My coconut bars are an American version of a Filipino coconut cake called bibingka. These are a crispier, sweeter take on the Christmas tradition I grew up with. —Denise Nyland, Panama City, Florida

2 cups all-purpose flour
1 cup packed brown sugar
1/2 teaspoon salt
1 cup butter, melted
FILLING:
3 large eggs
1 can (14 ounces) sweetened condensed milk
1/2 cup all-purpose flour
1/4 cup packed brown sugar
1/4 cup butter, melted
3 teaspoons vanilla extract
1/2 teaspoon salt
4 cups sweetened shredded coconut, divided

Steps:

  • Preheat oven to 350°. Line a 13x9-in. baking pan with parchment, letting ends extend up sides., In a large bowl, mix flour, brown sugar and salt; stir in 1 cup melted butter. Press onto bottom of prepared pan. Bake until light brown, 12-15 minutes. Cool 10 minutes on a wire rack. Reduce oven setting to 325°., In a large bowl, whisk the first 7 filling ingredients until blended; stir in 3 cups coconut. Pour over crust; sprinkle with remaining coconut. Bake until light golden brown, 25-30 minutes. Cool in pan on a wire rack. Lifting with parchment, remove from pan. Cut into bars.

2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
⅔ cup shortening
2 cups packed brown sugar
1 teaspoon vanilla extract
3 eggs
1 ½ cups semisweet chocolate chips
¾ cup chopped walnuts
½ cup shredded coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • In large bowl, cream the shortening, brown sugar, eggs and vanilla extract. Slowly blend in flour, baking powder, and salt. Mix until well blended. Fold in chocolate chips, walnuts and coconut. Spread the mixture evenly in pan.
  • Bake 20 to 25 minutes. Let cool before cutting into bars.

1/2 cup butter, softened
1/2 cup powdered sugar
1 cup flour
1 (14 ounce) can sweetened condensed milk
1/2 cup butterscotch chips
1/2 cup white chocolate chips
1 1/3 cups shredded coconut
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350*F.
  • Cream the butter and powdered sugar together until smooth.
  • Add the flour; mix well.
  • Pat the mixture onto the bottom of an ungreased 9" square baking pan; bake 12-15 minutes, or until lightly browned.
  • Combine the condensed milk, butterscotch chips, white chocolate chips, coconut, and vanilla; spread over the baked crust.
  • Bake another 25-30 minutes, or until golden around the edges.
  • (The center will not appear set.) Cool completely in pan on a wire rack before cutting into bars.

1 package (17-1/2 ounces) sugar cookie mix
1 package (3.4 ounces) instant butterscotch pudding mix
1/2 cup butter, softened
1 large egg
1 package (14 ounces) caramels
1/2 cup evaporated milk
2 cups mixed nuts
1 teaspoon vanilla extract
1 cup butterscotch chips

Steps:

  • In a large bowl, combine the sugar cookie mix, pudding mix, butter and egg. Press into an ungreased 13x9-in. baking pan. Bake at 350° for 20-25 minutes or until set., In a large saucepan, combine caramels and milk. Cook and stir over medium-low heat until melted. Remove from the heat. Stir in nuts and vanilla. Pour over crust. Sprinkle with butterscotch chips. , Cool completely. Cut into bars. Store in an airtight container.

Butterscotch White Chocolate Coconut Muesli Clusters image

This recipe is a take on my Recipe #459346 using white chocolate and more butterscotch chips as well as muesli in place of granola. In addition I added some coconut to the mix. I thought the clusters came out super yummy, so Im posting this here. I hope youll enjoy it, too. :) The muesli I used included some nice red goji berries, so these looked quite festive. Feel free to experiment with different mueslis.

Number Of Ingredients 4

1/2 cup white chocolate chips (I used pieces of a white choc bar)
1/4 cup butterscotch chips
3/4 cup muesli (use your favourite, mine included different flakes, amaranth, poppy seeds and goji berries)
1/4 cup desiccated coconut (unsweetened)

Steps:

  • In a microwave safe bowl combine white chocolate chips and butterscotch chips. Melt them and stir until smooth (in my microwave it took 1 1/2 minutes on high). You can also do this over a warm water bath.
  • Stir in muesli and coconut until everything is well coated. If you find that the mixture is too wet, simply add some more muesli by the tbs until it reaches a nice thick consistency.
  • Drop by tabelspoonfuls onto a paper-lined baking sheet. Allow to dry for about 1 1/2 hours or until set (this might depend on the weather).
  • Enjoy.
