OUR FAVORITE OATMEAL CAKE
This is called "Our Favorite" cake for a reason. Super-moist, cinnamon-scented oatmeal cake is topped with a sweet brown sugar and coconut topping, broiled in the oven to give an addictive crunch.

Steps:
- Preheat oven to 325°F (160°C). Lightly grease a 9" x 13" baking pan.
- In a small bowl, combine oats and boiling water. Let stand for 20 minutes.
- In a large bowl, cream 1/2 cup butter, brown and white sugar. Beat in vanilla and eggs until light and fluffy.
- Fold in flour, baking powder, baking soda, cinnamon and salt. Fold in oat mixture.
- Spread batter evenly in pan and bake for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean.
- Remove cake from oven and turn on broiler
- For Topping - in a small bowl, combine melted butter, brown sugar, vanilla, and milk, stir in coconut. Spread topping over still-warm cake.
- Broil, approx. 6" from top element, for 1-2 minutes, or until golden and bubbly.
- Allow cake to cool 30-60 minutes before serving.
OATMEAL CAKE
A soft and amazingly moist oatmeal based cake that tastes just like what grandma would have made! It has a delicious spiced flavor and it's finished with a super easy, sweet coconut topping.

- Preheat oven to 350 degrees. Spray a 9 by 9-inch baking dish with non-stick cooking spray (a 7 by 11-inch dish would work as well).
- Add oats to a medium mixing bowl the pour boiling water over oats, let rest until cool.
- Meanwhile in a large mixing bowl using an electric hand mixer (or use electric stand mixer), whip together butter, brown sugar and granulated sugar until pale and fluffy.
- Mix in eggs, vanilla, cinnamon and nutmeg then mix in cooled oat mixture.
- Sprinkle baking soda and salt across top then pour in flour and mix until combined.
- Pour into prepared baking dish, bake in preheated oven until just cooked through, about 30 minutes.
- Meanwhile in a medium mixing bowl stir together melted butter, milk, vanilla, brown sugar, coconut, and pecans.
- Remove cake from oven once cooked through and pour and spread mixture evenly over top.
- Preheat oven to broil then return cake to oven (in center) and broil until mixture is bubbly and coconut is just starting to toast on ends, about 1 - 2 minutes (don't walk away from it while broiling!).
- Let cool on a wire rack for at least 20 minutes then cut into slices and serve.

OATMEAL-GLAZED BREAKFAST CAKE
This hearty cake is packed with oats, flavored with cinnamon and topped with a warm glaze made with more oats, shredded coconut and nuts. We used pecans, but feel free to use whatever you have on hand. It's a great way to clean out the pantry and simple enough for kids to help with. Bake one on a Sunday and enjoy it all week long for breakfast or as a snack! It's delicious at room temperature or lightly warmed in the microwave.

- For the cake: Preheat the oven to 350 degrees F. Coat a 9-by-13-inch baking pan with nonstick cooking spray. Line the bottom of the pan with parchment and coat again with the spray.
- Whisk together the flour, oats, granulated sugar, brown sugar, cinnamon, baking powder, salt and baking soda in a large bowl and set aside. Whisk together the oil, buttermilk, vanilla and eggs in a medium bowl. Fold the buttermilk mixture into the flour mixture until just combined.
- Pour the batter into the prepared pan and bake until a toothpick inserted in the center comes out clean, about 35 minutes.
- For the glaze: Meanwhile, add the brown sugar, oats, coconut, butter, milk, cinnamon and salt to a small saucepan over high heat. Bring to a boil and cook until the butter and sugar are dissolved, about 1 minute. Turn off the heat and stir in the pecans.
- Pour the hot glaze over the warm cake and spread evenly. Let the cake cool in the pan on a rack until cooled completely, at least 40 minutes. The glaze will still look glossy but should be not be sticky. You can cut slices from the pan or invert onto a serving platter or cutting board. Store at room temperature for up to 1 week.

- Mix oats and buttermilk in a large bowl; allow to rest for 15 minutes.
- Preheat oven to 400 degrees F (200 degrees C). Grease 24 muffin cups or line with paper liners.
- Combine eggs, brown sugar, and butter in a small bowl; stir into oat mixture. Mix flour, baking powder, baking soda, cinnamon, and salt in another bowl; stir into oat mixture until just moistened. Fill prepared muffin cups about 3/4 full.

- Pour boiling water over oats and let stand for 20 minutes.
- Preheat oven to 350 degrees.
- Cream, until light & fluffy, the white sugar, brown sugar and shortening.
- Add eggs, mixing well.

- Generously grease a 9x9x2-inch baking pan. In a small bowl, combine 1/2 cup honey, 1/3 cup melted butter, corn syrup, lemon peel and lemon juice. Stir in 1/2 cup chopped pecans. Pour into prepared pan; set aside.
- For cake: In a blender or food processor, blend or process oats until finely ground. Transfer to a large bowl. Stir in flour, brown sugar, 1/2 cup pecans, baking powder, baking soda, and salt. Make a well in the center of the dry ingredients. In a medium bowl, combine buttermilk, eggs, 1/4 cup melted butter, and vanilla. Add the milk mixture all at once to the flour mixture. - Spoon batter evenly over honey mixture. Bake in a 375 degree F oven about 25 minutes or until a wooden toothpick inserted in center comes out clean. Remove from oven and immediately invert cake onto a serving plate. Cool about 10 minutes. Serve warm drizzled with additional honey, if you like.

- Combine flour and other dry ingredients in a large mixing bowl. Add oil, buttermilk, eggs and sugars. Beat until smooth. Stir in the nuts, oatmeal, coconut and dates. Pour into a greased and floured 10" tube pan. Bake at 350 degrees for 1 hour.
- Topping: In medium sauce pan combine topping ingredients. Cook until the mixture comes to a rolling boil and becomes bubbly. Remove cake from oven when done and immediately pour mixture over the cake. Do not remove from the pan until cake is cool.
