Candied Yams With Marshmallows image

These easy candied yams are exactly how my family and I have been making this classic holiday favorite for decades - with marshmallows! Yams are baked with butter, brown sugar, and marshmallows to make a winning holiday side dish your family will love too!

40 oz canned yams ((or sweet potatoes))
1 pinch salt
1/3 cup butter ((cut into slices))
2/3 cup light brown sugar
2 cups miniature marshmallows ((or more, as needed to cover the yams))

Steps:

  • Preheat your oven to 400°F (205°C) and butter or spray your 9x13 baking dish with non-stick cooking spray.
  • Open and drain your can(s) of canned yams then spread the yams in the bottom of your prepared baking dish.
  • Sprinkle a pinch of salt over the yams, then top with butter slices. Crumble the brown sugar over the yams next, followed by a generous layer of mini marshmallows.
  • Bake in the center of your oven's middle rack at 400°F (205°C) for 20-25 minutes until the yams are bubbling and the marshmallows are melted and toasted.

CANDIED YAMS TO COOK NOW OR FREEZE FOR LATER
4 medium sweet potatoes, not canned
1 c white sugar
1 Tbsp flour
1 tsp ascorbic acid (vitamin c)mixture with a dash of salt

Steps:

  • 1. Peel yams; cut into 1/2 inch slices (may want to split again if width across is more than 3 inches.(Each individual slice should not be over 1 & 1/2 inches wide and not over 1/2 inch thick). Wash and drain slices.
  • 2. If freezing: Blanche in boiling water 3 minutes, drain and cool quickly by dipping in ice water, draining real well. For slices from 4 medium sweet potatoes, MIX the cup of sugar, 1 Tbsp flour, the tsp of ascorbic acid, and the dash of salt. Mix with potato slices. Package in freezer bags, seal and freeze. TO COOK: Remove from freezer bag and place in baking dish. Sprinkle with 1 tsp cinnamon and 1 Tablespoon Lemon Juice. Dot with 4 Tablespoons of Butter and pour 1/4 cup water over mixture. Bake in pre heated oven on 375 - 400 Degrees F. about an hour or until potatoes are tender and syrup is thick.
  • 3. TO COOK IMMEDIATELY ON TOP OF STOVE:No need to blanch and drain. Just melt butter on med high stove eye, add potato slices, cover and steam until tender on med low heat. Remove lid, add sugar and other ingredients, cook until tender and syrup is thick. Be careful not to let potato slices stick or juice to cook down too low. Manipulate eye temperature to prevent this from happening. Can also cook in oven with above instructions.

  • Drain and save 1/2 cup of liquid and pour back into yams.
  • Sprinkle Yams with Brown Sugar, cinnamon, nutmeg and mix well.
  • Pat Butter on top.
  • Place in preheated 350' oven for 30-35 minutes.

6 large yams, peeled and sliced into large cubes
1 cup brown sugar
1 ½ cups butter, melted, divided
2 tablespoons vanilla extract
1 ½ cups large marshmallows

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a baking dish.
  • Arrange yams in the prepared baking dish. Combine brown sugar, 1/2 of the melted butter, and vanilla extract in a small bowl; pour evenly over yams. Cover the baking dish.
  • Bake in the preheated oven for 30 minutes. Remove and coat with remaining butter. Cover and bake for an additional 30 minutes. Remove the cover, top with marshmallows, and bake until marshmallows are melted, 5 more minutes.
