregano
1/2 teaspoon basil
1 cup beef bouillon
1 teaspoon seasoned salt
1 (16-ounce) bag frozen italian mixed vegetables

Steps:

  • Mix first 8 ingredients and form into firm meatballs, set aside. Place the bite size pieces of carrots into the bottom of the crockpot and place meatballs on top. Mix all the rest of the ingredients (except Italian vegetables) together and pour on top of the meatballs. Cover and cook on LOW for 4 to 6 hours. Add the thawed Italian vegetables and turn the crockpot to HIGH. Cover and continue to cook on HIGH for 1/2 hour, or until the vegetables are done. Serve with pasta of your choice.

  • Partially thaw vegatables. Mix ground beef with 1/4 C water and all ingredients, except tomatoes and frozen vegetables. Lightly shape into 2 inch meatballs. Brown meatballs in skillet, and place in crockpot. Pour stewed tomatoes over meatballs. Stir gently to mix. Cover and cook on LOW 4-6 hours.Turn to HIGH. Add green beans and mixed vegetables. Cover and cook for 30 minutes or until vegetables are tender. Check and correct seasonings as required.
