LENTIL SHEPHERD'S PIE WITH CELERIAC & BUTTER BEAN MASH
Lighten up a family favourite with this vegetarian shepherd's pie - mash celeriac and white beans with cream cheese for a low-GI topping

Steps:
- Boil the celeriac until tender when tested with the point of a knife, adding the beans for the final 5 mins of cooking. Drain and roughly mash with the cream cheese until the cheese is well mixed, but the veg is still a little chunky.
- Meanwhile, tip the lentils into a pan with the leeks, celery and stock cube. Pour in the red wine and 600ml water, and add the tomato purée and thyme. Bring to the boil, cover the pan and simmer for 20-25 mins until the lentils are soft and pulpy. Towards the end of cooking, add a splash more water if they are drying out.
- Heat oven to 200C/180C fan/gas 6. Spoon the lentils into the base of 4 individual pie dishes, then top with the celeriac mash, smoothing it to the edge of the dishes. Bake for 35 mins until bubbling and golden, then serve with a green veg such as broccoli, if you like.

BUTTER BEAN MASH
Creamy and versatile, this butter bean mash is packed with fibre and quicker and easier to prepare than standard potato mash. The default recipe serves 2 as a moderate side or 1 as a very substantial side. Nutrition information is based on 2 servings.

Steps:
- Drain the butter beans in a colander and rinse well.
- Heat the olive oil in a saucepan over a medium-high heat. Add the onions and gently fry until softened - around 4-5 minutes. Add the garlic to the pan and cook for a further minute.
- Add the beans to the pan along with the water. Season well and bring to a simmer. Cover and simmer for 10 minutes.
- Use an immersion blender to blitz the beans into a smooth paste. You can alternatively transfer to a food processer (you may have to work in batches).
- Stir the chives into the mash and season to taste, if needed.

CELERIAC MASH
An easy, delicious way to use celeriac or even make mashed potatoes a little more exciting. Can make a low fat version by using low fat milk and cutting back on the butter. Adapted from Bon Appetite.

- Place the celeriac cubes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer 12 minutes. Add the potatoes, and continue boiling until the vegetables are very tender, about 15 minutes more. Drain and allow to steam dry for a minute or two.
- Return the vegetables to the pot, and stir over medium-high heat until liquid is no longer pooling from the vegetables. Remove from the heat, and pour in the cream and butter. Mash with a potato masher until almost smooth.

BUTTERBEAN AND CELERIAC MASH
A change from standard mash and full of heartiness!

Steps:
- Bring a large pan of boiling water to the boil.
- Add the celeriac and simmer for 20 mins until soft.
- Drain well and place in a bowl with the butterbeans, butter and yoghurt. Season with a pinch of salt and plenty of black pepper.
- Mash until smooth and creamy, then sprinkle with parsley.
CELERIAC MASH
Steps:
- In a small sauce pot place celeriac, add water to cover. In separate pot place potato with water to cover. Place half the onion in each pot and simmer until each is fork tender. Strain liquid and place all ingredients in a food processor. Puree until mash has a smooth consistency. Season with salt and pepper to taste.
SPICED CELERIAC AND BUTTER BEAN SOUP
A beautiful aromatic soup made from the rather odd-looking celeriac, creamy butter beans, and a simple but tasty seasoning to give the hearty dish its bite.

Steps:
- Warm the oil in a large pan, then fry the onion and garlic for three-four minutes until softening.
- Add the celeriac and mix ingredients well. Cook for a minute or so.
- Pour in just over half of the vegetable stock, and sprinkle in the cumin powder.
- Cover, reduce heat and cook for fifteen minutes, until celeriac is quite tender. Add half of the remaining stock, and leave to cool (roughly 30-40 minutes).
- Pour in the rest of the stock, then using a food processor or a hand-blender, puree the mixture to a smooth consistency.
- Transfer back to the pan, reheat and add the butter beans. Stir well, and season with freshly ground black pepper and a little cumin to taste.

CELERIAC AND APPLE MASH
This recipe sounds really good to me but I have never tried it. It came from a Thanksgiving Living magazine. The serving size is just a guesstimate.

Steps:
- Bring stock, water, celeriac, potatoes, apple, shallot, bay leaf, and 1 teaspoon salt to a boil in a large pot.
- Cook until tender (about 10 minutes).
- Strain, reserving liquid; discard bay leaf.
- Coarsely mash with with a potato masher.
- Using a fork, mash together butter and blue cheese in a small bowl.
- Stir into celeriac mixture.
- Season with salt.
- Spoon into a warm serving bowl, and crumble blue cheese on top.
- note: mash can be made up to an hour ahead; transferred to a heatproof bowl, cover, and set over a pan of barely simmering water).

- Peel the celeriac and chop off any knobbly bits. If your celeriac is covered in mud you might prefer to do this in the sink. Cut into similar sized pieces.
- When cooked drain and return to the pan. Add the butterbeans and the olive oil or spread and mash well. You won't get it completely smooth but it has a nice texture so don't worry too much.
