This is from the spring 2009 booklet printed by my local supermarket. The steak must be marinated overnight, and it will not be included in the cooking process.

loin grilling steak
1 tablespoon cajun seasoning
1/2 cup balsamic vinaigrette, plus
4 tablespoons balsamic vinaigrette, divided
1/4 cup hot sauce
1 (907 g) bag yellow fingerling potatoes
1/4 cup green onion, thinly sliced
3 cups harvest vegetables, frozen

Steps:

  • Rub steaks with Cajun spice, and place in a resealable baplastic bag. Combine 1/4 cup Balsamic vinaigrette with hot sauce and pour over the steaks. Refrigerate overnight.
  • Halve and steam potatoes until fork tender, about 12 minutes. Let stand for about 2-3 minutes, before tossing it with 2 tbsp of vinaigrette and green onions. Set aside, and kep warm.
  • Cook frozen vegetables, and season with salt and pepper.
  • Meanwhile, lightly oil and breheat barbecue (or indoor grill) to medium high heat. Remove steaks from marinade and cook for 6-8 minutes per side for medium. Transfer to a cutting board and gently cover and let rest for 5-10 minutes.
  • Plate the steaks with the potatoes and vegetables and drizzle the remaining 2 tbsp of Balsamic vinaigrette as a sauce.

Steak and Cajun potatoes make a tasty meal for two - perfect for special occasions like Valentine's

430g Maris Piper potatoes , cut into 1.5cm chunks
1 tbsp Cajun seasoning
2 tbsp olive oil
1 x 400g bavette steak
¼ small bunch of coriander , finely chopped
¼ small red cabbage , shredded
½ red onion , finely sliced
2 tbsp mayonnaise
1 tbsp soured cream
½ tbsp chipotle chilli paste

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Bring a large pan of salted water to the boil, add the potatoes and cook for 5 mins. Drain and leave to steam-dry in the colander for a few minutes. Toss the potatoes with the Cajun seasoning, half the oil and a good pinch of salt. Tip onto a baking tray and roast for 25-30 mins or until golden and crisp, tossing halfway through.
  • To make the slaw, combine the cabbage, onion, mayonnaise, soured cream and chipotle paste in a bowl until the cabbage and onion are well coated. Set aside.
  • Rub the steak with the remaining oil and season both sides. Heat a griddle pan or non-stick frying pan over a high heat until very hot. Add the steak to the pan, cook for 2 mins on one side, then 3 mins on the other. Remove, put on a chopping board, cover with foil and leave to rest for 5 mins. Slice into strips.
  • Serve the steak with the potatoes scattered with the coriander and a pile of the spicy slaw.

23 ounces steak, cut into 2 inch cubes (can use Sirloin, Rump, New York, Porterhouse or Rib-eye, I used Sirloin)
1 -2 tablespoon canola oil
1/4 cup butter (sliced to melt faster)
4 garlic cloves, finely chopped (I use minced garlic in a can, 1/2 tsp = 1 clove)
1 tablespoon mild paprika
1 1/2 teaspoons salt
1 1/2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon chili powder, add more if you like heat
3/4 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon brown sugar
1/2-3/4 teaspoon cayenne pepper, add more if you like heat
1/4 teaspoon cracked black pepper

Steps:

  • **This is Homemade Cajun Seasoning mix. Feel free to use your own recipe or store bought, we just use about 2-3 Tbsp of seasoning. Use more for more spice.
  • Combine cajun seasoning in mixing bowl. Add the steak bites and toss to evenly coat.
  • Heat 2 teaspoons oil in a skillet or pan over medium-high heat until hot.
  • Sear the steak bites in batches for 2-3 minutes each side (about 3-4 for more well-done bites) until edges are crispy and browned, adding extra oil as needed. Remove from pan (I use tongs to place them on a cutting board/bowl--this will also allow the meat to cool a bit, soaking in its juices!).
  • Reduce heat to medium. Add butter to the skillet and heat until melted. Sauté the chopped garlic until fragrant (about 30 seconds), while scraping up any browned bits from the pan.
  • Take the pan off heat. Throw the steak bites back in and toss through the garlic butter to evenly coat.
  • Serve warm.
  • I served this to my family with Rhodes rolls, mashed potatoes/gravy, and "Mamas Kitchen Hope" 24K Carrot recipe. Very easy recipes that you can make into a wonderful meal!
