2 eggs
¾ cup vegetable oil
1 teaspoon vanilla extract
2 ½ cups self-rising flour
1 teaspoon ground cinnamon
3 cups peeled, cored, and chopped tart apple
1 cup chopped walnuts
1 cup butterscotch chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C) and lightly grease a 9x13-inch baking dish.
  • In a large bowl, combine the sugar, eggs, oil and vanilla and mix until well blended. Stir in the flour and cinnamon. The mixture will be thick. Fold in the chopped apple and nuts. Spread the batter in the prepared baking dish, and sprinkle with butterscotch chips.
  • Bake in the preheated oven for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Cool and cut into squares.

1 tablespoon lemon juice
1/4 cup packed brown sugar

1 (11-ounce) bag butterscotch chips
1/4 cup light brown sugar
1/4 cup all-purpose flour
1/2 teaspoon ground cinnamon

1 lemon, juiced
3 tablespoons unsalted butter, cubed, plus more for greasing
3/4 cup all-purpose flour
1/4 cup light brown sugar
1/2 cup quick oats
Pinch kosher salt
1/2 cup butter
3/4 cup pecans, chopped
Butter pecan ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F. Butter a 2-quart baking dish.
  • For the filling: Toss the apples, butterscotch chips, brown sugar, flour, cinnamon, allspice, and lemon juice together in a large bowl. Add to the buttered baking dish and dot with butter.

1 teaspoon cinnamon
1/2 teaspoon grated nutmeg
1/8 teaspoon salt
1/2 cup packed dark brown sugar
2 1/2 pounds firm-ripe Bartlett or Anjou pears (about 5), peeled, each cut into 6 wedges, and cored
1 tablespoon fresh lemon juice
1 teaspoon pure vanilla extract
Double recipe all-butter pastry dough
1 tablespoon unsalted butter, cut into bits
1 large egg beaten with 1 tablespoon warm water
1 tablespoon granulated sugar
Equipment: small (1-to 3-inch) leaf-shape cookie cutters (optional)

Steps:

  • Put a baking sheet on middle rack of oven and preheat oven to 425°F.
  • Whisk together flour, cinnamon, nutmeg, and salt, then whisk in brown sugar, breaking up any lumps. Gently toss pears with brown sugar mixture, lemon juice, and vanilla and let stand 5 to 15 minutes to macerate fruit.
  • Roll out 1 piece of dough (keep remaining disk chilled) on a lightly floured surface with a lightly floured rolling pin into a 13-inch round. Fit into a 9-inch pie plate. Roll out remaining piece of dough into a 13-inch round. Reserve scraps.

1 apple
1 pear
1 tablespoon brown sugar
1 tablespoon cinnamon
1 tablespoon butter
1/4 cup walnuts
1/4 cup pecans
0.5 (225 g) bag butterscotch chips
1 cup flour
1/2 teaspoon baking soda
1/8 teaspoon salt
3/4 cup butter
1 cup brown sugar
2 cups oats

Steps:

  • Preheat oven 350°F.
  • Peel, core and dice up the apple and pear. Place in a fryin pan on med high heat, add in 1 tbsp brown sugar, cinnamon, and 1 tbsp butter. Once the apple/pears goes soft, turn down the stove to medium heat and simmer for 10 minutes. Add in nuts.
  • Meanwhile in a bowl, blend flour, baking soda, and salt. Cut in butter with pastry blender until mixture resembles course crumbs. Stir in brown sugar and oats. Do not over mix. Mixture should stay crumbly.
  • Press half of crumb mixture over bottom of a 8x8-inch pan to form bottom crust.
  • Turn off the stove and stir in the butterscotch chips to the apple/pear filling. Gently spread apple/pear filling over bottom crust. Sprinkle remaining oat mixture over apple/pear filling. Lightly pat with palm of hand to even out.
  • Bake for 25 minutes at 350F or until crust is golden brown. Cool completely and cut into squares.

This Apple Butterscotch Pie is absolute heaven! Lightly spiced apples baked inside a flakey all-butter pie crust with a homemade brown sugar butterscotch sauce!

14 cups apples (pealed, cored and diced. [I used a mixture of Gala, Granny Smith & Braeburn])
2 Lemons (Juiced)
1/8 teaspoon cardamom
½ teaspoon cinnamon
¼ teaspoon kosher salt
½ cup light brown sugar (not packed)
1 tablespoon cornstarch
Heavy cream
Turbinado or sanding sugar

Steps:

  • Roll out half the pie dough and line a 9 or 10 inch deep-dish pie dish; refrigerate. Roll out the second half of the pie dough for the top crust, place on a baking sheet and refrigerate.
  • In a large bowl mix together the apples, lemon juice, cardamom, cinnamon, salt, brown sugar and cornstarch.
  • Pour half of the filling into the pie dish and then pour approximately 1 ½ cups butterscotch sauce on top. Mound the remaining apple filling on top, creating a mound in the center. Pour the remaining sauce on top.
  • Cover the pie with your second crust and decoratively crimp the edges. Try to get as good a seal as you can so the butterscotch sauce stays inside the pie! Refrigerate the pie on a parchment lined baking sheet for 20 minutes.
  • Remove pie from the refrigerator and cut some vent holes near the top. Lightly brush the pastry with heavy cream, making sure it doesn't pool anywhere because this will make your crust soggy, and then sprinkle generously with sanding sugar.
  • Bake 20 minutes at 425, then lower the oven temperature to 350 and continue baking for 1 hour or until the filling is soft and bubbly and the crust is brown. You can test the filling by inserting a knife into one of the vent holes. There should be no resistance from the apples! Let cool before cutting or serving. I know, the agony!
