RED BEANS
An easy red beans over rice recipe straight out of New Orleans

Steps:
- Pick through beans, removing all bad beans or any other particles. Wash beans well. Place beans in a 5-quart pot. Add the 2 quarts of water. Add onions; bring to a boil. Lower heat and let beans boil slowly for 1 hour. When beans are soft, stir well, mashing some against the side of the pot.
- Heat oil in frying pan; add ham and sausage. Sauté in oil for 5 mintues. Then add the sausage, ham, and oil to beans. Deglaze pan with the cup of water, then pour into beans. Add all other ingredients. Let simmer for 30 minutes. Beans should be nice and creamy. Serve over rice.
CAJUN RED BEANS
Delicious red beans. Serve it over rice with some cornbread. Yum!

Steps:
- Place the pinto beans into a large container and cover with several inches of cool water. Soak beans 15 minutes; drain and rinse.
- Heat bacon grease in a large pot over medium-high heat. Cook and stir salt pork in hot grease for 1 minute. Add onion, celery, bell pepper, black pepper, and chipotle powder to salt pork; cook and stir until the vegetables are soft, about 4 minutes.
- Stir smoked sausage, bay leaves, parsley, and thyme into salt pork mixture; cook and stir until sausage is browned, about 4 minutes. Add garlic and cook until fragrant, about 1 minute more.
- Stir beans into sausage mixture and add enough water to cover the beans. Bring to a boil, remove from heat, and transfer beans mixture to a slow cooker.
- Cook on High for 1 hour. Reduce to Low and cook until beans are tender, adding water as necessary, about 6 hours more.
- Mash about 1/4 the beans against the side of the slow cooker crock with the back of a heavy spoon. Continue cooking on Low until beans are tender and creamy, 15 to 20 minutes more. Remove bay leaves.

- In a blender or food processor, puree onion, bell pepper, garlic, cilantro, and annatto powder. Set mixture aside.
- Heat a large, heavy saucepan over medium heat. Pour in olive oil and saute ham with pureed mixture for 10 minutes, until browned. Mix in beans, potatoes, pumpkin, water, and salt. Reduce heat to low and simmer, stirring occasionally, for approximately 25 minutes, until mixture thickens and potatoes and pumpkin are tender.

CANDIED RED BEANS
One of my great pleasures in life is stopping at one of the "shave ice" stands (as the locals call them, inexplicably dropping the "d") in Hawaii. I watch as they tuck sweet red beans in the bottom of a paper cone and then pile on the shaved ice. I always choose lilikoi, or passion fruit syrup, to be drizzled over the ice. It has remarkable complexity and tastes as if every possible tropical flavor has been packed together into one intensely flavored fruit. Then a shot of sweet milk is poured over it all. I slurp the whole thing down, then I'm ready to tackle the surf again. Or, more likely, just take a snooze under the shade of a palm tree. The inspiration likely came from Japan, where red beans are spooned over ice cream or puréed for beautifully intricate pastries called wagashi. You can easily make them at home from adzuki beans, available in well-stocked supermarkets and natural food stores. Their sweet-starchy flavor is justifiably popular and is especially good paired with Asian-inspired ice creams, like Green Tea Ice Cream (page 40) and Toasted Coconut Ice Cream (page 96). I find chewing on these sticky little beans positively addictive.

- Sort the beans and discard any foreign matter, then rinse them in a colander. Put them in a large saucepan and cover with plenty of water. Soak for at least 4 hours, or overnight.
- Drain the beans in a colander, then return them to the saucepan and add the 4 cups (1 liter) water and the baking soda. Bring the beans to a boil, then reduce the heat and simmer for 1 hour. (If the water boils away too quickly, add another 1/2 cup (125 ml) to keep the beans submerged.)
- When the beans are cooked through, add the sugar and corn syrup. Continue to cook the beans, stirring constantly, for 10 minutes, until the liquid is thick and syrupy. Serve warm or at room temperature.
- These beans will keep in the refrigerator for up to 1 week.
