CAJUN CHICKEN ALFREDO RECIPE BY TASTY

Steps:
- Heat oil in a large pot over high heat. Cook the garlic, sausage, and chicken until garlic starts to brown and the chicken is no longer pink.
- Sprinkle over the Cajun seasoning and stir to evenly coat the sausage and chicken.
- Add the cream, and bring to a boil.
- Add the pasta, stirring until evenly mixed.
- To finish, add parmesan and parsley, stirring until cheese melts and pasta is coated with a thick sauce.
- Serve.
- Enjoy!

If you like Chicken Breasts, and Chicken Alfredo in particular, this recipe is going to blow your socks off!! SOOO easy, SOOOO yummy, and if you have any leftovers, they disappear fast! - Sprinkle chicken with salt and pepper. In a 12-inch skillet brown chicken breasts in hot oil about 10 minutes, turning to brown evenly. Transfer chicken to a 3-quart rectangular baking dish; set aside.
- For sauce, in a medium saucepan beat whipping cream with a wire whisk or rotary beater for 1 to 2 minutes or until thickened. Heat over medium heat just until simmering. Reduce heat to medium-low. Gradually whisk in cheese until melted.
- Pour sauce over chicken breasts in dish; top with sweet peppers. Bake, uncovered, in a 350 degrees oven for 15 to 20 minutes or until chicken is no longer pink (170 degrees F). Sprinkle with basil.

Two recipes from food.com combined into one. (Original version of the Cajun Chicken was delicious, but it was not low fat) Our children don't care for the sun-dried tomatoes, so I normally omit those, although they do add nice color to the dish.

- Sauce:.
- Put skim milk, cottage cheese, cornstarch, pepper, parmesan cheese and minced garlic in food processor or blender and blend until smooth. Pour into saucepan and add basil. Cook over medium heat until it starts to thicken.
- Chicken:.
- Place chicken and Cajun seasoning in bowl and toss to coat.
- In a large skillet over medium heat, saute chicken in olive oil until tender, about 5-7 minutes.
- Reduce heat and add green onion, tomatoes, basil and 1/4 teaspoons black pepper. Saute briefly.
- Add Alfredo sauce and mix together. Cook on low 5 minutes to blend flavors.
- Serve over cooked linguine.

- To start, season your chicken breasts liberally with your cajun seasoning blend. Heat a cast iron skillet over medium heat, and melt 2 tablespoons of butter. Sear your chicken over medium high heat, until it’s cooked thru and reaches an internal temperature of 165F. Once cooked thru, remove from the skillet and set aside. Don’t drain or remove any of the drippings.
- Reduce the heat to medium, and add 2 more tablespoons of butter to your cast iron. Add in your minced garlic, and cook until fragrant, about 30 seconds. Being careful not to let your garlic burn, add in your chicken broth and your heavy whipping cream.
- Stir in your parsley, and parmesan cheese. Sprinkle in more cajun seasoning, salt and pepper to taste. Cook until your cheese has melted and it forms a sauce. Add in your noodles of choice to warm them up.
- Cut your chicken into pieces, and add to the skillet. Garnish with more parsley and parmesan cheese.
