Sunny's Butterflied Grilled Turkey with Lemon Pepper Glaze image

1 bunch fresh sage
1 bunch fresh thyme
1 lemon, halved
1/4 cup kosher salt
1/2 teaspoon whole black peppercorns
One 14- to 16-pound turkey
1 stick unsalted butter, cold and cut into small chunks (half the size of dice)
Olive oil, for drizzling
Kosher salt and coarsely ground black pepper
1/4 cup olive oil
1 tablespoon coarsely cracked black pepper
1/4 cup honey
1 tablespoon Worcestershire sauce
Zest and juice of 2 lemons (about 1/2 cup juice)

Steps:

  • For the brine: Combine the sage, thyme, lemon, salt, peppercorns and 1 1/2 gallons water in a large pot over medium-high heat. Bring to a boil, then lower the heat to a simmer and cook until the salt is dissolved and the water is fragrant. Turn off the heat and let cool completely.
  • Place the turkey in a roasting bag, large plastic bag or bowl large enough to fit it with still more space to give. Pour in the brining liquid and seal or cover. If there's not enough room for all of the liquid in the brine, be sure to at least include the herbs, lemon and peppercorns. Refrigerate at least overnight or up to 3 days. When ready to cook, remove from the refrigerator and discard all of the brining liquid and solids.
  • For the turkey: Pat the turkey dry with paper towels. Place the turkey cavity-side down on a wire rack resting in a roasting/baking dish and allow to sit on the countertop for about 2 hours to come to room temperature.
  • Using kitchen shears or a knife, cut the backbone of the turkey out and break the breastbone to open up and flatten the bird by gently pressing down with the skin-side up. Flip over and pat dry. Using your finger, gently release the skin from the muscle of the turkey and insert the butter pieces between the skin and meat all over the bird. Drizzle with olive oil and sprinkle the skin with salt and pepper.
  • Preheat the grill to 400 degrees F.
  • Place the turkey over direct heat skin-side down. Lower the heat to 350 degrees F and close the lid of the grill. Cook until the turkey releases from the grates and reveals grill marks, about 20 minutes.
  • Meanwhile, make the glaze: Heat the olive oil and black pepper together in a large nonstick pan over medium heat. Steep over medium heat until the oil smells and tastes like pepper, 6 to 8 minutes. Add the honey, Worcestershire sauce, lemon zest and lemon juice to the same pan. Raise the heat to medium-high and cook, stirring occasionally, until the mixture begins to simmer and slightly reduce. Remove from the heat and rest until it tightens a bit, about 2 minutes.
  • Flip the turkey and glaze the skin with the lemon pepper glaze. Close the lid of the grill and continue to cook, glazing every 30 minutes, until an internal-read thermometer inserted in the thigh reads 160 degrees F, 1 to 2 hours. Remove the turkey form the grill and let rest at room temperature tented with aluminum foil for 30 minutes before carving.

¼ cup Diamond Crystal kosher salt
½ cup softened butter
¼ cup blend of fresh sage, thyme, and rosemary leaves (minced)

Steps:

  • Remove the innards from the turkey and reserve the neck and giblets for gravy or bone broth. Dry the turkey well with paper towels.
  • Grab a sharp pair of kitchen shears and start cutting from the tail-end open cavity along one side of the backbone until you reach the neck hole.
  • Once you've cut all the way through, cut along the other side of the backbone, and remove the spine. Add the backbone to the neck and giblets you're saving for gravy or broth.
  • Use a knife to make a shallow cut in the cartilage on the underside of the breastbone, and use your hands to firmly push the breasts flat like an open book.
  • Now, it's time to salt the bird. Use your fingers to loosen the skin away from the flesh. (Be careful but forceful; the skin is fairly elastic, and shouldn't tear unless you pierce it with sharp acrylic nails.) Rub salt directly onto the meat under the skin, as well on the outside and underside of the turkey. Loosely cover the bird with plastic wrap, and dry-brine it in the fridge for 1 to 3 days.
  • On Thanksgiving Day, preheat the oven to 450°F with the rack in the lower middle position. Take the brined turkey out the refrigerator. Line a baking sheet with aluminum foil and place a wire rack on top.
  • Grab your softened butter and fresh herbs. I tend to pack more sage and thyme in my quarter-cup than rosemary; it's a matter of personal preference, but I find rosemary a bit too medicinal-tasting in large amounts. Once the herbs are measured out, mince 'em, and mix with the softened butter/ghee to form an herb butter.
  • Take two-thirds of the herb butter and use it to spread under the skin of the breast and thigh meat. (Another method: you can just place a dollop between the skin and meat, and smush down the skin to spread the butter evenly.) Spread the remaining herb butter on the outside of the bird.
  • Lay the bird flat on the wire rack and tuck the wing tips under the turkey so they don't burn. Pour ½ cup of water into the tray. This'll keep the drippings from burning and smoking.
  • Place the turkey in the oven and stab an in-oven thermometer (if you have one) into the thick part of the breast. The turkey's done when the breast meat reaches 145°-150°F, and the thigh meat is 165°F, about 80-90 minutes.
  • If you see that the skin is already nice and bronzed before the meat is even close to the correct temperature, don't fret. Just place an aluminum foil bra loosely over the bird boobs before returning the turkey to the oven so they don't burn.
  • When the turkey is done, take the tray out of the oven and check the temperature one last time.
  • Let the turkey rest for at least 30 minutes before carving it at the table.

1 1/2 teaspoons dried thyme
1 1/4 teaspoons whole black peppercorns

1 13 to 14 pound whole turkey, neck and giblets removed and reserved for Giblet Stock
1 1/2 pounds parsnips, peeled and cubed into 1/2-inch pieces
1 teaspoon vegetable oil
1/2 pound red onion, diced into 1/2-inch pieces
8 ounces medium Brussels sprouts, shredded on the thin slicing blade of a food processor
8 ounces hearty sourdough or multigrain bread, cut into 1/2-inch cubes and staled
2 cloves garlic, minced
1/4 cup apple cider vinegar
2 teaspoons fresh thyme leaves
Kosher salt
Freshly ground black pepper

Steps:

  • For the turkey: Four days before service, place the salt, sage, thyme, black peppercorns, and allspice into a spice grinder and pulse until the peppercorns and allspice are coarsely ground, 5 to 6 pulses. Set aside.
  • Set the turkey, breast-side down, on a large cutting board with the tail closest to you. Use an electric knife or heavy-duty kitchen shears to cut up one side of the backbone. Turn the bird around and cut back down the other side of the spine. Reserve the backbone for Giblet Stock. Discard any fat pockets or excess skin found inside the turkey. Turn the turkey breast-side up and use the heel of your hands to press down on both breasts, until you hear a cracking sound and the bird has flattened slightly.
  • Rub the seasoned salt on both sides of the turkey. Place the turkey on a parchment paper lined half sheet pan, breast-side up with legs running with the long side of the pan. Store, uncovered, in the refrigerator for 4 days.
  • Remove the turkey from the refrigerator and leave at room temperature for 1 hour.
  • For the panzanella: Place the parsnips and rutabaga in a large nonstick roasting pan, toss with vegetable oil and set aside.
  • Place one rack in the middle of the oven and a second one far enough below so the roasting pan will fit. Heat the oven to 425 degrees F. Place the turkey directly on the middle rack of the oven with the legs perpendicular to the metal bars of the rack.
  • Place the roasting pan with the parsnips and rutabaga on the rack below the turkey and roast both for 30 minutes.
  • Reduce the heat to 350 degrees F. Add the red onion to the roasting vegetables and stir to combine. Continue to roast both the vegetables and the turkey until a probe thermometer inserted into the thickest part of the breast registers 155 degrees F, an additional 40 to 50 minutes.
  • Remove the turkey from the oven onto a cooling rack set inside a half sheet pan and rest for 30 minutes.
  • Add the Brussels sprouts, bread cubes and garlic to the roasting vegetables, stir to combine and roast for an additional 15 minutes. Remove the vegetables from the oven and immediately transfer to a serving bowl. Pour the apple cider vinegar in the warm roasting pan, stir and scrape off any browned bits from the pan. Pour the vinegar mixture over the salad, add the thyme and toss to combine. Season with salt and pepper as desired. Serve warm or at room temperature.
  • Carve the turkey with an electric knife and serve with the panzanella.

1 bunch fresh thyme

1 orange, halved
One 10- to 14-pound turkey
1 stick (8 tablespoons) unsalted butter, cold, cut into small dice
Olive oil, for drizzling
3 tablespoons ground cumin
2 tablespoons hot Hungarian paprika
1 tablespoon chili powder
Zest of 1 orange
Kosher salt and coarsely ground black pepper
3 tablespoons honey
Juice of 1 orange
Orange slices
Fresh sage sprigs
Fresh thyme sprigs

Steps:

  • For the brine: Combine the salt, peppercorns, thyme, sage, orange and 1 1/2 gallons water in a large pot over medium-high heat. Bring to a boil, then lower the heat to a simmer and cook until the salt is dissolved and the water is fragrant. Turn off the heat and let cool completely.
  • For the turkey: To brine the turkey, place the turkey in a roasting bag, large plastic bag or bowl large enough to fit it with still more space for the brine. Refrigerate at least overnight and up to 3 days.
  • When ready to cook, remove the turkey from the brine and discard all of the brining liquid and solids. Pat the turkey dry with paper towels.
  • To butterfly the turkey, using kitchen shears or a knife, cut out the backbone of the turkey. Break the breastbone to open up and flatten the bird by gently pressing down with the skin-side up.   • For the rub: In a medium bowl, mix together the cumin, paprika, chili powder, orange zest, a pinch of salt and a few grinds of pepper. Reserve 1 tablespoon of the rub in a small bowl and set aside.
  • Drizzle the turkey with olive oil and sprinkle with the rub. Gently rub into the skin. Place the turkey cavity-side down on a rack in a roasting pan and allow to sit on the countertop for about 2 hours to come to room temperature.
  • For the glaze: To the reserved 1 tablespoon of rub, stir in the honey and orange juice until smooth. Set aside.
  • Preheat the oven to 400 degrees F.
  • Add 1 to 2 inches of water to the bottom of the roasting pan. Place the turkey in the oven, lower the heat to 350 degrees F and roast for 30 minutes. Remove the turkey from the oven and brush the glaze over the skin. Return to the oven and continue to roast, glazing every 30 minutes, until an instant-read thermometer inserted in the thigh reads 160 degrees F, 1 to 2 hours.
  • Let the turkey rest at room temperature before carving, tented with aluminum foil, until it comes up to 165 degrees F, about 30 minutes. Plate the turkey and garnish with orange slices and sage and thyme sprigs.

12 -14 lbs turkey
1/2 cup butter, softened
1/2 cup olive oil
kosher salt
black pepper
1 cup kosher salt
1/2 cup light brown sugar
1 tablespoon fresh coarse ground black pepper
1 gallon water
about a dozen ice cube
fresh herb

Steps:

  • You will need about a handful each of fresh Rosemary, Sage and Thyme;half for the brine and half for the herb butter.
  • Remove the backbone of the turkey using kitchen shears.
  • (I had the butcher at the grocery store do this for me).
  • Make the brine by adding all necessary ingredients, You do not need to chop the herbs. Just dump everything in the pot.
  • Bring brine to a boil and remove from heat.
  • Add the ice cubes and let the brine cool for about 30 minutes. DO NOT ADD MORE ICE! You do not want to dilute the brine.
  • Place the turkey in a large container (I used kitchen size trash bags, doubled) and add the brine.
  • Place this in the refrigerator overnight, turning once if the bird is not completely submerged in the brine.
  • When it is time to cook the turkey, remove it from the brine and rinse well. Pat dry.
  • .Combine the rest of the herbs and chop or pulse in a food processor.
  • Add the herbs to the butter and mix well.
  • Place the turkey, breast side up, on the counter and press REALLY hard till you hear the ribs crack. Tuck the wing tips under the bird. Loosen the skin on the breast, thighs and legs.
  • Rub the butter mixture under the skin.
  • Place the turkey in a roasting pan large enough to hold the bird and its juices.
  • . Brush with olive oil and salt and pepper to taste.
  • Cook the turkey at 450 degrees for 20. Brush with oil again and reduce the oven temperature to 400. Cook 40 minutes longer. Allow the turkey to rest for at least 10-15 minutes before carving.

In 2002, Mark Bittman published this revolutionary approach to roasting the Thanksgiving turkey, which allows you to cut the cooking time of the average turkey by about 75 percent while still presenting an attractive bird. Simply cut out the backbone - or ask your butcher to do it for you - and spread the bird out flat before roasting, a technique known as spatchcocking that is commonly used with chickens. Roasted at 450 degrees, a 10-pound bird will be done in about 45 minutes. Really. It will also be more evenly browned (all of the skin is exposed to the heat), more evenly cooked, and moister than birds cooked conventionally.

10 garlic cloves, peeled and lightly crushed, more to taste
1 branch fresh tarragon or thyme separated into sprigs, or 1/2 teaspoon dried thyme or tarragon
1/3 cup extra virgin olive oil or butter

Steps:

  • Heat oven to 450 degrees. Put turkey on a stable cutting board breast side down and cut out backbone. Turn turkey over, and press on it to flatten. Put it, breast side up, in a roasting pan. Wings should partly cover breasts, and legs should protrude a bit.
  • Tuck garlic and tarragon under the bird and in the nooks of the wings and legs. Drizzle with olive oil, and sprinkle liberally with salt and pepper.
  • Roast for 20 minutes, undisturbed. Turkey should be browning. Remove from oven, baste with pan juices, and return to oven. Reduce heat to 400 degrees (if turkey browns too quickly, reduce temperature to 350 degrees).
  • Begin to check turkey's temperature about 15 minutes later (10 minutes if bird is on the small side). It is done when thigh meat registers 165 degrees on an instant-read meat thermometer. Check it in a couple of places.
  • Let turkey rest for a few minutes before carving, then serve with garlic cloves and pan juices.
