BUTTERED PEAS AND LETTUCE WITH TARRAGON
Braised peas and lettuce is a classic French dish that can be a first course or a side dish; it goes well with lamb or fish.

Steps:
- Combine the broth, shallot, 1/2 tsp. salt, and 1/4 tsp. pepper in a 12-inch skillet. Cover and bring to a boil over high heat. Turn the heat to low, add the peas and tarragon, then top with the lettuce. Cover and simmer, stirring twice, until the peas and lettuce are tender, about 5 minutes. Stir in the butter, season to taste with salt and pepper, and serve.

BRAISED LETTUCE WITH PEAS
Do try this - it's melting and nutty flavoured, with sweet peas and just a hint of cream

Steps:
- Melt the butter in a large sauté pan with a lid. Fry the onion gently for about 5 mins, until softened. Meanwhile, pull any damaged or coarse outer leaves from the lettuces and trim the bases. Cut the lettuces in half lengthways, through the base.
- Place the lettuce cut-side up on top of the onions and cook for half a minute, then turn over and cook for another 30 secs. Pour over the stock and lightly season. Put the lid on the pan, reduce the heat to the minimum and cook for 10 mins.
- With a slotted spoon, lift the lettuces out and put into a sieve over a bowl. Raise the heat under the pan and boil the juices until reduced by half. Add the cream or crème fraîche and petits pois and boil for 1 min until heated through. Arrange lettuces in a serving dish and pour over the pea-and-cream sauce.

BASIC BUTTERED PEAS

- Shell the peas if using fresh peas, if using frozen defrost fully before cooking. Bring the water to a rapid boil. Stir in the salt and add the peas. Boil the peas for 1 minute or until they are cooked. Drain the peas when done and add peas to a wide skillet over high heat. Toss in pan until fully dry. Add butter and salt and pepper to taste. Add any optional additions if you choose, and combine.

- Melt the butter in a saucepan, add the peas, lettuce hearts, bouquet garni, salt, sugar and water. Simmer with the lid on for 40 minutes. Remove the lettuce and strain the peas, reserving the liquid. The amount of liquid should be very little but reduce it to about 2 tablespoonfuls, whisk in the cream and pour over peas. Cut lettuce hearts into quarters and place on the peas.

- Bring salted water to a rolling boil in a saucepan over high heat. Add peas. Cook until tender, about 5 minutes. Drain and set aside.
- Reduce heat to medium and add butter to saucepan. Stir in radishes; cook, stirring often, until translucent, about 3 minutes.
- Transfer radishes to a plate and return drained peas to pan. Mash peas lightly or until desired consistency with a potato masher. Stir in radishes and mint. Season with Parmesan cheese, salt, and black pepper to taste.

BUTTERED PEAS

- The easiest, and maybe the best, way to serve tender shelling peas is to shell them and then cook them in 1/2 inch or so of salted boiling water. Peas take longer to cook than you might expect; I find they take around 4 minutes. Keep tasting them, and drain them when they are done to your liking. Put a large pat of butter on them and a sprinkle of salt, stir together, and serve immediately. If you have it available, chervil is wonderful chopped and stirred in. A slice or two of prosciutto or other ham can be julienned and stirred in with the butter, which makes a lovely pasta sauce for fresh or dried egg noodles. Another way to cook peas, one dear to the French, is to heat the water, then add salt and a few butter lettuce leaves along with the peas. When the peas are tender, swirl in butter to make a sauce around the peas and lettuce. The peas can also be cooked in olive oil instead of butter.
- All of these ways of cooking shelled peas apply to sugar snap peas. Cook them whole, or cut in half lengthwise or diagonally so that they mix well with sauce.

- Slowly heat the butter(he says a nob of butter not a TB) and a good glug of olive oil in a pan.
- Add the flour and stir around.
- Slowly add the stock.
- Turn up the heat and add the spring onions, peas and lettuce with a pinch of salt and pepper.
- Put the lid on and simmer for five minutes or until tender.
- Salt and pepper to taste, squeeze in a bit of lemon juice, and drizzle with oil. Serve!
