1 teaspoon granulated sugar
1 teaspoon unsalted butter, melted
1 store-bought pie crust dough
1 pint pumpkin ice cream
1/2 cup caramel sauce
1/2 cup candied pecans

Steps:

  • Preheat the oven to 375 degrees F.
  • Combine the cinnamon and sugar in a small bowl and set aside. Spread the melted butter over the pie crust and sprinkle evenly with the cinnamon sugar. Bake until golden brown, 8 to 10 minutes. Let cool completely, then crumble and set aside.
  • Build your sundaes starting with the pumpkin ice cream, dipping the scoop in a mug of hot water if necessary. Top with the pie crust crumbles, caramel sauce and candied pecans. Serve immediately.

3/4 teaspoon pumpkin pie spice
2 cartons (1-1/2 quarts each) vanilla ice cream, softened if necessary
COOKIES:
1/2 cup butter, softened
1/2 cup shortening
1-1/2 cups sugar
3 large egg yolks
3 tablespoons pumpkin or apple butter
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1 teaspoon cream of tartar
1 teaspoon baking soda
1 teaspoon pumpkin pie spice
1/8 teaspoon salt

Steps:

  • In a large bowl, mix pumpkin and pie spice until blended; stir in ice cream. Freeze, covered, until firm enough to scoop., In a large bowl, cream butter, shortening and sugar until light and fluffy. Beat in egg yolks, pumpkin butter and vanilla. In another bowl, whisk flour, cream of tartar, baking soda, pie spice and salt; gradually beat into creamed mixture (dough will be soft). Refrigerate, covered, 30 minutes or until firm enough to shape., Preheat oven to 325°. Shape dough into 24 (1-in.) balls; place 4 in. apart on ungreased baking sheets. Flatten to 1/4-in. thickness with bottom of a glass dipped in sugar., Bake 6-8 minutes or until edges are light brown. Cool on pans 2 minutes. Remove to wire racks to cool completely., To assemble, spread a scoop of ice cream on bottom of a cookie. Top with a second cookie, pressing gently to attach. Place on a baking sheet; freeze until firm., Repeat with remaining ingredients. Wrap individually for longer storage.

1 cup milk
1/2 cup heavy cream
1/2 cup Milk Caramel for Pumpkin Ice Cream
6 large egg yolks
1/4 cup sugar
1/2 teaspoon pure vanilla extract
2 tablespoons freshly squeezed lemon juice
1/2 cup Pumpkin Puree for Desserts, or canned
Candied Pumpkin Slices (optional)

Steps:

  • Combine milk, cream, and caramel in a saucepan over medium heat. Bring to simmer, stirring frequently as caramel melts.
  • Fill a large bowl with ice and water; set aside. Whisk egg and sugar in a bowl until thick and pale, about 4 minutes. While whisking, very slowly add a little hot milk mixture to egg mixture. Add more milk mixture, whisking, until combined. Add vanilla, lemon juice, and puree; combine. Strain into a clean bowl; chill in ice bath.
  • Freeze in an ice-cream maker according to the manufacturer's instructions. After churning, transfer to freezer until firm. Serve with milk caramel and candied pumpkin, if desired.

1 cup packed brown sugar
1 large Mexican cinnamon stick or 3 regular cinnamon sticks
1/2 pound pumpkin or acorn squash, peeled and cut into 2-inch cubes
1/4 cup heavy cream (optional)
1 1/2 - 2 pints vanilla ice cream

Steps:

  • In medium saucepan combine water, brown sugar, and cinnamon. Bring to a boil and cook until liquid has reduced by about one-quarter and a light syrup forms, about 15 minutes. Add pumpkin or squash, reduce heat to very low and simmer gently until the pumpkin is translucent, about 45 minutes. If preparing in advance remove the pumpkin from syrup with a slotted spoon and store pumpkin separately. When ready to serve, combine the pumpkin and syrup in a small skillet and reheat over low heat. Just before serving, stir in the heavy cream. Spoon over ice cream and serve.;

Steps:

  • In a small saucepan, combine the sugar, cornstarch and spices. Stir in pumpkin and milk until smooth. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from the heat; stir in 1 teaspoon vanilla., In a small bowl, beat cream until it begins to thicken. Add confectioners' sugar and remaining vanilla; beat until stiff peaks form., Scoop ice cream into six dessert dishes. Top each with 1/4 cup pumpkin sauce and 1/3 cup whipped cream. Sprinkle with pecans.

  • Put the cream in a chilled bowl and whip until stiff peak forms. Slowly stir in the condensed milk, then add the pumpkin pie spice mix and vanilla. Pour into a container (a bread pan works great) and freeze for several additional hours until it is set.
  • The recipe I used is from Crazy For Crust. Caramel is a little tricky to make and she gave very clear instructions, so I am going to send you directly to her recipe for instructions.
  • Add cream, bourbon, and maple syrup to a metal bowl that has been chilling in the refrigerator. Split the vanilla bean and scrape insides into bowl. Whip until soft peaks form.
