Applesauce bars with a creamy white frosting are moist and flavorful.

1 cup sugar
1/3 cup Land O Lakes® Butter softened
1 large Land O Lakes® Egg
1 1/2 cups all-purpose flour
1 1/2 cups applesauce
1 teaspoon ground allspice
1 teaspoon ground cinnamon
3/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup raisins
Frosting
3 cups powdered sugar
1/3 cup sour cream
3 tablespoons Land O Lakes® Butter softened
1 tablespoon vanilla
1/2 cup chopped pecans

Steps:

  • Heat oven to 350°F. Spray 13x9-inch baking pan with no-stick cooking spray. Set aside.
  • Combine sugar, 1/3 cup butter and egg in bowl. Beat at medium speed, scraping bowl often, until creamy. Add all remaining ingredients except raisins. Beat at low speed, scraping bowl often, until well mixed. Stir in raisins.
  • Spoon batter into prepared pan. Bake 25-35 minutes or until toothpick inserted in center comes out clean. Cool completely.
  • Combine all frosting ingredients except pecans in bowl. Beat at medium speed, scraping bowl often, until smooth.
  • Frost cooled bars; sprinkle with pecans. Cut into bars.

¼ cup butter
2 eggs
½ teaspoon vanilla extract
¾ cup all-purpose flour
1 teaspoon baking powder
¾ teaspoon salt
1 cup brown sugar
1 cup semi-sweet chocolate chips
½ cup chopped walnuts
½ cup raisins

Steps:

  • Place butterscotch chips and butter into a glass bowl. Heat in the microwave for about 3 minutes, stirring at 30 second intervals until smooth. Set aside to cool until firm.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
  • In a large bowl, beat the butterscotch chip mixture with eggs and vanilla until well blended. Combine the flour, baking powder, and salt; stir into the batter until evenly mixed. Mix in the brown sugar, chocolate chips, walnuts, and raisins. Spread the batter evenly in the prepared pan.

3 cups vanilla wafers
1/2 cup raisins
1 cup butterscotch chips
1/4 cup wheat germ
2 cups applesauce
1/2 cup chopped nuts or 1/2 cup sunflower seeds

Steps:

  • Spray the bottom of an 8x8 or 9x9 pan with cooking spray.
  • Crush the wafers into large chunks. Place half the wafers in the pan.
  • In a bowl, mix the raisins, butterscotch bits, wheat germ and applesauce. Add the nuts or sunflowers seeds is desired.
  • Spread over the wafers in the pan.
  • Press the rest of the wafers over the applesauce mixture.
  • Cook on high in the microwave for 8 minutes.

140g butter , plus extra for the tin
2 large eggs
350g light muscovado sugar
2 tsp vanilla extract
250g self-raising flour
100g bar milk chocolate (we used Green & Black's), cut in big chunks
100g macadamia or pecan nuts, coarsely chopped
icing sugar for dusting

Steps:

  • Preheat the oven to fan 160C/conventional 180C/gas 4. Melt the butter in a small bowl and leave to cool. Butter a shallow tin about 20 x 24cm. In another bowl, beat the eggs. Melt the butter, then add to eggs with the sugar and vanilla. Tip in the flour and stir in with the chocolate and three-quarters of the nuts. Don't over-beat.
  • Spread the mixture in the tin, scatter over the rest of the nuts and bake for 25-30 minutes, then cut into 12 bars. Dust with icing sugar.
